Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

- Preheat oven to 350°F. Mix Gravy Mix, ground beef, minced onion and pepper in large bowl. Shape into a loaf, 2 inches high, in shallow baking pan. Stir chives into prepared mashed potatoes. Spread over meat loaf. Bake 55 minutes or until cooked through. Sprinkle with cheese. Bake 2 minutes longer or until cheese melts.
BAKED ALASKA MEATLOAF

Steps:
- Preheat oven to 325 degrees.
- In a large bowl, combine meat, cheese, crumbs, mushrooms, onion, ketchup, egg, salt and pepper; blend well.
- Press mixture into a greased 9x5x3 inch loaf pan.
- Bake 50-60 minutes.
- Remove from oven; let'set' in pan about 5 minutes.
- Drain off fat.
- Invert meat loaf onto an oven-proof platter or pan.
- Spread mashed potatoes over top and sides of meat.
- Set oven temperature to broil.
- Place under broiler until delicately brown.
BAKED ALASKA MEATLOAF
For those of you who have ever had a Baked Alaska dessert, you know the joy of cutting through the meringue to find ice cream. WELL, no ice cream here...but still the surprise of finding meat under the potatoes and cheese. Not sure where I got this recipe, but we eat it quite a bit.

GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
- Remove from the oven and spread ketchup over top. Serve with additional ketchup.

REDNECK MEATLOAF
I love a good meatloaf. What Redneck doesn't? The key to a good meatloaf, though is to get the right seasonings, the quality of the meat, and the right binding. Some put vegetables like carrots or other stuff in their meatloaf to trick their kids into eating healthier. A Redneck kid can sniff a veggie out from forty paces and will refuse to eat it. This does not apply to the mixed peas and mashed potatoes thing. This is a favorite recipe of mine. Haven't got a clue where it came from, nor does it matter. It satisfies this Redneck's palate. Give it a try.

- Slip your hands into plastic sandwich bags. This will make clean-up sooo much easier!
- In a large bowl, combine the meat, crumbled and mushed up well, the chopped onion, green pepper, saltine crumbs, 1/3 cup steak sauce, eggs, pepper, salt, and half the can of tomato sauce.
- Mush this all together (this is where I take out my aggressions). Place in a loaf pan lined with the new release foil. This stuff will save you more time on clean-up. While meatloaf bakes, stir together remaining tomato sauce and steak sauce.
- Another tip: If you would rather, pat these out into mini-loaves. If you use a 9x13 pan, you could probably get 4-5 loaves, depending on how big you make them. Kids love their own meatloaf on their plate.
- Bake in a 350 degree oven for 45-50 minutes (if making one loaf, less is mini-loaves). Pour off the grease. Coat top with sauce. Bake 10 more minutes.
- Let stand a few minutes to cool down.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
