1 russet potato (or Idaho if desired)
1 -2 tablespoon butter, melted (or more if needed)
fresh dill (or other fresh herbs)

Steps:

  • Preheat oven to 350°F.
  • Peel potato and slice it paper-thin with a mandolin.
  • Line a baking sheet with parchment paper and spray with cooking spray.
  • Place the potato slices flat on the sheet. Brush the potatoes with melted butter, then place fresh dill spring on each slice.
  • Place another potato slice on top of each herb-potato slice (Try to use a slice of similar size/shape - you can use kitchen scissors to trim it if necessary).
  • Spray the potatoes with cooking spray and cover with another sheet of parchment paper.
  • Place a baking sheet on top of the parchment paper.
  • Bake at 350 for 20 minutes.
  • Eat as a snack or garnish your favorite soup with these chips.

nonstick olive oil cooking spray
2 medium unpeeled red skinned potatoes
1 Tbsp olive oil
2 Tbsp minced fresh dill, thyme or rosemary ( your favorite preference)
1 1/4 tsp garlic salt
1/8 tsp black pepper
1 3/4 c ranch dressing ( or your favorite dip)

Steps:

  • 1. Preheat oven to 450 degrees. Spray large nonstick baking sheets with nonstick cooking spray; set aside.
  • 2. Cut Potatoes Crosswise into thin slices, about 1/16 inch thick. Pat dry with paper towels. Arrange potato slices in single layer on prepared baking sheets; coat potatoes with nonstick cooking spray.
  • 3. Bake 10 Minutes; turn slices over. Brush with oil. Combine dill, garlic salt and pepper in small bowl; sprinkle evenly onto potato slices. Continue baking 5 to 10 Minutes or until potatoes are golden brown. Cool on baking sheets. Serve warm with Ranch Dressing or you favorite choice of dip. Makes 60 Chips.

KETTLE CHIPS WITH PARMESAN AND HERBS



Kettle Chips with Parmesan and Herbs image

6 large Yukon gold potatoes
Canola oil and olive oil, 75/25 ratio for frying
6 whole cloves garlic
4 sprigs fresh rosemary
1/2 bunch sage
1/2 bunch fresh thyme
Kosher salt and freshly ground black pepper
2 tablespoons freshly grated Parmigiano-Reggiano

Steps:

  • Wash and clean the potatoes in cold running water. Using a mandoline, or vegetable peeler, finely slice the potatoes into chips. Drop the chips into a bowl of ice water as you work to prevent them from going brown. This will also remove any excess starch.
  • Set a large pot of 75/25 canola and olive oil over medium heat and add the garlic (paper and all) and whole stems of fresh rosemary, sage and thyme. Bring oil up to 375 degrees F. As it heats up the oil will get infused with the garlic and herbs. Once the herbs crackle and get crispy they will go clear and you know they are done. Using a strainer drain the herbs and garlic and set aside on paper towels.
  • Fry the potatoes in batches until golden and crispy. Drain the chips, dry well on paper towels and season with salt and freshly ground black pepper. Garnish with crispy fried herbs, garlic and shower with Parmesan.

HERBED POTATO CRISPS

A tasty potato dish for those occasions when you just don't have much time and you are looking for a shortcut. The potatoes are not peeled, there is no onion or garlic to peel and chop, mince or crush and all the herbs are dried. Preparation involves little more than pre-heating the oven, getting your dried herbs out of the cupboard and cutting the potatoes into thin slices. Vary the herbs according to your preferences. This dish is best made just before serving. I was inspired to develop this recipe, the particular combination of herbs, from memories of a similar dish I ate many years ago in a restaurant in Hampstead Heath, in England, so it is, I suppose an English-Australian recipe. It was served with Onion, Apple and Sage Pie. In view of Bekah49036's comment in her review that her potatoes were too salty, do add salt to taste. People's tastes differ SO much! I've adjusted the two salts in the ingredients to now read "to taste". Thanks Bekah49036! :)

3 large potatoes
2 tablespoons oil
1/2 teaspoon fresh ground pepper
1/2 teaspoon oregano
1/2 teaspoon thyme

1/2 teaspoon rosemary
celery salt, to taste
garlic salt, to taste

Steps:

  • Pre-heat the oven to a high temperature.
  • Cut the unpeeled potatoes into 1/4 inch slices.
  • Place the potato slices on well-greased oven trays.
  • Brush the potato slices with oil and a sprinkling of the pepper and herbs. (Alternatively you can combine the oil, the pepper and the herbs in a bowl and toss the potato slices in the oil/herb mixture until they are well-coated - but this would take longer.).
  • Bake the potato slices for about 20 minutes or until they are well-browned and crisp.
  • Sprinkle with combined salts and serve.

1/4 cup olive oil
3 large russet (baking) potatoes (about 1 1/2 pounds total), scrubbed
1 tablespoon dried dill
9 ounces caviar such as salmon roe
8 ounces crème fraîche or sour cream

Steps:

  • Preheat oven to 375° F. and brush 3 large baking sheets generously with some oil.
  • With a mandoline or other manual slicer cut 1 potato crosswise into 1/8-inch-thick slices. Immediately arrange slices in one layer on 1 baking sheet and brush with some remaining oil. Sprinkle potatoes with dill and salt and pepper to taste.
  • Bake slices in middle of oven until golden, 15 to 20 minutes, and with a metal spatula immediately transfer to a rack to cool completely. Repeat procedure with remaining potatoes and baking sheets in same manner. Potato chips may be made 3 days ahead and kept in an airtight container at room temperature.
  • Top potato chips with 1 teaspoon each of caviar and crème fraîche or sour cream, side by side.
