Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Line the bottom and sides of a 9-inch pie plate with a layer of alternating vanilla wafer crumbs and banana slices.
- To Make Pudding: In a medium saucepan, combine 1 1/2 cups sugar with flour. Mix well, then stir in half the milk. Beat egg yolks and whisk into sugar mixture. Add remaining milk and butter or margarine.
- Place mixture over low heat and cook until thickened, stirring frequently. Remove from heat and stir in vanilla extract. Pour half of pudding over vanilla wafer and banana layer while still hot.
- Make another layer of alternating vanilla wafers and banana slices on top of pudding layer. Pour remaining pudding over second wafer and banana layer.
- To Make Meringue: In a large glass or metal bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until whites are stiff. Spread meringue into pie pan, making sure to completely cover pudding layer.
- Bake in preheated oven for 15 minutes, just until meringue is browned. Chill before serving.

This cake does not last long in our house. In truth I think it's the icing that makes the cake, but the moist cake is fabulous too. It freezes great as well.

- To make cake: Mix margarine, sugar and eggs together.
- In separate bowl mash the bananas and add the milk. Once mixed, add the banana mixture to the margarine, sugar and eggs.
- In separate bowl mix the remaining dry cake ingredients.
- Mix the dry and wet cake ingredients together.
- Pour into 9 x 13 inch pan and bake at 350 degrees Fahrenheit for 35 - 40 minutes. Cool to room temperature.
- To make icing: Mix the flour, milk and sugar in a small sauce pan.
- Cook to boiling stirring continuously. Cool to room temperature.
- In a separate bowl whip the margarine, shortening and vanilla.
- Mix the cooled pudding mixture with the whipped marg/shortening mixture until fluffy.
- Top cooled cake with icing and enjoy!

- Whisk milk, sugar, flour, and salt together in a medium saucepan until well combined. Place over medium-low heat and cook, whisking frequently, until the mixture comes to a low simmer and begins to thicken, 5 to 10 minutes.
- Beat egg yolks in a small bowl until smooth. Add about 3/4 cup of the hot milk mixture and stir it quickly into the egg yolks. Whisk the egg yolk mixture back into the hot milk mixture and continue to cook, stirring constantly, until thick and creamy, about 5 minutes. Turn off heat, add butter and vanilla, and stir until smooth. Let cool slightly, about 10 minutes.
- Set aside 6 vanilla wafers for the top. Arrange a layer of vanilla wafers in the bottom of a deep, 8-inch square or 2-quart baking dish. Top with a single layer of sliced bananas. Add another single layer of vanilla wafers, then spread 1/2 of the pudding mixture over top. Top with another layer of sliced bananas and the remaining vanilla wafers. Spread the remaining pudding over top, letting it seep into any open spaces. Cover lightly with plastic wrap and refrigerate 4 hours to overnight.
- When ready to serve, beat heavy cream with an electric mixer until soft peaks form, incorporating powdered sugar about halfway through.
- Remove banana pudding from the refrigerator. Spread whipped cream over top. Crush reserved vanilla wafers and sprinkle over the whipped cream. Serve immediately.

HOMEMADE BANANA PUDDING IN THE MICROWAVE
My Mother made her banana pudding (ok, it's really vanilla pudding poured over sliced bananas) in the top of a double boiler on the stove. It was always topped with meringue and baked, then served warm. This is more of a modern version, made quickly in the microwave for convenience. Although this is served cold and topped with whipped topping, you can still reserve the egg whites, beat them with sugar, spread over the top of the pudding and bake until brown to serve it for Southern style warm banana pudding. Cooking time does not include cooling.

- In a large microwaveable bowl, Mix sugar, flour, salt, egg yolks and milk.
- Microwave on high power for 2 minutes.
- Beat with electric mixer for 1 minute.
- Microwave on high power 2 more minutes.

- Combine milk and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted and mixture is hot, about 5 minutes.
- Mix sugar, flour, and salt together in a bowl. Add some of the hot liquid to the dry ingredients; mix well. Pour dry ingredients into the double boiler and stir well. Cover and cook over a rolling boil, stirring often, until thickened, about 15 minutes.

