Fall flavors! Traditional cranberry sauce with the addition of Granny Smith apples. The pectin in the apples helps the sauce to set and brings another layer of flavor to a classic recipe. Make it several days in advance to relieve some of the holiday stress.

1 (12 ounce) package fresh cranberries
2 large Granny Smith apples - peeled, cored, and diced
1 cup water
1 cup white sugar
½ teaspoon ground cinnamon

Steps:

  • Place cranberries, apples, water, sugar, and cinnamon in a medium saucepan. Bring to a boil. Reduce heat to low and simmer until cranberries pop and apples are soft, about 20 minutes.
  • Let cool completely before refrigerating.

5 lbs apples, peeled, cored, and coarsely chopped
1 lemon, juice & zest of
1 vanilla bean, split and scraped
1 cinnamon stick
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon kosher salt
1/2 cup sugar
1 cup brown sugar
3/4 cup apple cider or 3/4 cup apple juice
1 tablespoon vanilla extract

Steps:

  • Bring all ingredients except the vanilla extract to a boil in a 6-qt. saucepan over high heat. Reduce heat to low, cover, and cook for 10-15 minutes, or until the apples start to break down.
  • Uncover and cook for a further 1-1 1/2 hours, or until the mixture has reduced by about a third and the sauce becomes thick and amber-colored.
  • Remove from heat and stir in the vanilla extract. Serve warm or cool.

2 cups cranberries (fresh or frozen, thawed)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup granulated sugar
1/2 cup manischewitz concord grape wine
4 large granny smith apples

Steps:

  • In a medium sauce pan, combine cranberries, spices, sugar and wine. Bring to a boil, reduce heat and simmer, uncovered, for 20 minutes.
  • Meanwhile, peel and core apples and cut into 1/2" cubes, and add to the cranberry mixture after the original 20 minutes of simmering and mix well. Cover the sauce pan and continue to simmer an additional 20 minutes, stirring occasionally. If sauce begins to stick, add a small amount of water.
  • Remove from heat and cool to room temperature.
  • Enjoy!

4 cups fresh cranberries
1 ½ cups water
5 whole cloves
5 whole allspice berries
3 cinnamon sticks
2 cups white sugar

Steps:

  • Place fresh cranberries and water in a medium saucepan over medium heat.
  • Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
  • Cook until cranberries begin to burst, about 10 minutes.
  • Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

3 pounds apples, peeled, cored, and cut into 1/2-inch-thick slices (try a combination of Gala, Golden Delicious, and McIntosh)
1 cup fresh or frozen cranberries
1 cinnamon stick
1/2 cup sugar
3/4 cup water
2 teaspoons freshly squeezed lemon juice

Steps:

  • In a large saucepan, combine apples, cranberries, cinnamon stick, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
  • Remove from heat; discard cinnamon stick. Stir in lemon juice.

1 cup fresh cranberries, picked over
1/2 cup sugar
1/4 cup apple juice or water
a 3-inch cinnamon stick
a 3-inch strip of lemon zest removed with a vegetable peeler
2 tablespoons unsalted butter

Steps:

  • In a heavy saucepan cook the apples, the cranberries, the sugar, the apple juice or water, the cinnamon stick, and the zest over moderate heat, stirring, for 15 minutes, or until the apples are very soft. Discard the cinnamon stick and the zest, force the apple mixture through the medium disk of a food mill into a bowl, and stir in the butter. Serve the applesauce warm or chilled. The applesauce keeps, covered and chilled, for 1 week.

4 lbs apples (8-9 med or large)
3 cups cranberries (fresh or frozen)
1 1/2 cups water or 1 1/2 cups apple juice
3/4 cup sugar
cinnamon (to garnish)

Steps:

  • We like to run the apples through the ol' Pampered Chef apple corer, peeler, slicer--lickety split -- but you can also do it the old-fashioned way and core them by hand--in which case, quarter them into wedges.
  • Add apples, cranberries, water and sugar to a large saucepan.
  • Cover and simmer for about 20 minutes (apples will break into pieces when stirred).
  • Cool, then if you used UNPEELED apples, press through a Foley mill or sieve. If you peeled the apples, all you have to do is STIR!
  • Sprinkle with a dusting of cinnamon and serve.

1/2 cup plus 2 tablespoons water
1/2 cup plus 2 tablespoons sugar
5 medium Golden Delicious apples (about 2-1/2 pounds), peeled and chopped
1-1/4 cups fresh or frozen cranberries
1/2 teaspoon grated lemon zest
1 teaspoon minced fresh gingerroot
1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepan over medium heat, cook and stir water and sugar until sugar is dissolved. Add apples; cover and cook for 5 minutes, stirring often. Add cranberries; cover and cook until apples are tender and berries pop, about 15 minutes. , Mash until sauce reaches desired consistency. Stir in zest, ginger and cinnamon. Cook, uncovered, 5 minutes longer. Serve warm or refrigerate until serving.
