Number Of Ingredients 11

2 lb roasted and peeled chiles (anaheim, or poblano work well)
6 3-6 large eggs
1/4 1/4 c flour (optional)
1 pkg shredded cheese enough for 6 to 10 chiles
1 pinch of salt
HOMEMADE SIMMER FRESH MEXICAN SALSA
6 large tomatoes
1 large onion
small handfull of fresh cilantro
pinch salt and pepper to taste
2 Tbsp vegetable oil

Steps:

  • 1. Roast the chiles Roast the chiles on a hot grill, or in a broiler on high heat. Turn them occasionally until the skins are blackened and charred. When the skin of the chiles is sufficiently charred and blistered, remove from the heat and let them cool to room temperature so you don't burn yourself. Peel the skin from the cooled chile, rinsing your fingers if they become sticky. Be careful to not tear the chile while peeling it.
  • 2. Remove the seeds Roasted chiles are very soft, and tear easily. You are going to make a small slice into the side of the chile, just big enough to get a spoon into, about 2-3 inches. (Or use an existing tear if there is one.) Insert the spoon into the chile and scrape the seeds and the white membrane out, try to not tear the chiles flesh any more than possible.
  • 3. Stuff the chiles Place a slice of cheese into the chile, or spoon the filling in, but don't force it. If the cheese is too large, trim it down until it fits inside. Don't over-stuff it. Make sure the open edges of the chile still come together.
  • 4. Prepare the chiles This step is optional for those that have difficulty with the egg batter sticking to the chile. Try to make them without this step at first. Place half of the flour on the bottom of a plate. Place the chiles on the flour and sprinkle the rest of the flour on top. Use your finger to make sure the entire chile is coated. Dust off remaining flour and set chiles aside. If you rinsed your chiles in water, or if you are using canned chiles you may need to do this to help the batter to stick.
  • 5. Prepare batter For a simple batter, whip 3-6 cold egg whites in a chilled bowl until they are stiff. Stir up the remaining yolks and slowly fold them in with a pinch of salt. Use approximately 2 large eggs for each pound of chiles, or 1 egg per extra-large chile.
  • 6. Cook chiles One at a time, hold the chiles by the stem and support the bottom with your fingers or a spoon, and dip the stuffed chiles into the batter. Carefully place them into a pan with 1 1/2 inches of hot oil. Cook each side until batter is a crisp golden brown.
  • 7. Drain excess oil Remove chiles from the oil and drain on paper towels. Serve immediately with your favorite salsa.
  • 8. Homemade Simmer Fresh Mexican salsa: Low fire/ In a medium skillet: Sautee Chop onion (small pieces)
  • 9. Add fresh chop tomatoes (small pieces)
  • 10. Add pinch of salt and pepper to taste
  • 11. Simmer at low heat until sauce is soupy
  • 12. Pour sauce on top of the chiles in an oven glass tray
  • 13. Sprinkle Mild cheddar cheese and Cotija cheese (Mexican version of parmesan cheese)
  • 14. Place in oven (350) cover with foil paper for 20 minutes or until cheese has melted

2 quarts whole milk
3 tablespoons fresh lemon juice
salt

Steps:

  • Line a colander with moistened cheese-cloth and set it over a large bowl.
  • In a large saucepan, bring the milk to a gentle boil. Add 3 tablespoons of the lemon juice and cook over low heat; stirring gently, until curds form and rise to the surface, about 3 minutes. Remove from heat, cover and let stand for 5 minutes; the curds will firm up slightly.
  • Using a slotted spoon with small holes, gently scoop the curds into the colander; discard the liquid. Let the ricotta drain for 15 minutes, then gently lift the cheesecloth to flip the curd and let drain for 15 minutes longer. Transfer the ricotta to a bowl and season with salt.
  • Ricotta can be stored, covered, in the refrigerator for up to 3 days.
  • Serving suggestion: Spread ricotta on toasted baguette slices, top with radish slices and chopped arugula.

