1 cup sugar
1/2 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon salt
4 cups whole milk
2 tablespoons butter

Steps:

  • In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. If desired, garnish with whipped cream and M&M's.

Steps:

  • In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving.

1 cup jasmine rice
1/4 teaspoon kosher salt
Two 15-ounce cans coconut milk (not lite)
5 tablespoons Vanilla Sugar, recipe follows
1 teaspoon orange zest
2 cups granulated sugar
2 vanilla bean pods

Steps:

  • Add the rice, salt, 1 can of coconut milk and 1 1/2 cups water to a medium saucepan. Bring the mixture to a boil, then reduce the heat to low, cover the pan and cook until almost all of the liquid is absorbed, about 18 minutes.
  • Meanwhile, add the Vanilla Sugar, orange zest and remaining can of coconut milk to a small saucepan. Bring the mixture to a low simmer, stirring regularly, until the sugar has dissolved, about 3 minutes. Once the mixture is at a simmer, turn off the heat.
  • After the rice has cooked for 18 minutes, add the coconut milk-orange zest mixture to the rice and continue to cook over low until the rice is very tender and creamy, an additional 15 minutes.
  • Add the sugar to a food processor fitted with the blade attachment. Slice open the vanilla bean pods and use the back of a knife to scrape out the seeds. Add the seeds to the food processor with the sugar and blend for about a minute, until the vanilla beans are evenly distributed. Pour the vanilla sugar into an airtight container and add 1 of the scraped vanilla bean pods.

1 cup sugar
3 tablespoons butter
3 tablespoons cornstarch (massive tablespoons)
4 egg yolks
1 1/2 teaspoons vanilla extract

1 -6 tablespoon sifted cocoa powder (ONLY if you are making chocolate pudding)

Steps:

  • In a pot(or the microwave) get all 3 cups of milk scalding.
  • Whilst the milk boils; separate the eggs and discard the whites (if desired, you can set aside for an omlette or a meringue)and beat the cornstarch and sugar in the bowl with the egg yolks. It will have a hard time coming together at first; but keep whisking, it'll get there.
  • Keep milk very hot. Pour all of the egg yolk mixture into the scalding milk and beat vigorously until the mixture seems completely liquified. Add the salt, vanilla extract, and butter. Keep whisking until butter is well incorporated.
  • Keep warm and continuosly stir until the pudding thickens. Once thick (if making chocolate) add the sifted cocoa powder and stir until well incorporated.
  • Serve warm or refridgerate for 2 hrs (preferred) and serve with or without garnish.

3 bananas, sliced into 1/4 inch slices
1 ½ cups white sugar
¼ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line the bottom and sides of a 9-inch pie plate with a layer of alternating vanilla wafer crumbs and banana slices.
  • To Make Pudding: In a medium saucepan, combine 1 1/2 cups sugar with flour. Mix well, then stir in half the milk. Beat egg yolks and whisk into sugar mixture. Add remaining milk and butter or margarine.
  • Place mixture over low heat and cook until thickened, stirring frequently. Remove from heat and stir in vanilla extract. Pour half of pudding over vanilla wafer and banana layer while still hot.
  • Make another layer of alternating vanilla wafers and banana slices on top of pudding layer. Pour remaining pudding over second wafer and banana layer.
  • To Make Meringue: In a large glass or metal bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until whites are stiff. Spread meringue into pie pan, making sure to completely cover pudding layer.

