CRANBERRY ORANGE PECAN BUTTER



Cranberry Orange Pecan Butter image

Add this cranberry orange pecan compound butter to your holiday meal. It's sweet and tangy. Try with biscuits, dinner rolls, or anywhere you want a pop of flavor. It would be quite the treat on top of pancakes or waffles too. This compound butter can be made in about 10 minutes. Quick and easy!

Number Of Ingredients 7

1 stick salted butter, room temperature
3 Tbsp powdered sugar
2 Tbsp jellied cranberry sauce
2 Tbsp finely chopped dried cranberries
2 tsp orange zest
1 tsp orange juice, fresh
1/2 c finely chopped pecans

Steps:

  • 1. Finely chop the dried cranberries. Set aside.
  • 2. Zest an orange and squeeze the juice. Set aside.
  • 3. In a large bowl, stir the butter and sugar together.
  • 4. Add the cranberry sauce, dried cranberries, orange zest, and juice to the butter mixture. Mix with a spoon.
  • 5. On a piece of parchment paper, form the butter into a log shape.
  • 6. Roll up the parchment paper to help shape the log.
  • 7. Cut off the excess parchment paper and place butter in a resealable bag. Refrigerate for at least 2 hours.
  • 8. Unroll the butter log. Sprinkle the chopped pecans on the parchment.
  • 9. Roll the log in the chopped pecans.
  • 10. Press the loose pecans into any bald spots.
  • 11. Serve immediately or refrigerate until ready to serve.

2 tablespoons orange juice concentrate
1 tablespoon sugar
4 teaspoons grated orange zest
1/8 teaspoon ground cinnamon
1/4 cup finely chopped dried cranberries
1/4 cup finely chopped pecans
Assorted crackers

Steps:

  • In a small bowl, beat the cream cheese, orange juice concentrate, sugar, zest and cinnamon until blended. Fold in cranberries and pecans. Cover and refrigerate for at least 1 hour. Serve with crackers.

2 tablespoons Worcestershire sauce
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder

3 cups pecan halves
1-1/2 cups dried cranberries

Number Of Ingredients 4

1 cup sugar
1/4 cup orange juice
1 tablespoon grated orange peel
4 cups pecan halves (about 1 pound)

Steps:

  • Line cookie sheet with waxed paper. Bring first 3 ingredients to boil in heavy large saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans. Spread pecans on waxed paper. Cool completely. Separate pecans if necessary. (Can be prepared up to 1 week ahead. Store in airtight container.)
