SWEET 'N' CORNY HOECAKES

Sweet 'n' Corny Hoecakes image

Provided by Sunny Anderson

Time 35m

Yield 14 hoecakes

Number Of Ingredients 10

1 cup flour
1 cup cornmeal (recommended: Indian Head)
1/4 cup sugar
1 1/2 teaspoons baking powder
Kosher salt
3/4 cup frozen yellow corn, thawed
1 egg, beaten
1 1/2 cups milk, plus extra to thin batter
2 teaspoons vegetable oil, plus extra for frying
Maple syrup, for serving

Steps:

  • In a large bowl combine flour, cornmeal, sugar, baking powder, and 1 teaspoon salt.
  • In a medium bowl, whisk the thawed corn, egg, milk, and vegetable oil. Pour into the bowl with the dry ingredients and combine. Allow to rest for 5 minutes.
  • Preheat the oven to 200 degrees F.
  • In a cast iron pan on medium-high heat, add enough vegetable oil to fill the pan about 1/2-inch deep. When the oil begins to swirl, add the batter in batches to the pan using a small ice cream scoop or 1/4 cup measure to make each hoecake. Gently spread into a circle, if needed. Flip the hoecakes when the air pockets begin to pop on the surface of the batter and a peek underneath the cake reveals a golden rim and surface, about 2 minutes.
  • Once the second side is golden brown, transfer the hoecakes to a baking sheet in a warm oven and continue making the rest. Serve with maple syrup.

MISS BROWN'S HOECAKES

Miss Brown's Hoecakes image

Hoecakes (or as my grandmother calls them, fried bread) are the perfect combination of my favorites: a pancake and cornbread. Served with maple syrup or a simple drizzle of honey, this dish can be served at breakfast or as a side item during dinner.

Provided by Food Network

Categories     side-dish

Time 25m

Yield 5 servings (10 small hoecakes)

Number Of Ingredients 10

2 large eggs
1 cup buttermilk, plus more if needed
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/4 cup vegetable oil, plus more for the skillet
Unsalted butter, for the skillet, plus more for serving, optional
Syrup, for serving, optional

Steps:

  • Preheat the oven to 200 degrees F. Line a baking sheet with a wire rack.
  • Whisk the eggs and buttermilk in a medium bowl until beaten and combined. Whisk together the cornmeal, flour, sugar, baking powder and salt in a large bowl.
  • Combine the wet ingredients with the dry ingredients. Add a splash of water or an extra splash of buttermilk if it feels too thick. Add 1/4 cup of the vegetable oil and stir until just combined, being careful not to overmix. This is a thick batter.
  • Melt equal parts (about 2 tablespoons each) butter and vegetable oil in a large cast-iron skillet or griddle over medium heat. Working in batches, use an ice cream scoop to add small scoops (about 3 tablespoons each) of the batter to the skillet. Cook the hoecakes until bubbles start to appear in the face-up batter, 2 to 3 minutes. Flip and cook for another 1 to 2 minutes.
  • Remove the hoecakes to the wire rack and keep in the oven until they are all finished. Wipe out the skillet in between batches and add more butter and oil before repeating with the remaining batter.
  • Serve hot and fresh with butter and maple syrup if desired.

CORNMEAL HOECAKES

2/3 cup coarse-grind cornmeal
2 tablespoons sugar
1/2 teaspoon kosher salt
1/4 teaspoon baking powder
1 large egg
1 large egg white
1 1/4 cups milk
1/4 cup unsalted butter, melted; plus 2 teaspoons room temperature
Sour cream and sliced scallions (for serving)

CORNMEAL HOECAKES

Cornmeal Hoecakes image

These cakes are named as such because the batter was smeared on the blade of a clean, buttered hoe and then held over the fire until done.

