SPICED CRANBERRY-CHUTNEY GELATIN SALAD



Spiced Cranberry-Chutney Gelatin Salad image

I combined my mother-in-law's famous cranberry chutney with my raspberry gelatin recipe to come up with this nicely spiced side. It's wonderful served alongside turkey, chicken or beef. -Barbara Estabrook, Rhinelander, Wisconsin

1 cup sugar
1 cup water
2 cups fresh or frozen cranberries
1/2 cup golden raisins
1/4 cup red wine vinegar
1 tablespoon molasses
1-1/2 teaspoons Worcestershire sauce
1 teaspoon ground ginger
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup chopped salted roasted almonds
GELATIN:
1 package (6 ounces) raspberry gelatin
1-1/2 cups boiling water
1/2 cup cold water
12 red lettuce leaves
3/4 cup sour cream
1/4 cup chopped salted roasted almonds

Steps:

  • In a large saucepan, combine sugar and water. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 5 minutes. Stir in cranberries; cook over medium heat until the berries pop, about 15 minutes., Stir in the raisins, vinegar, molasses, Worcestershire sauce, ginger, curry, salt and nutmeg. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. Transfer to a large bowl; cool to room temperature. Stir in almonds., Meanwhile, for gelatin, in a large bowl, dissolve gelatin in boiling water. Stir in cold water. Add cranberry mixture. Transfer to an 11x7-in. dish coated with cooking spray. Cover and refrigerate for at least 4 hours or until set., Serve on lettuce leaves. Top with sour cream and almonds.

This is a festive side dish, that uses fresh or frozen cranberries. My daughter insists on having it for every holiday. It's good to make the first part the night before, but it can be done the morning of serving if needed.

12 ounces cranberries, fresh
3/4 cup sugar
20 ounces pineapple, crushed
2 1/3 cups marshmallows, mini
8 ounces Cool Whip
3/4 cup pecans, chopped

Steps:

  • Grind cranberries (I use my food processor).
  • Add sugar and crushed pineapple, chill overnight in a plastic container, with a lid.
  • Add remaining ingredients before serving.

AUNT BRENNIE'S HOLIDAY CRANBERRY SALAD



Aunt Brennie's Holiday Cranberry Salad image

This is my favorite item on the thanksgiving table. It is tangy, sweet, crunchy and all around yummy. I find myself often searching for this recipe, so have put it here for safe keeping. This is best if you make it the day before which is great to get one thing out of the way before the big cooking day.

6 ounces red Jell-O (strawberry, raspberry, cranberry)
1 small orange, un peeled (preferably organic)
2 cups apples, approx. 2 medium (diced)
1 cup walnuts, chopped (pecans also ok)
1 cup boiling water
1 cup crushed pineapple in juice (refrigerated)
1 1/2 cups water, cold
4 cups raw cranberries (about 1 bag if you find a fresh one)
1/2 cup sugar (I only add 1/3 a cup)

Steps:

  • Dissolve Jello in boiling water.
  • Add pineapple and the cold water.
  • Chill until thickened (optional, but recommended).
  • Cut orange into wedges and remove seeds. The orange peel adds a nice tang, but if you want to cut back on the tang, then you can peel some of the orange, but the peel makes it good.
  • Put orange and cranberries through food processor and pulse as you would cole slaw -- don't puree. May take several batches. I do about a cup of cranberries and a wedge of orange per batch in my VitaMix blender. Pour results into a large bowl.
  • Mix in diced apples and sugar and chopped nuts.
  • Fold in thickened jello.
  • Pour into a mold or just a bowl and chill for a few hours. (I've never used a mold and tried to turn it out myself, I just pour directly into a nice looking serving bowl.
  • This is best if you make it the day before.

ORANGE, SPICED WALNUT AND DRIED CRANBERRY SALAD



Orange, Spiced Walnut and Dried Cranberry Salad image

1 1/2 tablespoons water
3/4 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon (generous) ground ginger
1 cup walnut halves and pieces
2 teaspoons sugar
3/4 cup water
3/4 cup cranberry juice cocktail
1/2 cup dried cranberries
8 oranges, peel and white pith removed, sliced into 1/2-inch-thick rounds, chilled
Fresh mint sprigs (optional)

Steps:

  • Preheat oven to 325°F. Line baking sheet with parchment paper. Mix first 5 ingredients in large bowl to blend. Add nuts; toss to coat well. Strain nuts, reserving liquid. Transfer nuts to baking sheet. Sprinkle nuts with sugar. Bake until golden brown, about 17 minutes. Cool completely.
  • Whisk 3/4 cup water, cranberry juice and reserved liquid from nuts in medium saucepan to blend. Stir in dried cranberries. Bring to boil. Reduce heat to medium-low and simmer until cranberries soften and liquid is reduced to thin syrup, about 20 minutes. (Can be made 3 days ahead. Store nuts airtight at room temperature. Cover and chill cranberry mixture.)
  • Arrange orange slices on platter. Spoon cranberry mixture over. Sprinkle nuts over. Garnish with mint, if desired.

2 cups boiling water, divided
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons lemon juice

Steps:

  • In a small bowl, dissolve gelatin in 1 cup boiling water. In another bowl, combine cranberry sauce and remaining water; add gelatin mixture and lemon juice. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until firm, about 1 hour., In a large bowl, beat cream until stiff peaks form. In another bowl, beat cream cheese until smooth. This tangy fruit salad is perfect with turkey or ham, and has always been on our holiday table. With real whipped cream, walnuts, and pineapple, it's a treat you'll always want to make for the holidays.

1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
1 (20 ounce) can crushed pineapple, with juice
2 cups white sugar
½ pint heavy whipping cream
1 cup chopped walnuts
2 cups miniature marshmallows

Steps:

  • In a large bowl, stir together the cranberries, pineapple (with juice) and sugar. Let stand for about an hour, to let sugar dissolve, and then pour the mixture into a strainer over a bowl. Let drain, covered, in the refrigerator for at least two hours, or overnight. (Note: The drippings make a wonderful cranberry punch, when mixed with lemon-lime soda!)
  • Before serving, whip the cream until soft peaks form. (You can sweeten the whipped cream with a little sugar, if desired.) In a large bowl, mix together the cranberry mixture, walnuts and marshmallows. Fold in the whipped cream and store in refrigerator until serving.

1 orange, peeled & diced small

Steps:

  • Grind cranberries with sugar; set aside. Food processor works nicely.
  • Dissolve gelatin & salt in boiling water; add cold water, lemon juice, cinnamon & cloves & blend thoroughly. Chill until thickened.
  • Fold cranberry mixture, orange & walnuts. Spoon into a 6 cup mold or pretty bowl. Chill until set.
