HOLIDAY BROCCOLI AND CAULIFLOWER SALAD
This salad makes a lovely presentation at your holiday table --- feel free to add in other ingredients to the salad, I also like to add in chopped apples just before serving, The dressing must be added in just before serving :)

Steps:
- In a medium glass salad bowl combine the broccoli florets, cauliflower florets with red onion slices (if using) cubed cheese, crumbled bacon and dried cranberries or raisins.
- For the dressing; (add in dressing just before serving) in a bowl whisk the mayonnaise with sugar and wine vinegar together until smooth, season with black pepper.
- Drizzle the dressing over the top of the salad; toss to combine with the vegetables.
- Sprinkle the top with sliced almonds, then place the egg slices around the bowl.

HOLIDAY BROCCOLI-CAULIFLOWER CASSEROLE
This is a great side dish that is perfect for any holiday. It goes well with any dinner - ham, turkey, prime rib, etc. I have also done this using all cauliflower, so I suppose you could do all broccoli if you prefer. It is also fine to make this ahead and reheat. You couldn't ask for a more versatile recipe!

- Preheat oven to 350 degrees. Cut broccoli and cauliflower into bite-sized pieces and set aside. Mince garlic, adding a pinch of salt.
- Combine evaporated milk with both cans of soup (and optional butter) in a medium-size bowl and mix well. Add spices and garlic.
- Add broccoli and cauliflower to a lightly-greased casserole dish and evenly pour the milk mixture on top. Sprinkle the Parmesan cheese over top, cover and bake for about 30-40 minutes, or until vegetables are to preferred texture.

- In a small skillet, cook walnuts in 2 tablespoons oil over medium heat for 1 minute. Stir in the sugar, honey, allspice, cinnamon and cloves. Cook 3-4 minutes longer or until sugar is melted and nuts are evenly coated. Cool on waxed paper., In a large bowl, combine the cabbage, caulifloweretes, watercress, radicchio, cranberries and red onion. In a small bowl, whisk the pomegranate juice, vinegar, mayonnaise, garlic, salt, red pepper flakes and remaining oil. Stir in mint if desired. Pour over cabbage mixture; toss to coat., Place on a serving platter. Garnish with walnuts.

This recipe came from my Grandma. She always had to make it for the holidays. She is gone but her recipe lives on!

Steps:
- Break cauliflower into medium size flowerlets.
- Cook in boiling water until crisp.(about 10 minutes). Drain well, set aside.
- In a 2 quart saucepan, cook mushrooms and green pepper in margerine until tender. Mix in the flour.
- Gradually stir in the milk. Cook stirring constantly, over medium heat until mixture is thick.
- Stir in salt, cheese and pimento.
- Place half of the cauliflower in a buttered 2 quart casserole.
- Cover with half of the sauce.
- Add remaining cauliflower, then top with rest of sauce.
- Bake at 325* for 15 minutes.
- Makes 8 servings.
