Hot wassail is a delicious drink that the whole family can enjoy from two to ninety-two. It smells like Christmas in a mug.

1 teaspoon of whole cloves or 1/4 teaspoon of ground cloves or allspice
4-6 cinnamon sticks
1 cup fresh cranberries
8 ounces of orange juice
1 can frozen lemonade concentrate
8 ounces cranberry juice
1 gallon of apple cider or spiced cider
lemon and orange slices for garnish

Steps:

  • In a large pot on the stove or in a slow cooker, add all of your ingredients.
  • Cook on low heat for 45 minutes.
  • Garnish with fresh orange and lemon slices.
  • Serve your hot wassail and toast!

10 whole cloves
5 cinnamon sticks
5 star anise
pinch of nutmeg
1/2 cup cranberries
1 orange (sliced)
1 apple (sliced)

Steps:

  • In a large pot over medium-low heat add the apple cider, orange juice, and pineapple juice.
  • Add in the cloves, cinnamon sticks, star anise, nutmeg, cranberries, orange, and apple slices.
  • Let simmer for an hour or all day. Serve hot.

An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

1 cup pineapple juice
1 cup white sugar

1 cinnamon stick, broken into pieces

Steps:

  • Mix apple cider, orange juice, lemon juice, pineapple juice, and sugar together in a large pot over medium-low heat.

1 (46 fluid ounce) can pineapple juice
46 fluid ounces cranberry juice cocktail
1 orange, thinly sliced
5 cinnamon sticks
1 tablespoon whole allspice berries
1 tablespoon whole cloves

Steps:

  • Pour apple cider, pineapple juice, and cranberry juice into a stockpot. Place orange slices, cinnamon sticks, allspice berries, and cloves in a muslin pouch or directly into the apple cider mixture. Bring apple cider mixture to a boil; reduce heat and simmer until flavors have blended, 15 to 20 minutes. Remove orange slices and spices before serving.

This is the most amazing tasting Wassail. It's perfect for a holiday party or a cold winter night. It's like drinking hot apple pie that warms your tummy and lifts your spirits. Although it's a big undertaking to cook, you won't be disappointed, especially when everyone is complimenting you on making something that tastes so delicious. Make sure you serve it warm. Because this takes a while to put together, I usually make it the night before and pour the mixture into bottles/containers so I can transport it easily. I guessed at the number of servings but its always been enough for the parties I've been to where there have been 25 or more people.

1 gallon unfiltered apple cider
2 cups peeled baked apples, golden delicious works good
1/3 cup water
1 cup sugar
1 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon mace
6 whole cloves
6 allspice berries
3 cinnamon sticks
2 cups cream sherry
1/2-1 cup brandy
3 eggs, separated into egg whites and yokes

Steps:

  • In one saucepan, heat: 1 gallon unfiltered apple cider and 2 cups baked (peeled apples) cut into medium small pieces
  • In another saucepan, boil for 5 minutes: water, sugar, nutmeg, ginger, mace, cloves, allspice berries and cinnamon sticks.
  • In another saucepan, boil: cream sherry and brandy.
  • In a small mixing bowl, mix until firm - stiff but not dry: 3 egg whites.
  • In a large mixing bowl - mix until creamy: 3 egg yokes - light in color.
  • Now fold egg whites into egg yokes and add spice mixture a little at a time, stirring constantly.
  • Next add booze
  • Next add cider mixture.
  • Serve warm. I've served it in a punch bowl and in a large pot on the stove. Right before serving, I usually take out the allspice berries and cloves so people don't choke on them. If I find out that the wassail has cooled down, I re-heat it.

2 quarts apple cider
1-1/2 cups orange juice
3/4 cup pineapple juice
1 tablespoon brown sugar
1/2 teaspoon lemon juice
2 cinnamon sticks (3 inches)
Dash ground cinnamon
Dash ground cloves

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.
