This recipe is inspired by a number of different recipes I have tweaked according to my tastes. I love it every way you can imagine, on ice, in milkshakes, and even recently made in to my EXTREMELY homemade Baileys Irish Cream Ice Cream. Delicious

- In a blender, combine the first eight ingredients; cover and process until smooth. Store in the refrigerator., For each serving, place coffee in a mug. Stir in 1/3 cup Irish cream. Heat mixture in a microwave if desired.

HOMEMADE IRISH (WHISKEY) CREAM
This recipe turns out with the best flavour if you make it ahead and let it chill for 24 hours before serving. If you'd rather not serve it over crushed ice, chill the glass while you prepare the drink. Store leftovers in the refrigerator up to two months in an airtight container. If the Irish cream has been sitting in the refrigerator, shake it before serving.

I have made this frequently, especially around the holidays. I use Jameson's Irish whiskey as the liqueur of choice when I make it. Poured into decorative bottles, it can be given as a holiday gift too. Recipe makes 44.75oz = 1323.42ml A serving size is 1.3oz (37ml) = 35 servings per recipe

- In a 6 cup blender, at low speed, combine all ingredients.
- Blend until smooth.
- Pour into clean bottles, cap tightly and store in the refrigerator.
- It will keep up to one month.
- Stir or shake well before serving.
- Can be served straight, on the rocks, over ice cream or used in recipes calling for Irish Cream Liqueur.

- Spoon the dulce de leche into a bowl, then beat in the coffee, vanilla and whiskey until smooth. Stir in both pots of cream until well mixed.
- Pour into 1 large or several smaller sterilised bottles. This will keep in the fridge for 2 weeks. Drink in liqueur glasses or serve over ice.

- In an electric blender, combine eggs, sweetened condensed milk, chocolate syrup and coffee granules. Blend for 3 minutes.
- Add creamer, vanilla extract, almond extract and brandy to the mixture in the electric blender. Blend for 12 minutes. Refrigerate the mixture overnight.
- Strain the Irish Cream through a cheesecloth, then serve.

HOMEMADE BAILEYS IRISH CREAM
This tastes just like the store-bought version. I make it every year, before Christmas, to give as gifts (and of course to keep some for ourselves!). It ends up being less expensive than buying from the store AND you get to say that you made it yourself! :) *Note about raw eggs: Even though pasteurized and refrigerated eggs are typically safe, there can never be a guarantee that an egg is free from salmonella. One reviewer said she skipped the eggs in this recipe and it still tasted great. I haven't tried it that way yet, but that could be an option. I discovered this in the Company's Coming Gifts from the Kitchen cookbook a couple of years ago and I've never bought Bailey's again. I gave a bottle to my cousin and his wife for Christmas one year and he claims it's better than the original! Can be stored in the fridge for up to 3 weeks -- if it actually lasts that long!!