Provided by ratherbeswimmin

Categories     Breakfast

Time 50m

Yield 4 serving(s)

Number Of Ingredients 7

1 1/2 cups stone-ground white cornmeal (white if you are from the south, yellow if from the north) or 1 1/2 cups stone-ground yellow cornmeal (white if you are from the south, yellow if from the north)
1 teaspoon salt
1 cup boiling water
2 tablespoons milk
bacon drippings (or sausage drippings, vegetable oil, or a combination)
unsalted butter, softened
cane syrup or real maple syrup, warmed

Steps:

  • Preheat the oven to 325°.
  • Add the cornmeal to a heatproof medium bowl, preferably one with a spout for pouring; stir in the salt.
  • Place the bowl in the oven for 5-8 minutes to warm the meal through and toast it lightly.
  • Remove it from the oven as soon as it begins to deepen in color.
  • Pour the boiling water into the warm cornmeal, about ½ cup at a time, being cautious of the hot bowl.
  • Stir vigorously, eliminating any lumps; then mix in the milk.
  • The batter will resemble a thick gruel; warm a griddle or large heavy skillet over medium heat.
  • Add just enough drippings to coat the surface with a thin film.
  • Spoon the batter by tablespoonfuls onto the griddle, leaving several inches between the dollops.
  • With the back of a spatula, squash the batter down into cakes about 3 inches in diameter (the batter should bubble merrily; if it splatters menacingly, the griddle is too hot; lower the heat before continuing).
  • Make as many cakes as you can fit without crowding.
  • Cook the cakes until the batter appears quite firm (3-4 minutes); these take a little longer than traditional wheat-flour pancakes).
  • Turn carefully and cook cakes on the other side until medium brown and crispy (about 3 minutes).
  • Repeat with the remaining batter, adding a bit more water to the batter if it thickens and more fat to the griddle if necessary.
  • The cakes are best right from the griddle but you can keep them warm in a low oven on baking sheets while you finish the entire batch; don't stack the cakes until serving time.
  • Serve the hoecakes stacked on warm plates, topped with plenty of butter; pass the syrup separately to drizzle lightly over the cakes, if desired.

CRAB HOECAKES WITH BLUEBERRY-CORN SALSA

Crab Hoecakes with Blueberry-Corn Salsa image

Hoecakes, or griddled cornbreads, are a staple in chef Howard's home and serve as the wholesome canvas for zesty crab salad and blueberry-corn salsa. The extra salsa is delicious as a chip dip or condiment for grilled meats.

Provided by Vivian Howard

Categories     appetizer

Time 1h

Yield 6 servings

Number Of Ingredients 27

4 ears fresh corn, husked, about 2 cups
2 cups fresh blueberries, may substitute frozen blueberries; defrost completely before use
1/2 medium red onion
3 tablespoons lemon juice
1 medium tomato
1 bunch cilantro
4 sprigs fresh mint or basil, about 2 tablespoons chopped
kosher salt
2 tablespoons extra-virgin olive oil
2 tablespoons minced chives
1/3 cup mayonnaise
2 teaspoons Dijon mustard
1/2 teaspoon hot sauce
2 teaspoons ground coriander
Zest and juice from 1 lemon, about 2 tablespoons juice
2 tablespoons extra-virgin olive oil
1 clove garlic
kosher salt
1 pound fresh or pasteurized lump crabmeat
1/2 yellow onion
1/2 cup buttermilk
1 cup yellow cornmeal
1/2 tablespoon kosher salt
1/2 tablespoon granulated sugar
1/4 cup Water, plus more as needed
1 tablespoon all-purpose flour (optional), plus more as needed
1/4 cup vegetable oil, divided, plus more as needed

Steps:

  • Corn: Invert a small bowl into a large bowl. Place the larger round end of corn upright on the inverted bowl. Run a knife down the cob cutting the corn kernels so they fall into the large bowl (this method will keep the corn contained in the bowl while easily cutting away every kernel). Run the knife down the cut cob to release the corn milk into the bowl. Repeat with remaining corn, then remove the small bowl.
  • Salsa: To the corn add the blueberries. Finely dice the onion and add to the bowl along with lemon juice. Core the tomato then using a serrated knife dice about the same size as the corn and blueberries. Add to the bowl with as much juice as possible. Finely chop cilantro stems (save leaves for another recipe) and add to the salsa. Removes mint leaves (discard stems), finely slice and add to the salsa along with two big pinches of salt. Stir and let rest 15 minutes and up to 1 day. Makes about 4 cups.
  • Crab: In a large bowl add chives, mayonnaise, mustard, hot sauce, coriander, lemon zest and juice. Trim and peel garlic then using a microplane grate the garlic into the crab. Add a pinch of salt and olive oil and whisk to combine. Pick through the crab for shells then gently fold into the dressing. Let rest in the refrigerator 15 minutes.
  • Hoecakes: Cut the onion into several pieces and add to the blender along with buttermilk. Puree until smooth. Set aside. In a bowl stir together cornmeal, salt, and sugar. Stir in buttermilk onion mixture. Add enough water so it's the consistency of slightly loose pancake batter, starting with ¼ cup and adding a tablespoon at a time if necessary (Chef Howard says all cornmeal is different so adjust with water to get the proper consistency). If the consistency is correct but water pooling in the batter, add flour to further bind the batter. Stir and set aside.
  • Preheat a skillet to medium heat, 1 minute. Add vegetable oil and swirl the pan so the oil evenly covers the bottom. Spoon 2 tablespoons of batter onto the edge of the pan to form 1 hoecake. If the batter sizzles a little, the pan is ready. Continue to drop the batter making 2 more hoecakes making sure they're evenly spread out and not touching. Lower the heat slightly and cook for about 3 minutes. When the edges are brown and the tops dry, flip and cook an additional 3 minutes adding more oil if necessary. When golden brown with a lacy edge remove to a paper towel-lined plate to drain. Repeat with remaining oil and batter.
  • Assembly: Stir olive oil into salsa. Set aside. Place hoecakes on a serving platter. Place several tablespoons of crab on the bottom of each hoecake. Top with several tablespoons salsa. Serve.

Chicken:
1 1/2 pounds skinless boneless chicken thighs
Olive oil
Brown Sugar and Coffee Barbecue Sauce
Hoecakes:
1 cup yellow cornmeal
1/2 cup all purpose flour
2 teaspoons sugar
1 teaspoon baking powder
3/4 teaspoon salt
1 cup water
2 tablespoons (1/4 stick) butter, melted, plus additional for griddle
3/4 cup coarsely grated sharp cheddar cheese
Vinegar Slaw
Special Equipment
2 cups wood chips (such as hickory, apple, or cherry), soaked in 2 cups water for 1 hour, then drained; 13x9x1-inch disposable aluminum foil baking pan

Steps:

  • For chicken:

Place foil pan with wood chips directly atop hot coals (for charcoal barbecue) or over flames (for gas barbecue). Return grill rack to barbecue. Brush chicken with oil; sprinkle with salt and pepper. When wood chips begin to smoke, place chicken on grill rack above pan with wood chips. Cover grill and smoke chicken until cooked through, turning occasionally, about 18 minutes. Transfer to large bowl and cool slightly. Shred chicken into bite-size strips; place in same bowl. Mix 2 1/2 cups barbecue sauce into chicken. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewarm chicken in barbecue sauce over medium-low heat before using, adding more barbecue sauce to moisten mixture, if needed.

Turn cakes over and cook until bottoms are golden brown, 1 to 2 minutes longer. Place hoecakes on baking sheet and transfer to oven to keep warm while making remaining cakes. Place 2 hoecakes on each of 6 plates; sprinkle 1 tablespoon cheddar cheese over each cake. Top each with warm chicken in barbecue sauce. Spoon Vinegar Slaw atop chicken and serve.

FRIED CORNBREAD - SOUTHERN CORNMEAL HOECAKES

Fried Cornbread - Southern Cornmeal Hoecakes image

A classic southern recipe, cornmeal hoecakes are little pan fried cornmeal medallions that are at home as breakfast, as much as they are as a side dish with a mess o' greens, and just about anything else!