1 ½ cups all-purpose flour
2 teaspoons baking soda
½ cup hot water
½ cup light molasses
½ cup white sugar
½ cup unsalted butter
½ cup light cream
2 teaspoons good vanilla extract

Steps:

  • Grease a 2-quart metal pudding mold well or a clean 1-pound coffee can. Pick over whole cranberries; wash and drain.
  • Sift flour into a bowl and dredge cranberries in flour mixture.
  • Dissolve baking soda in hot water; stir in molasses and allow to foam up. Add to the flour and cranberry mixture and stir until well blended. Spoon into the prepared mold; cover with a double layer of aluminum foil and fasten with heavy elastic band or string.
  • Place into a deep saucepan and fill with water up to about the halfway mark on the mold. Cover the saucepan and place over high heat; bring water to a boil. Reduce heat and simmer until pudding is firm and a toothpick inserted into the pudding comes out clean, 1 to 1 1/2 hours. Remove from the water and allow to cool.

4 large bananas, sliced
1 cup heavy whipping cream
¼ cup powdered sugar

Steps:

  • Whisk milk, sugar, flour, and salt together in a medium saucepan until well combined. Place over medium-low heat and cook, whisking frequently, until the mixture comes to a low simmer and begins to thicken, 5 to 10 minutes.
  • Beat egg yolks in a small bowl until smooth. Add about 3/4 cup of the hot milk mixture and stir it quickly into the egg yolks. My Mother made her banana pudding (ok, it's really vanilla pudding poured over sliced bananas) in the top of a double boiler on the stove. It was always topped with meringue and baked, then served warm. This is more of a modern version, made quickly in the microwave for convenience. Although this is served cold and topped with whipped topping, you can still reserve the egg whites, beat them with sugar, spread over the top of the pudding and bake until brown to serve it for Southern style warm banana pudding. Cooking time does not include cooling.

6 tablespoons all-purpose flour
¼ teaspoon salt
4 large egg yolks, beaten

3 medium bananas, sliced, or to taste

Steps:

1/3 c self-rising flour
3 eggs, separated
2 c milk
1/2 tsp vanilla extract
5 medium ripe bananas
1 box vanilla wafers (some for layers, some crush for topping)

  • 1. Preheat oven to 350. Mix 1/2 c of the sugar with flour in a small saucepan. Blend in the egg yolks.
  • 2. Add vanilla extract and milk.

Mulate's Homemade Bread Pudding With Butter Rum Sauce image

Recipe adapted from Alton Brown's cookbook "Feasting on Asphalt". This is an unusual bread pudding in that the texture is smooth, and dense with no evidence of the bread at all, almost like a tres leches cake because they make it from left over hamburger buns, which they soak in eggs and cream until the buns lose all form and shape. With hard sauce, the pudding is amazing.Mulate's is a restaurant in New Orleans.

6 large eggs
2 cups whole milk
2 cups half-and-half
1 cup sugar
1 teaspoon vanilla extract
6 hamburger buns
1/2 cup raisins
butter or nonstick cooking spray, for the pan

Steps:

  • Preheat the oven to 350º. Grease a 9 x 13-inch pan and set aside.
  • In a large mixing bowl, whisk the eggs. Add the milk, half-and-half, sugar,.
  • and vanilla, and whisk well to combine.
  • Break the hamburger buns into pieces and place in the prepared pan. Sprinkle the raisins evenly over the buns and pour the liquid mixture over. Make sure that all of the bread is thoroughly soaked in the liquid.
  • Bake in the middle rack of the oven for 45 minutes. Let cool for 15 minutes before serving. If you prefer a firmer texture, chill for about 2 hours, then reheat for serving.
  • Serve with butter rum sauce.
  • BUTTER RUM SAUCE.
  • 4 Tblsp (1/2 stick) unsalted butter.
  • 1/4 cup sugar.
  • 1/2 cup heavy cream.
  • 1/2 cup rum (although you can use any rum you want, AB relies on a dark spiced rum [Capt. Morgan] for this).
  • Place the butter in a 1-quart saucepan and set over medium heat. Once the butter has melted, add the sugar and whisk to combine. Cook for 3 minutes.
  • Add the cream and rum and cook for 5 minutes, or until slightly thickened.
  • Serve warm over the bread pudding.

