112 ounces ketchup
16 ounces Karo syrup
12 ounces molasses
2 lbs light brown sugar
2 cups honey, granuals
1/2 cup coarse black pepper
1/3 cup kosher salt
1/3 cup crushed red pepper flakes
1 1/3 tablespoons nutmeg
1 (12 ounce) bottle lager beer
1 tablespoon baking soda

Steps:

  • combine ingredients and simmer for 3.5 hrs until semi thick and still runny.
  • let cool and then can in pint jars. follow canning directions.

The only barbecue sauce I use, for everything from shredded pork loin or ribs to thin sliced ham sandwiches or shredded beef. Often served with chilled potato salad & fresh homemade dinner rolls to mop up the sauce (if not using the meat in a sandwich already).

1 cup apple cider vinegar
1 cup packed brown sugar
1 cup ketchup
1/2 cup chili sauce
1/2 cup Worcestershire sauce
1/2 small onion, finely chopped
2 tablespoons lemon juice
1 teaspoon dry mustard
2 garlic cloves, minced
1 dash cayenne pepper (optional)

Steps:

  • In large saucepan, combine all ingredients and bring to a boil over medium heat.
  • Reduce heat and simmer, uncovered, for about one hour. Stir occasionally.
  • *For ribs: Boil ribs with some salt & pepper and a quartered onion until tender. Then drain and place on broiler pan. Baste with sauce, broil 5 minutes, turn ribs over and baste other side. Broil 5 minutes longer. Serve.
  • *For shredded pork sandwiches: Put sauce and pork loin in crock pot on low for 5-6 hours or until pork begins to shred itself when poked with a fork.
  • *For barbecue ham sandwiches: Put sauce and thin, deli sliced ham torn into 2 inch pieces into crock pot and heat on low for 2 hours or until hot.

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

¼ cup honey
¼ cup Worcestershire sauce
2 tablespoons rum
2 tablespoons prepared yellow mustard

1 tablespoon ground red chile pepper
2 tablespoons freshly ground black pepper
2 tablespoons garlic powder
1 teaspoon ground allspice
4 cups ketchup

Steps:

  • Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sauce is smooth and brown sugar is dissolved, about 5 minutes.
  • Stir ketchup into sauce and bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce is dark and thickened, about 30 minutes.

2 1/2 cups cider vinegar
1/2 cup Worcestershire sauce
1/2 cup ground mustard
1/2 cup smoked paprika
1/4 cup garlic powder
1/4 cup kosher salt
1/4 cup ground black pepper
2 ounces liquid smoke
12 ounces red wine vinegar
1 tablespoon turmeric
1 tablespoon cumin

Steps:

  • In a large stock pot, add all wet ingredients and bring to a simmer.
  • Slowly add the brown sugar; stir vigorously to prevent scorching.
  • Slowly stir in the remaining dry ingredients, a little at a time (to prevent clumping), once the sugar has dissolved.

An easy & simple recipe to tantalise the palate! My mum taught me this one. It's very similar to the one's we've hear before, but it's got some twists. The good thing about this recipe is that it is so versatile: it can be chicken thighs or drumsticks or even pork chops or chicken wings!

2 chicken thighs
30 ml teriyaki sauce (2 tablespoons)
30 ml soy sauce (2 tablespoons)
45 ml ketchup (3 tablespoons)
1 tablespoon ginger (ground ginger is OK too)
3 tablespoons caster sugar (for a helathier choice use sugar substitute)

Steps:

  • Mix all the ingredients in a bowl and let the chicken marinate for at least 20min.
  • Pre-heat the grill for 2 minutes.
  • Grill the chicken thighs for 12 minutes on each side. Do not turn more than once but make sure you rotate the grill once, so that the chicken browns evenly.

1 teaspoon dried oregano

1 dash paprika

Steps:

  • Combine all ingredients in a medium saucepan over high heat and whisk until smooth.
  • Bring mixture to a boil, then reduce heat and simmer for 45 to 60 minutes or until mixture is thick.
  • Cool, then store in a covered container in the refrigerator overnight so that flavour can develop.
