HOMEMADE BUTTERFINGER BITES
Bent on using up a stash of leftover candy corn, I decided to experiment. Turns out, if you melt it, mix it with peanut butter and coat the balls with chocolate, you get a softer, denser version of a Butterfinger bite. Who knew? They're delicious! -Melissa Hansen, Milwaukee, Wisconsin

- Microwave candy corn on high for 30 seconds; stir. Cook in 15-second intervals until melted; stir until smooth. Add peanut butter; microwave mixture until smooth, 45-60 seconds, stirring 3 times., Gently shape teaspoonfuls of mixture into balls (if mixture becomes crumbly, reheat for 15-20 seconds). Place on waxed paper; let stand until set. In a microwave, melt chocolate chips and oil; stir until smooth. Dip balls in chocolate mixture, allowing excess to drip off. Place on waxed paper; let stand until set.

- In a microwave safe bowl, microwave the Candy Corn for 90 seconds, stopping to stir every 30 seconds, until smooth.
- Immediately add the peanut butter and mix together.
- Using a teaspoon, form mixture into little balls and place them on wax paper.
- Freeze for 15 minutes.
- Melt the chocolate chips in a microwave safe bowl - 90 seconds, stopping to stir every 30 seconds, until smooth.
- Roll the cooled balls in chocolate and return to wax paper.
- Decorate with additional chocolate, candy melts, or melted candy corn (optional) and place in the fridge to firm.

- 1. Rinse metal freezer container to get it wet and place in freezer.
- 2. In large mixing bowl, beat eggs until fluffy.
- 3. Add vanilla, sugar and salt; mix well.
- 4. Mix in half and half and whipping cream; mix well.
- 5. Place bowl with mixture into refrigerator to get cold for 30 minutes.
- 6. Crush up butterfingers with rolling pin.
- 7. Pour cold mixture into cold metal container bucket (with insert).
- 8. Add crushed butterfingers.
- 9. Add enough whole milk to fill line on container.
- 10. Cover with lid and attach to electric ice cream bucket.
- 11. Pour in ice, water and rock salt. Start ice cream maker and continue supplementing with ice and rock salt until ice cream is finished.
- 12. NOTE: To make Srawberry Ice Cream Mash 5 cups fresh strawberries in small bowl. Do steps 1 thru 4. Add strawberries to mixture; place bowl in refrigerator to get cold about 30 min. Pour cold mixture into metal container. Do steps 9 thru 11.

My mother and I made these for years before she passed away. I now do them every Christmas for family and friends. This is a cooked recipe that can be a little tricky but is well worth the trouble once you get the hang of it.

- 1. Cook sugar, white corn syrup and water to 300 degrees. It is best to use a small heavy cooker.
- 2. Pour over peanut butter and mix. I use a heavy glass mixing bowl and a wooden spoon.
- 3. Place on several sheets of wax paper and form into long rolls. Cut with scissors into bite size pieces. You must do this really fast. If it starts to cool it doesn't cut good. Use heavy rubber gloves to protect your hands.
- 4. Wait several hours or overnight and dip in chocolate coating.

- Melt candy corn in microwave for 1 minute, stirring every 15 seconds. Mix in the peanut butter. Chill for a couple of minutes in freezer. Form the peanut butter mixture into small balls, set on wax or dipping paper, and place in refrigerator while preparing chocolate. Melt dipping chocolate as directed on packaging. Use dipping fork/utensil to dip chilled butterfingers balls in chocolate. Set on dipping paper and return to refrigerator for just a couple of minutes until hardened. Promptly remove from refrigerator and enjoy!