1/2 cup sugar
3 tablespoons cornstarch
3 cups heavy cream
4 large egg yolks
1 tablespoon unsalted butter
1 tablespoon vanilla extract
3 ripe bananas
1/2 cup unsalted butter, softened
1 cup sugar
1 large egg
2 teaspoons vanilla extract
3/4 teaspoon baking powder
1 1/3 cups all-purpose flour
1 tablespoon milk
Pinch of salt
2 cups heavy cream
1/2 cup confectioners' sugar
Big splash of vanilla extract
Pinch of salt

Steps:

  • For the pudding: Combine the sugar and cornstarch in a skillet. Gradually stir in the cream, making sure that all of the cornstarch dissolves. Set over medium heat and stir continuously, dragging the spoon along the bottom of the pan until the mixture starts to thicken.
  • Whisk the egg yolks in a bowl. Mix a spoonful of the hot cream mixture into the eggs to warm them without cooking. Add the warm egg mixture to the skillet with the cream, then add the butter and vanilla. Stir until the butter is melted; remove from the heat and pour into a heat-proof bowl. Cover with plastic wrap, pressing onto the surface of the pudding. Set aside to cool.
  • Mash the bananas in a bowl, add them to the cooled pudding and mix together until well incorporated.
  • For the vanilla wafers: Preheat the oven to 350 degrees F.
  • With an electric hand mixer, beat together the butter and sugar until combined. Next, add the egg, vanilla and baking powder and beat until smooth and fluffy. Add the flour, milk and salt and beat until completely incorporated.
  • Use 2 spoons to drop teaspoon-size dollops of the batter onto ungreased baking sheets. With a dampened finger, smooth the tops of the cookies. Bake until light brown around the edges, 6 to 7 minutes, rotating the baking sheets halfway through for even cooking. Allow to cool.
  • For the whipped Cream: Pour the cream into a large mixing bowl and beat using an electric mixer. Once the cream starts to thicken, add the confectioners' sugar, vanilla and salt and beat until light and fluffy.
  • Line the bottom of a trifle dish with some vanilla wafers, then add a layer of banana pudding and a layer of whipped cream. Continue to layer, ending with a layer of pudding. Refrigerate for 2 to 4 hours before serving.

I am collecting some recipes for homemade mixes. I got some good ones for cakes, but it seems there are so many others that I really like, and want to include in a cookbook for my family. See if you don't think this homemade mix isn't a great idea!!

1 1/2 c brown sugar
1/3 c granulated sugar
3/4 c non-fat dry milk powder
1 c cornstarch
1/2 tsp salt
2 tsp vanilla powder

Steps:

  • 1. Combine all ingredients and store in container with tight-fitting lid. Makes 3 cups mix, yielding 24 servings of prepared pudding.
  • 2. Stir mix well. For two servings, combine 1/4 cup Butterscotch Pudding Mix, 2 Tbsp. butter, and 1 cup milk in a small saucepan. Heat over low heat, stirring constantly, until mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened.

1/2 cup small pearl tapioca
2 cups water
2 1/2 cups milk
1/4 teaspoon salt
1/2 cup sugar
2 egg yolks
2 egg whites, stiffly beaten
1 teaspoon vanilla extract

Steps:

  • In a medium bowl soak tapioca in water overnight (about 8 hours). Drain water.
  • In a double boiler heat milk until no longer cold. Stir in salt and tapioca. Continue heating until small bubbles appear at the sides of the pan. Cover, turn heat to low and cook for 1 hour. Make sure the milk does not simmer or boil.
  • In a medium mixing bowl wisk together sugar and egg yolks until light in color. While whisking add a little bit of the hot milk mixture. Then add the egg yolk mixture to the hot milk mixture, stirring constantly. Place the double boiler over medium heat and cook until tapioca mixture is very thick, about 15 minutes.
  • Gently fold in beaten egg whites into the hot tapioca mixture. Stir in vanilla. Serve warm or chilled.
