DAD'S HOMEMADE BAKED BEANS
This is my dads recipe for Boston Baked Beans. They are sweet and a little tangy what beans should taste like to me. The end result can be a little juicy, if you like your beans thicker, by all means just cook them to the consistency that you prefer. Also, the mustard and ketchup are not set in stone, they are simply one part mustard to three parts ketchup.

SLOW-COOKED HOMEMADE BAKED BEANS
I like making baked beans from dried beans because they are not as mushy as canned baked beans. I found this recipe on a package of Publix dried navy beans. I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

Steps:
- QUICK SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups of water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).
- OVERNIGHT SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).
- TO COOK BEANS: Add 6 cups fresh water to the beans after soaking. Cover and bring just to boiling on medium-high heat. Reduce heat to low and simmer gently with lid tilted, about 1 1/2 hours, stirring occasionally, or until desired tenderness. Stir gently and very little to prevent breaking of skins; add water, if needed, during cook time. Makes about 6 cups of cooked beans.
- TO MAKE BAKED BEANS: Cut bacon into 1-inch pieces. Combine with remaining ingredients in slow cooker. Cover and cook on low 8-10 hours. Stir occasionally, if possible. Makes about 10 cups of baked beans. Note: the number of servings below depends on how many other side dishes there are.

Steps:
- First to make the meatballs. Melt the butter in a pan and gently fry the spring onions over a low heat for 1-2 minutes, just until soft but not brown. Then set aside.
- Tip the pork mince into a large bowl, add the egg and thyme and season with salt and pepper. Mix the ingredients together using clean hands, then add the crumbs and spring onions and mix thoroughly. Leave for 10 minutes.
- Meanwhile, pre-heat the oven to 170°C and line a deep baking tray with Non-stick Foil. Shape the meat mixture into 12 even sized balls, and bake in the oven for 15 minutes until just starting to go golden brown but not quite cooked.
- While the meatballs are cooking, you can make the baked beans. Fry the onion and carrot in the oil over a medium-low heat for 10-15 minutes until they soften, then add the garlic and paprika. Fry for a further minute.
- Stir in the chopped tomatoes, ketchup, honey and vinegar and bring to a gentle simmer for 15 minutes.
- Add 100ml cold water, then use a stick blender to roughly puree the sauce, leaving a few chunky pieces depending on how you like it.
- Add the beans to the sauce mixture, then tip the contents of the pan into the baking tray with the meatballs.
- Cook, uncovered for a further 15 minutes until the sauce has thickened and the meatballs are completely cooked through. Sprinkle over the chopped parsley to finish off the dish.
- Serve with potato wedges and some steamed green vegetables for a deliciously warming and satisfying meal!
