HERBED CHEESE AU GRATIN POTATOES
This over-the-top decadent casserole is super easy to make.

Steps:
- Heat oven to 375°F. Spray 1 1/2-quart glass baking dish with cooking spray.
- Make potatoes as directed on box for stove-top directions, reserving butter for topping. Stir in cheese until combined; pour mixture into baking dish.
- In 10-inch skillet, melt butter over medium-low heat. Toast bread crumbs in butter about 5 minutes or until light golden brown. Sprinkle over potatoes.
- Bake 10 to 12 minutes or until sauce is bubbling. Sprinkle with chives. Let stand 5 minutes before serving (sauce will thicken as it stands).

- In a large skillet over medium heat, cook potatoes in butter and oil for 6-8 minutes or until browned. Add the remaining ingredients; cook and stir for 2-3 minutes or until well coated.

HERBED POTATO CASSEROLE
Steps:
- Peel potatoes and cut into medium pieces and bring to a boil. Cook until fork tender, drain and return potatoes to the hot pot. Then cool slightly and mash potatoes, add the butter and sour cream. Then add the cream cheese and continue to mash until smooth. Add the green onions, parsley and salt and pepper. Place the mixture in a well greased 9x13 inch casserole dish. Top with the breadcrumbs and sprinkle with paprika. This casserole can be made 2 days ahead and refrigerated. When ready to bake, preheat the oven to 375 degrees and bake for 30 minutes if not refrigerated. Otherwise bake for 45-50 minutes if made 2 days ahead. Serves 12 people.

- Preheat an oven to 450 degrees F (230 degrees C). Lightly oil a large baking dish.
- Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender.
