2-1/2 quarts apple cider or juice
1/2 cup Red Hots
1/4 teaspoon ground nutmeg
2 cinnamon sticks (3 inches)
1/2 teaspoon whole cloves

Steps:

  • In a large saucepan, combine cider, Red Hots and nutmeg. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather up corners of cloth to enclose seasonings; tie securely with string. Add to Dutch oven., Bring to a boil, stirring occasionally to loosen candies. Reduce heat; simmer, covered, 10-15 minutes or until flavors are blended. Discard spice bag.

8 cups apple cider or juice
4 cups cranberry juice
2 cups orange juice
1/2 cup sugar
3 cinnamon sticks (3 inches)
1 teaspoon whole allspice

Steps:

  • Place first four ingredients in a 5- or 6-qt. slow cooker. Place spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to slow cooker., Cook, covered, on low until heated through, 3-4 hours. Discard spice bag. Serve warm.

1 gal apple cider
½ cup brown sugar

whiskey, or rum, optional

Steps:

  • Pierce orange with cloves. (If you have a tea infuser, tea bag or cheese cloth, you can use that to keep the spices under control).
  • Pierce apple with allspice.
  • Put the orange, apple, cinnamon sticks, apple cider, brown sugar and nutmeg into your slow cooker.
  • Turn on high for 2 hours, then keep warm on low until you're ready to drink.
  • Drink as is or with a shot (or two) of whiskey, rum, etc.

¼ cup real maple syrup
2 cinnamon sticks
6 whole cloves
6 whole allspice berries
1 orange peel, cut into strips
1 lemon peel, cut into strips

Steps:

  • Pour the apple cider and maple syrup into a large stainless steel saucepan.
  • Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
  • Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