- 1. Preheat oven to 350. Mix 1/2 c of the sugar with flour in a small saucepan. Blend in the egg yolks.
- 2. Add vanilla extract and milk.
- 3. Cook, uncovered, for 10-12 minutes or until thickened. Stir constantly.
- 4. Remove from heat.
- 5. Begin to layer the pudding (usually makes 3 layers). Add a layer of wafers in a casserole bowl.
- 6. Top with a layer of banana slices.
- 7. Next, pour some custard over the bananas and wafers.
- 8. Repeat layers ending with custard.
- 9. Beat egg whites on high speed until stiff peaks form.
- 10. Gradually add 1/4 c sugar.
- 11. Beat until firm.
- 12. Pour meringue over final custard layer.
- 13. Crumble wafers over top.
- 14. Bake 15-20 minutes or until top is slightly browned.
- 15. Cool at least one hour before eating.
BANANA PUDDING WITH HOMEMADE VANILLA WAFERS
Steps:
- For the pudding: Combine the sugar and cornstarch in a skillet. Gradually stir in the cream, making sure that all of the cornstarch dissolves. Set over medium heat and stir continuously, dragging the spoon along the bottom of the pan until the mixture starts to thicken.
- Whisk the egg yolks in a bowl. Mix a spoonful of the hot cream mixture into the eggs to warm them without cooking. Add the warm egg mixture to the skillet with the cream, then add the butter and vanilla. Stir until the butter is melted; remove from the heat and pour into a heat-proof bowl. Cover with plastic wrap, pressing onto the surface of the pudding. Set aside to cool.
- Mash the bananas in a bowl, add them to the cooled pudding and mix together until well incorporated.
- For the vanilla wafers: Preheat the oven to 350 degrees F.
- With an electric hand mixer, beat together the butter and sugar until combined. Next, add the egg, vanilla and baking powder and beat until smooth and fluffy. Add the flour, milk and salt and beat until completely incorporated.
- Use 2 spoons to drop teaspoon-size dollops of the batter onto ungreased baking sheets. With a dampened finger, smooth the tops of the cookies. Bake until light brown around the edges, 6 to 7 minutes, rotating the baking sheets halfway through for even cooking. Allow to cool.
- For the whipped Cream: Pour the cream into a large mixing bowl and beat using an electric mixer. Once the cream starts to thicken, add the confectioners' sugar, vanilla and salt and beat until light and fluffy.
- Line the bottom of a trifle dish with some vanilla wafers, then add a layer of banana pudding and a layer of whipped cream. Continue to layer, ending with a layer of pudding. Refrigerate for 2 to 4 hours before serving.
HOMEMADE BANANA PUDDING
In my opinion, banana puddin' made from scratch is one of the best desserts ever. That homemade custard is so comforting and actually really easy to make. This recipe is inspired by the banana pudding at Gillie's Seafood in Charleston. They serve theirs in little mason jars, but I like to make it in a large casserole dish to feed a crowd.

- Make the pudding: Combine the milk, sugar, flour and salt in a large saucepan over medium-low heat. Cook, stirring constantly, until it becomes thick, about 8 minutes. Place the egg yolks in a small bowl and beat lightly. Whisk a little bit of the milk mixture into the egg yolks until tempered. Slowly add the egg mixture to the milk mixture, and whisk until combined. Cook 2 more minutes to cook the eggs, stirring constantly. - To finish: Arrange a single layer of vanilla wafers in the bottom of a 9-by-13-inch baking dish. Add a layer of sliced bananas on top. Cover with half of the pudding. Repeat the layers once. Top the last layer with the whipped cream. Garnish with the crushed vanilla wafers and sliced bananas, if desired. Cover and chill 1 hour, or until ready to serve.

- 1. In a bowl. whisk the egg yolks with the cornstarch, the sugar and salt. Set aside. In a medium saucepan, bring the milk to a boil. Gradually whisk the milk into the egg yolk mixture until smooth. Transfer the pudding mixture to the saucepan and add the banana liqueur. Cook over moderate heat, whisking until the pudding is thick, about 3 minutes. Scrape the pudding into a bowl and whisk in the cold butter and vanilla. - 1. Place layer of wafer cookies on bottom of medium sized mixing bowl Slice Bananas over top of cookies.
- 2. Mix 1st 4 ingredients together, in sauce pot or Double boiler, Cook over med. heat. Stir constantly with wire whip or wooden spoon, so it does not scortch the bottom, until this thickens, about 15 min. usually

TRULY HOMEMADE BANANA PUDDING
One of those recipes that have been passed down through the generations... this is a lot of work, but SO worth it... Edit to this recipe: I should say that this is one of those "until it looks right" recipes. You want the pudding thick and you may have to cook, stir, cook, you will want to stir constantly and it will be hard to stir. You also might want to refrigerate it overnight if it needs to thicken (this also makes the cookies a little mushy which I LOVE)
