CRUST
1 1/3 c all-purpose flour
1/2 tsp salt
1/2 stick butter flavored crisco baking stick shortening, well-chilled
6 Tbsp ice cold water
PIE FILLING
1/2 c all-purpose flour
1/2 c granulated sugar
1 tsp ground cinnamon
1 dash(es) pumpkin pie spice
1 dash(es) nutmeg
1/2 tsp salt
3 Tbsp lemon juice
3 medium granny smith apples, peeled, cored and cut lengthwise into 1/2" thick wedges
4 medium bartlett pears, firm, peeled, cored and cut lengthwise into 1/2" thick wedges
STREUSEL TOPPING
1/2 c all-purpose flour
1/2 c brown sugar, packed
6 Tbsp chilled butter, cut into small pieces

Steps:

  • 1. PREHEAT OVEN TO 375°
  • 2. FOR THE CRUST: BLEND flour and salt in medium mixing bowl. CUT chilled shortening into 1/2-inch cubes. Cut in chilled shortening cubes into flour mixture, using a pastry blender, in an up and down chopping motion, until mixture resembles coarse crumbs with some small pea-sized pieces remaining. SPRINKLE half the maximum recommended amount of ice cold water over the flour mixture. Using a fork, stir and draw flour from bottom of bowl to the top, distributing moisture evenly into flour. Press chunks down to bottom of bowl with fork. Add more water by the tablespoon, until dough is moist enough to hold together when pressed together. ROLL dough from center outward with steady pressure on a lightly floured work surface (or between two sheets of wax or parchment paper) into a circle 2-inches wider than pie plate for the bottom crust. Transfer dough to a pie plate coated with cooking spray by loosely rolling around rolling pin. Center the rolling pin over the pie plate, and then unroll, easing dough into pie plate. Trim edges of dough leaving a 3/4-inch overhang. Fold edge under. Flute dough as desired. Set aside in the refrigerator while making pie filling.
  • 3. FOR THE PIE FILLING: combine flour, sugar, cinnamon and salt in a large bowl. Add lemon juice, apples and pears to the flour mixture. Toss gently to coat. Arrange pear-apple mixture in an even layer in prepared crust.
  • 4. FOR THE STREUSEL TOPPING: combine flour and brown sugar in a medium bowl. Add cold butter and cut in with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle evenly over pear-apple mixture. Bake for 1 hour or until lightly brown. Topping will be crunchy. Let cool for an hour before serving.

HOMEMADE CANNED APPLE PIE FILLING

Homemade Canned Apple Pie Filling image

This is a great recipe, which came to me with great reviews. It is simple, and great to have on hand for lots of apple desserts; dumplings, pies, crisps, cobblers, crumbles, betties, empanadas, enchiladas, crepes, etc. I love it!! I've also posted a recipe that uses this filling in an Apple Crisp:

Provided by Amy Alusa

Categories     Fruit Desserts

Number Of Ingredients 8

6 qt sliced fresh apples (firm crisp apples are best)(about 30 apples)
5 c granulated sugar
1 1/2 c clear jel
1 Tbsp cinnamon
2 1/2 c water
5 c apple juice
3/4 c bottled lemon juice
5 500 milligram vitamin c tablets

Steps:

  • 1. Crush vitamin C tablets to a powder. Put in a bowl of water to put apples in. Peel and core the apples. Slice in 1/4 inch slices and put into the bowl of cold water (this will prevent apples from turning brown while they wait for the next step.
  • 2. Combine sugar, Clear Jel, cinnamon, water and apple juice in a large pot. Stir and cook on medium high heat until the mixture thickens and begins to bubble. Add lemon juice and boil for 1 minute, stirring constantly. Add drained apple slices to sauce.
  • 3. Fill jars with mixture, leaving 1 -inch head space. I packed the jars with the apples and then divided sauce among the jars.
  • 4. Wipe jar rims clean, tighten lids and process immediately. Place jars in pot of water with water 1 inch above top of jar lids and boil for 25 minutes (For 0-1,000 ft altitude. See download for other times). Remove from water and let jars cool 12 to 24 hours. Lids should be indented if properly sealed. Now they are ready to be saved for later or wrapped for gifts. http://www.skiptomylou.org/wp-content/uploads/2009/10/mf1187.pdf

Provided by My Food and Family

Categories     Recipes

Time 1h25m

Yield Makes 10 servings.

