This is a great appetizer my sister-in-law gave to me, make sure to let it sit overnight, it really gets better as it sits

1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (15 ounce) can black-eyed peas
1 (15 ounce) can white corn
1 green pepper
1 red pepper
1 medium onion
1 cup white sugar
3/4 cup cider vinegar
1/2 cup vegetable oil
2 tablespoons water
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Rinse and drain all beans and corn, finely dice peppers and onion,mix all together in bowl.
  • to make the sauce heat, sugar ,vinegar, oil,water, salt & pepper, bring to a boil,remove from heat and allow to cool. Pour cooled sauce over bean mixture and allow to sit at least overnight. Serve with tortilla chips.

1 can (14 oz.) Ro*Tel (tomatoes and peppers), undrained
8 oz Kraft Zesty Italian Dressing

Steps:

  • Mix ingredients.
  • Refrigerate at least 8 hours, or overnight.
