HOLIDAY OATMEAL COOKIES WITH DRIED FRUIT AND NUTS
These have just about everything in them, oil takes the place of butter to create a crispy outside with a chewy inside and whole wheat flour for extra flavor, they will make a wonderful addition to your holiday baking tray! --- servings is only estimated, these may also be baked in baking pan then sliced as bars.

Steps:
- Set oven to 350 degrees F.
- Grease a large cookie sheet/s.
- In a large bowl combine oil with eggs, both sugars and extract; beat well using an electric mixer on medium speed.
- In a small bowl combine whole wheat flour with baking soda, salt and cinnamon (if using) add to the oil mixture and mix just until combined.
- In a bowl combine the rolled oats with coconut, cranberries, cherries, almonds and chocolate chips (if using) add to the batter and mix until combined.
- Roll into about 1-inch balls then place onto greased baking sheet.
- Flatten slightly with a fork.
- Bake about 8-10 minutes or until golden brown.
- Cool 2 minutes then remove to a rack to cool completely.

- 1. Mix shortening, sugar and eggs well; stir in sour milk.
- 2. Blend next 3 ingredients; add to sugar mixture.
- 3. Mix in pecans, cherries and dates.
- 4. Chill for 1 hour.

- 6. Drop by rounded teaspoons 2 inches apart onto greased cookie sheet.

- Heat oven to 375°F. In medium bowl, mix cookie mix, butter, flour and egg until soft dough forms. On lightly floured surface, roll dough 1/4 inch thick. Cut dough with holiday cookie cutters. Place on ungreased cookie sheet.
- Bake 7 to 9 minutes or until edges are light golden brown. Cool.
- Unroll and remove paper from Betty Crocker Fruit Roll-Ups. Cut using same holiday cookie cutters, and place on top of same-shaped cookies, or cut different shapes and place on top of round cookies. Decorate cookies with remaining ingredients as desired, using suggestions below and referring to photos.