Provided by @MakeItYours

Number Of Ingredients 10

1 cup self rising flour
1 cup cornmeal
2 teaspoons of baking powder
1/2 teaspoon of salt
1 tablespoon of sugar, optional
2 eggs
3/4 cup buttermilk
1/3 cup water
1/4 cup of canola oil
1 tablespoon of canola, for frying, or canola combined with a bit of butter

Steps:

  • In a medium bowl, whisk together the flour, cornmeal, baking powder, salt and sugar. Measure out the buttermilk in a liquid measuring cup, and add to that the water and oil; blend well. Add eggs and mix well; combine with dry ingredients. Heat oil and butter in a cast iron skillet over medium to medium high and drop batter by about 1/8 cup measures into the hot skillet to form small medallions.
  • Fry until brown and crisp, turn and brown the other side. Remove and let drain on paper towels. Serve immediately with warm syrup for breakfast or as a snack, or dip 'em in a mess o' greens to sop up that pot likker (juice from the greens)!
  • Variation: When corn is at peak and in-season, add about 1 cup of corn cut and scraped off the cob. You'll need about 1 large ear of corn. Can also make this into a pan hoecake. Add only enough buttermilk to make a stiff batter. You may not need the additional water. Pour into a screaming hot, well greased 8-inch cast iron skillet over medium high heat. Reduce heat and let brown underneath about 10 - 15 minutes. Run a metal egg turner underneath and turn to brown the other side. Can also bake in a well preheated 425 degree F oven for about 15 to 20 minutes (no turning needed).
  • Tip: If you spray the measuring cup with a bit of non-stick spray before scooping, the batter will slip right out. If you don't happen to have that 1/8 cup measure, just do about 2 tablespoons of batter in one pile and push it around to form a medallion.

HOECAKES WITH FRUIT

Hoecakes With Fruit image

Categories     breakfast, easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 5

1 1/2 cups cornmeal (fine or medium grind)
1 teaspoon salt
1 1/2 cups boiling water, more as needed
3 tablespoons olive oil
1 cup chopped fresh or frozen fruit (berries, apples, pears, bananas, mango or pineapple)

Steps:

  • Heat oven to 200 degrees. Combine cornmeal and salt in a medium bowl. Gradually pour in boiling water, whisking constantly. Let mixture sit until cornmeal absorbs water, 5 to 10 minutes. Stir in half the oil and a little more boiling water, a little at a time, until batter is pourable. Fold in fruit.
  • Put a large skillet or griddle, preferably cast-iron or nonstick, over medium heat. When a few drops of water dance on the surface, add a thin film of remaining oil. Working in batches, spoon in batter, making any size cakes you like; they will be thinner than pancakes. Cook until bubbles appear and burst on the tops, and the undersides are golden brown, 3 to 5 minutes; turn and cook on other side until golden, another 2 or 3 minutes. Transfer to warm oven and continue with next batch, adding more oil to skillet if necessary. Serve warm with syrup, jam or compote.

1 egg
1 cup buttermilk
2 Tbs. unsalted butter, melted

Categories     Other Breakfast

Number Of Ingredients 8

1 cup(s) self-rising flour
1 cup(s) self-rising cornmeal, or from a mix (I use Aunt Jemima or White Lily)
2 - eggs
1 tablespoon(s) sugar
3/4 cup(s) buttermilk
2/3 cup(s) water
1/4 cup(s) vegetable oil or bacon grease
- oil for frying

Steps:

  • Mix well all ingredients, except for the frying oil.
  • Preheat the frying oil in a medium or large skillet over medium heat. I start with about 2 TBS and add more if necessary. I use a cast iron griddle and get it very hot to make a nice crust on the outside of the cakes.
  • Drop the batter, by full tablespoons, into the hot skillet. Use about 2 tablespoons of batter per hoecake.
  • Fry each hoecake until brown and crisp; turn each hoecake with a spatula, and then brown the other side.
  • Keep warm in 200 degree oven with paper towels between cakes. Leftover batter will keep in refrigerator for up to 2 days.