Number Of Ingredients 10

2-1/4 cups flour
1 tsp. salt
1 cup shortening
5 to 7 Tbsp. ice cold water
6 cups thinly sliced peeled tart apples (about 4 large apples)
3/4 cup sugar
1 Tbsp. cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 Tbsp. lemon juice

Steps:

  • Preheat oven to 400°F. Mix flour and salt in large bowl. Cut in shortening using a pastry blender or two knives until mixture resembles coarse crumbs.
  • Add water, 1 Tbsp. at a time, mixing lightly with fork until flour mixture is evenly moistened and clings together when pressed into a ball. Divide dough in half; shape each half into 1/2-inch-thick round. Wrap each dough round in plastic wrap; refrigerate 15 min.
  • Meanwhile, toss apples with sugar, cornstarch, cinnamon, nutmeg and lemon juice in large bowl; set aside. Place 1 dough round between two large sheets of plastic wrap; roll out dough with rolling pin to flatten slightly, working from center of dough to the edge. Turn over; continue rolling until dough round is about 2 inches larger than diameter of inverted 9-inch pie plate.
  • Peel off top piece of plastic wrap; invert dough into pie plate. Peel off remaining piece of plastic wrap; press dough evenly onto bottom and up side of pie plate, being careful not to stretch the dough. Trim any dough hanging over edge of pie plate with sharp knife or kitchen shears; reserve trimmings.
  • Fill with apple mixture; set aside. Roll out remaining dough as directed; place over filling. Trim top crust about 1/2 inch beyond edge of pie plate. Fold edge of top crust under edge of bottom crust; pinch edges together to form a ridge. Flute edge (see Tip). Cut several slits near center of pie to allow steam to escape.
  • Bake 45 to 50 min. or until juices form bubbles that burst slowly. Cool.

HOMEMADE APPLE PIE

Homemade apple pie image

Try our classic Bramley apple pie with homemade shortcrust pastry. Simplicity is key to this traditional dish which makes for a comforting family pudding.

Provided by Angela Nilsen

Categories     Dessert, Dinner, Treat

Time 2h30m

Number Of Ingredients 9

1kg Bramley apples
140g golden caster sugar
½ tsp cinnamon
3 tbsp flour
225g butter, room temperature
50g golden caster sugar, plus extra
2 eggs
350g plain flour, preferably organic
softly whipped cream, to serve

Steps:

  • Put a layer of paper towels on a large baking sheet. Quarter, core, peel and slice the apples about 5mm thick and lay evenly on the baking sheet. Put paper towels on top and set aside while you make and chill the pastry.
  • For the pastry, beat the butter and sugar in a large bowl until just mixed. Break in a whole egg and a yolk (keep the white for glazing later). Beat together for just under 1 min - it will look a bit like scrambled egg. Now work in the flour with a wooden spoon, a third at a time, until it's beginning to clump up, then finish gathering it together with your hands. Gently work the dough into a ball, wrap in cling film, and chill for 45 mins. Now mix the 140g/5oz sugar, the cinnamon and flour for the filling in a bowl that is large enough to take the apples later.
  • After the pastry has chilled, heat the oven to 190C/fan 170C/gas 5. Lightly beat the egg white with a fork. Cut off a third of the pastry and keep it wrapped while you roll out the rest, and use this to line a pie tin - 20-22cm round and 4cm deep - leaving a slight overhang. Roll the remaining third to a circle about 28cm in diameter. Pat the apples dry with kitchen paper, and tip them into the bowl with the cinnamon-sugar mix. Give a quick mix with your hands and immediately pile high into the pastry-lined tin.
  • Brush a little water around the pastry rim and lay the pastry lid over the apples pressing the edges together to seal. Trim the edge with a sharp knife and make 5 little slashes on top of the lid for the steam to escape. (Can be frozen at this stage.) Brush it all with the egg white and sprinkle with caster sugar. Bake for 40-45 mins, until golden, then remove and let it sit for 5-10 mins. Sprinkle with more sugar and serve while still warm from the oven with softly whipped cream.