4 c whole milk
2 c heavy cream
1 tsp kosher salt
3 Tbsp white wine vinegar
cheesecloth and a large sieve

Steps:

  • 1. Set a large sieve over a deep bowl. Dampen 2 layers of cheesecloth with water and line the sieve with the cheesecloth.
  • 2. Pour the milk and cream into a stainless-steel or enameled pot such as Le Creuset. Stir in the salt. Bring to a full boil over medium heat, stirring occasionally. Turn off the heat and stir in the vinegar. Allow the mixture to stand for 1 minute until it curdles. It will separate into thick parts (the curds) and milky parts (the whey).
  • 3. Pour the mixture into the cheesecloth-lined sieve and allow it to drain into the bowl at room temperature for 20 to 25 minutes, occasionally discarding the liquid that collects in the bowl. The longer you let the mixture drain, the thicker the ricotta. (I tend to like mine on the thicker side, but some prefer it moister.) Transfer the ricotta to a bowl, discarding the cheesecloth and any remaining whey. Use immediately or cover with plastic wrap and refrigerate. The ricotta will keep refrigerated for 4 to 5 days.

This is amazingly simple to make, using just 3 ingredients! And it only takes about 20 minutes to make!!! More delicate than storebought and only 1/2 the price. Use this fluffy cheese for lasagna, cannoli, or simple crostini(with a drizzle of eevo or topped with chopped fresh herbs). There's even a reduced fat version! I found this in the May issue of Good Housekeeping magazine.

8 cups whole milk
1 teaspoon salt
3 tablespoons fresh lime juice (or lemon, even vinegar works)

Steps:

  • Line a large strainer or colander with 4 layers of cheesecloth. Place lined strainer in a large bowl and set aside.
  • In a heavy bottom 4 quart saucepan, heat milk and 1 teaspoons salt to boiling on medium high, stirring occasionally to prevent milk from scorching.
  • Stir in lemon juice; cover and remove from heat.
  • Let stand 5 minutes. With a slotted spoon, gently transfer curds from the pan to the lined strainer. Drain 3 minutes. Discard whey in bowl.
  • If not using right away, transfer ricotta to a clean bowl, cover and refrigerate for up to 1 week.
  • Reduced Fat Ricotta:.
  • Substitute 4 cups reduced fat milk(2%) for 4 cups of the whole milk, and follow recipe as above.
  • Makes about 2 cups.

This is delicious and easy - it almost makes itself. Use it wherever ricotta cheese is called for - in pies, in phyllo, in lasagne etc. Sweeten it with honey for a yummy spread. I got this from Molly O'Neill, who wrote the food section in the NYT for many years. Basically you mix the ingredients, cook for a couple of minutes, and then it drains for half an hour. Then it's done.

12 cups whole milk
1 1/2 cups whole-milk yoghurt
1 1/2 cups heavy cream
1 pinch salt
1 pinch nutmeg (optional)

Steps:

  • In a large pan, combine the milk, yoghurt and cream and bring to a boil over medium high heat.
  • Boil for 2 minutes, or until the milk is very curdled.
  • Line a large mesh strainer with a damp kitchen towel or several layers of damp cheesecloth, making sure the cloth extends well over the sides of the strainer.
  • Place the strainer over a deep bowl and pour the milk through the strainer.
  • Drain 30 minutes, making sure the strainer does not rest in the liquid.
  • Gather up the loose ends of the cloth and twist gently to extract more liquid.
  • Transfer the curds to a bowl and stir in the salt and nutmeg.
  • Discard the liquid (whey).
  • The cheese will keep, refrigerated, for 3 days.

