Homemade Mac and Cheese image

This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
½ cup grated Parmesan cheese
3 cups milk
¼ cup butter
2 ½ tablespoons all-purpose flour
2 tablespoons butter
½ cup bread crumbs
1 pinch paprika

Steps:

  • Cook macaroni according to the package directions. Drain.
  • In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  • Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

In the South, mac 'n cheese is like everyone's favorite aunt-and this best-ever recipe beats out the rest.

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

¼ cup butter
3 tablespoons all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese
4 slices canned jalapeno peppers, chopped
2 teaspoons Dijon mustard
½ teaspoon ground black pepper
salt to taste
3 dashes hot sauce, or to taste
2 cups shredded Cheddar cheese
1 cup dry bread crumbs
2 tablespoons butter
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
  • Melt 1/4 cup butter in a 3-quart saucepan over medium heat. Stir flour into melted butter and cook until smooth and bubbling, about 1 minute. Mix milk, cream cheese, jalapeno peppers, Dijon mustard, black pepper, and salt into flour-butter mixture; cook, stirring occasionally, until sauce is thickened, about 5 minutes. Mix macaroni and Cheddar cheese into sauce; pour into a 2-quart casserole dish.
  • Mix bread crumbs, 2 tablespoons butter, and parsley together in a bowl; spread over macaroni and cheese.

For the béchamel:
4 cups (1 quart) whole milk
8 tablespoons unsalted butter (1 stick)
1/2 cup all-purpose flour
2 Tablespoons kosher salt
To assemble:
Kosher salt
1 pound elbow macaroni
8 ounces shredded 2-year aged sharp cheddar cheese (about 3 cups)
3 ounces grated Pecorino Romano cheese (about 1 cup)
2/3 cup panko (optional)

Steps:

  • FOR THE BECHAMEL: Heat the milk in a medium saucepan over medium-high heat until it just comes to a simmer, then turn off the heat and set aside. In a large, heavy-bottomed saucepan, melt the butter over medium heat. Add the flour and whisk constantly until the mixture turns light brown in color, about 3 minutes. Remove from the heat. While whisking constantly, slowly add the hot milk to the flour mixture until evenly combined and smooth. (It will get very thick when you first add the milk, then thin out.) Return the saucepan to medium-high heat and while whisking constantly, cook until the sauce thickens and coats the back of a spoon, about 2 to 3 minutes. Stir in 1 tablespoon of the salt, taste, and add the remaining salt as desired. Remove from the heat and set aside. TO ASSEMBLE: Bring a large pot of heavily salted water to a boil over high heat. Add the pasta and cook until it's almost al dente (just on the edge of being underdone), then drain and rinse with cold water; set aside. (If you plan to top the mac 'n' cheese with panko and bake it, heat the oven to 400°F and arrange a rack in the middle.) Place the reserved saucepan of béchamel over medium heat and stir in both cheeses just until melted and smooth. Add the pasta and continue cooking, stirring occasionally, until the pasta is heated through and steaming, about 2 to 4 minutes. Serve immediately or, if baking, transfer to a 5-quart baking dish, sprinkle with the panko, and bake until bubbling and brown on top, about 25 to 30 minutes.

We took advantage of the leftover Cheddar Cheese Sauce to prepare this comforting casserole from reader Phyllis Schmalz. The Kansas City, Kansas cook coats macaroni, ham and chopped onion with the creamy mixture before popping the much-loved combination into the oven to bake.

1 small onion, chopped

2 cups cubed fully cooked ham
2 cups Cheddar Cheese Sauce

1 1/4 cups elbow macaroni
3 tablespoons margarine or 3 tablespoons butter
1/8 th. cup finely chopped sweet onion, can use same amount of green onion if desired
3 tablespoons all-purpose flour
1 1/2-2 cups milk
1 teaspoon ground mustard, can use prepared mustard instead
1/2 teaspoon cayenne pepper
3/4 teaspoon smoked paprika
1/2 teaspoon salt, add more if desired
1/2 teaspoon pepper, add more if desired
6 ounces shredded colby-monterey jack cheese, divided

Steps:

  • Cook pasta according to package directions and set aside.
  • Over medium heat, in a medium size saucepan melt margarine and add onions.
  • Cook onions until softened.
  • Add flour and cook until lightly browned.
  • Turn heat to low and add milk a little at a time, stir until desired thickness is reached. ( You might need a little more milk, it all depends on how thick you want it. ).
  • Remove sauce from heat and add 4 1/2 ounces of cheese, a little at a time or it might turn out " STRINGY ".
  • Add seasonings to sauce and mix well.
  • Add cooked pasta to seasoned sauce and stir until pasta is well coated.
  • Pour pasta/sauce into an 11 x 7 inch pan that has been prepared with cooking spray.
  • Sprinkle with remaining cheese, and sprinkle additional paprika if desired.
  • Bake at 350 degrees for 35 minutes or until top is golden brown.

1/2 lb macaroni
1/4 cup butter
3 tablespoons flour
2 cups 1% low-fat milk
1/2 lb low-fat cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon Dijon mustard
1/2 lb sharp cheddar cheese
1 cup fresh breadcrumb
2 tablespoons butter, melted
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Cook macaroni (1/2 pound= 2 cups dry) until just al dente.
  • You can use elbows for a traditional look, but try scoobi-doo-- it works well in this recipe.
  • Drain pasta well.
  • While the mac is boiling, melt the 1/4-cup butter in a large pot.
  • Whisk in the flour.
  • Over med heat, whisk until smooth and bubbly (only about a minute).
  • Stir in milk, cream cheese, salt, pepper& mustard.
  • Keep cooking and stirring until sauce is thickened-- about three or four minutes.
  • Cut the block of cheddar into half-inch cubes.
  • Add drained macaroni and cubed cheddar& combine well.
  • Pour into a casserole sprayed with Pam.
  • In a small bowl, combine the remaining ingredients and sprinkle over top.
  • Dust with paprika if desired.
  • Bake for 15-20 minutes, or until top is golden brown and casserole is heated through.
