CRUNCHY COLESLAW RECIPE WITH RAMEN
Try this slightly untraditional coleslaw with a sweet-and-sour dressing, almonds, and Ramen noodles. It's full of flavor and crunch.

Steps:
- Mix sugar, oil, vinegar, and pepper together to make the dressing. Use a small container you can shake to mix to make it easier to transport later.
- Toast sesame seeds and almonds. (I do this in my microwave for 1-1/2 minutes on a paper plate. Stir once.) When cooled, put into a zippered plastic bag if not eating immediately.
- Put a whole brick of Ramen noodles with seasoning packet into a quart-size zippered plastic bag. Use a rolling pin to crush. Store in a bag until ready to assemble the salad.
- Place coleslaw into a salad bowl. Cover with plastic wrap. Bring salad dressing container, nuts, and crushed Ramen noodles with you to wherever salad will be eaten.
- Just before it's time to eat, add nuts, Ramen noodles, and dressing to the bowl of coleslaw. This recipe is best fresh and crunchy.

We use this recipe a lot, especially in the summer. Everyone in the family enjoys it. It's great for barbecues, served with chicken and a little bread.

- Toss all vegetables and sesame seeds to combine. In small bowl, whisk dressing ingredients. Pour dressing over cabbage mixture; toss to coat. Cover and refrigerate for 2 hours before serving; toss again before serving.

I know there are other recipes for Oriental Coleslaw here. I mentioned in a thread on "everything else" that my local grocery store makes the best one I've ever tasted, and one of the girls behind the counter gave me the recipe!

- In a large bowl, break up ramen noodles into smaller pieces.
- Add coleslaw mix, sunflower seeds, green onions, and water chestnuts.
- Stir to combine.
- To make dressing: In a small bowl whisk together vinegar, oil, sugar, soy sauce and seasoning packets until combined.
- Pour over salad, toss well to make sure dressing is evenly distributed.
- If you want the noodles to soften, refrigerate overnight.

ASIAN COLE SLAW

- For the dressing: Whisk the vegetable oil, vinegar, sesame oil, ginger, soy sauce and sugar in a medium bowl. Sprinkle with salt and pepper to taste.
- For the salad: Mix the onions, cabbage, jalapeno and green pepper in a large bowl. Toss the salad with enough of the dressing to coat. Sprinkle with salt and pepper to taste. The salad can be made 3 hours ahead, covered and chilled. When ready to serve, mix in the cilantro and garnish with the peanuts on top.