GERMAN CARAWAY CHEESE AND FRESH HOMEMADE CHEESE: (APPETIZER)

This homemade caraway cheese tastes good on homemade bread or Knackebrod or on crackers. Making farmhouse cheese takes about 24 hours, it is not labor-intensive and it yields a superior product. You will end up with a creamy white cheese with a tender curd and a fresh, tangy flavor. Mix it with cream for a creamed fine-curd cottage cheese or eat fresh, perhaps flavored with snipped fresh chives or lemon balm. You can find rennet tablets in the baking section of the grocery store.

dry-curd cottage cheese
1 cup unsalted butter
1 teaspoon baking soda
2 teaspoons salt
2 cups sour cream
2 tablespoons caraway seeds
1 1/2 gallons homogenized whole milk
1 cup buttermilk
1 rennin tablets
sour cream or milk (optional)

Steps:

  • TO MAKE THE CARAWAY CHEESE: Make sure the farmhouse cheese is DRAINED WELL in cheesecloth.
  • (Do not add any cream to the cheese after draining.) Place the butter, baking soda, and salt in the top of a DOUBLE BOILER over SIMMERING water.
  • When the butter is melted, add the cheese, and continue cooking, whisking occasionally, until the cheese has melted, about 1 hour.
  • The butter and cheese will be separated.
  • Beat in the sour cream and caraway seeds until the mixture is blended well together.
  • Pour into a large loaf pan or a crock.
  • Cover, and refrigerate for at least 1 hour, until the cheese is firm.
  • Turn out onto a serving dish, if you like, bring to room temperature, and serve.
  • TO MAKE FRESH FARMHOUSE CHEESE: Warm the whole milk and buttermilk over low heat in a large saucepan or stockpot until they reach 90 degrees on an instant-read thermometer.
  • Pour 1/4 cup of this mixture into a glass measuring cup and heat it in the microwave for 10 seconds on high, or until it is 115 degrees; alternatively, heat the 1/4 cup milk in a small saucepan until it reaches the same temperature.
  • Crumble the rennet tablet into the warm milk in the measuring cup and stir to blend.
  • Pour this mixture back into the large saucepan and stir well.
  • Remove from the heat, cover the pan, and let the mixture sit overnight, for at least 14 hours.
  • In the morning, return the pan to the heat and remove its cover.
  • For a larger curd cheese, bring the mixture to 130 or 140 degrees over medium heat; for a smaller curd cheese, bring the mixture to about 115 degrees over low heat.
  • Continue cooking, stirring occasionally, at the desired temperature for 1 to 1 1/2 hours, or until the curds have separated from the whey.
  • Meanwhile, line two colanders with a double thickness of cheesecloth.
  • Tie or clip the cheesecloths to the perimeters of the colanders to keep them from slipping inches Gently pure half of the mixture through 1 colander and half through the other.
  • Let the whey drain off the cottage cheese for about 1 hour.
  • Spoon the drained cheese into two 1-pint containers.
  • Stir in some fresh cream, sour cream, or whole milk, if you like, for a softer consistency and flavor.
  • The cheese will keep covered in the refrigerator for up to 1 week.
  • Makes 8 cups.

30 Minute Fresh Mozzarella Cheese Homemade image

Homemade fresh mozzarella cheese has fabulous flavor. The instructions here for making your own at home are detailed but not difficult. Rennet and citric acid can be found in health food stores and specialty markets, mail order, and some pharmacies. (from Home Cheese Making by Ricki Carroll (Workman Publishing)) I made this and it's easy. If you can make pizza dough you can make this cheese, and you can basically make it in the time it takes for your dough to rise. Wow it is so much better than store bought. I'd give it 5 stars but I posted it so..... FYI fresh Mozzarella doesn't keep well and is best consumed the day it is made

1/2 rennet tablet
1/4 cup cool chlorine-free water (most bottled waters are chlorine-free)
1 gallon 2% low-fat milk (1%, or skim)
2 teaspoons citric acid
1 teaspoon salt (optional)

Steps:

  • Crush the rennet into the water and stir to dissolve.
  • Pour milk into a non-reactive pot (no aluminum or cast iron).
  • Place over medium heat. Sprinkle the citric acid over the milk and stir a few times. Heat milk to 88°F; milk will begin to curdle.
  • At 88°F, add the rennet solution and continue stirring slowly every few minutes until the milk reaches 105°F Turn off the heat. Large curds will appear and begin to separate from the whey (the clear, greenish liquid).
  • With a slotted spoon or mesh strainer, scoop the curd into a large glass bowl. (If it's still too liquid, let it set for a few more minutes). Press the curds gently with your hand and pour off as much whey as possible.
  • Microwave curds on high for 1 minute, then drain off all the excess whey.
  • With a spoon, press curds into a ball until cool.
  • Microwave two more times for 35 seconds each, and continue to drain the whey and work cheese into a ball.
  • In the meantime, place the whey over medium heat and let it heat to about 175°F.
  • When cheese is cool enough to touch, knead it like bread dough until smooth. When you can stretch it like taffy, it is done. You can sprinkle 1 to 2 teaspoons salt into the cheese while kneading and stretching it. The cheese will become stretchy, smooth and shiny. If it is difficult to stretch and breaks easily, dip it into the hot whey for a few seconds to make it warm and pliable. Then pick it up again and stretch it into a long rope. Fold over and stretch again. Dip in hot whey as needed to make the cheese pliable.
  • When the cheese is smooth and shiny (this takes just a few minutes), it is ready to eat. Shape it into a log or golf-size balls, then store in a solution of 2 teaspoons salt to 1 cup water.

1 quart milk
1 1/2 cups buttermilk
2 teaspoons coarse salt
1 teaspoon fresh lemon zest
1 1/2 teaspoons fresh thyme leaves, minced

Steps:

  • Cut out three pieces of cheesecloth into 12-inch squares.
  • Line a colander or medium strainer with all three layers of cheesecloth.
  • Set colander in sink.
  • Combine milk, buttermilk, salt, lemon zest and thyme in a large heavy-bottomed saucepan, and heat over medium-high heat, stirring often until mixture has separated into white curds and translucent whey, about 8 minutes.
  • If using lowfat buttermilk, separation occurs at about 180 degrees F and the curds will clump together readily.
  • If using whole buttermilk, separation occurs closer to the boiling point, about 212 degrees F, and the curds are finer-grained.
  • When using whole buttermilk, let curds and whey stand off heat for about 3 minutes after separation, so the curds cling together-this way you won't loose tiny curds through the cheesecloth.
  • Ladle the contents of the saucepan into the prepared colander.
  • Let the whey drain, 1 to 2 minutes.
  • Lift the four corners of the cheesecloth and gather them together.
  • Gently twist the gathered cloth over the cheese and press out any excess whey. Do not squeeze to tightly or you will end up with a grainy cheese.
  • Cheese can be unwrapped immediately and served warm, or let stand until cooled to room temperature, about 10 minutes more.
  • To serve a firmer cheese, transfer cheese, in its cloth, to a small flat-bottomed dish or pie plate; refrigerate until cool, about 10 minutes.
  • Unwrap cheese and gently invert onto plate; discard cloth.
  • Tent cheese with plastic wrap and keep refrigerated up to 2 days.
  • Remove from refrigerator and let stand for 10 minutes at room temperature before serving.
  • You can omit the lemon and thyme and opt for cracked black pepper, or fresh rosemary, or red pepper flakes, lemon zest and dill -- whatever fresh herbs you like.
  • You can also reduce salt to 1/2 teaspoon, adding 2 teaspoons pure vanilla extract and 1 to 2 tablespoons sugar, depending on how sweet you want your cheese.

This is the simplest recipe that I use to make a version of Mexican 'Queso Fresco' and the same recipe for Homemade Ricotta Cheese.

1 gallon whole milk
¼ cup white or cider vinegar
1 pinch salt

Steps:

  • Pour the milk into a large pot, and heat until the temperature reaches 195 degrees F (90 degrees C), or almost boiling. Stir constantly to prevent scorching on the bottom of the pot. When the milk reaches the temperature, remove from the heat, and stir in the vinegar. Let stand for 10 minutes.
  • Line a strainer with cheesecloth, and set over the sink or a large pot or bowl. The milk should separate into a white solid part, and a yellowish liquid (whey). Stir the salt into the milk, then pour through the cloth-lined strainer. Let the curds continue to drain in the strainer for 1 hour. Discard the whey.
  • After the cheese has finished draining, pat into a ball, and remove from the cheese cloth. Wrap in plastic and store in the refrigerator until ready to use. Fresh cheese will usually last about a week.
