1 boneless leg of lamb
16 oz. goat cheese
2 Tbsp. chopped garlic
1/4 cup fresh rosemary
1/4 cup fresh parsley
1 cup Ocean Spray® Craisins®
3 Tbsp. olive oil
2 tsp. salt
2 tsp. pepper

Steps:

  • Preheat oven to 450°F. Remove netting from lamb and place on cutting board. Open the meat up and season with salt and pepper. In a mixing bowl, combine the goat cheese, garlic, parsley, rosemary and Craisins®. Place the goat cheese mixture in the middle of the lamb opening and fold side layer on top of lamb. Cut 12 pieces of twine and tie lamb so goat cheese mixture is intact. Season the outer layer of lamb with salt and pepper. Cook lamb at 450°F for 20 minutes. Turn oven down to 400°F and cook for another 55 minutes. Take out of the oven and let rest for 15 minutes before slicing.

1 whole leg of lamb, semiboneless (6 to 8 pounds)
4 garlic cloves, thinly sliced
1 tablespoon fresh rosemary leaf
2 tablespoons extra-virgin olive oil
salt and pepper
6 slices hearty white bread
5 garlic cloves, minced
1/4 cup extra-virgin olive oil
1/2 cup fresh parsley leaves, chopped
1 teaspoon fresh rosemary, minced
2 tablespoons Dijon mustard

Steps:

  • 1. For the lamb: Adjust oven rack to lower-middle position and heat oven to 450 degrees. Using paring knife, cut 1-inch-deep slits all over lamb and poke garlic slivers and rosemary leaves inside slits. Rub lamb with oil and season with salt and pepper. Place leg meaty side down on wire rack set inside rimmed baking sheet. Roast lamb for 15 minutes, flip, and roast 15 minutes longer.
  • 2. For the crust: Meanwhile, pulse bread, garlic, oil, and parsley in food processor until coarsely ground. Reserve 2 cups crumb mixture for Lemon Asparagus Casserole. Stir rosemary into remaining crumbs.
  • 3. Lower oven temperature to 325 degrees. Remove lamb from oven and brush meaty side with mustard. Press bread crumb mixture into mustard and continue roasting until temperature registers 130 to 135 degrees for medium, 30 to 45 minutes. Transfer lamb to cutting board and tent loosely with foil. Let rest 15 to 20 minutes. Slice and serve.
  • Make Ahead: Make slits in lamb, fill with garlic slivers and rosemary, wrap tightly in plastic, and refrigerate for up to 2 days. The garlic-herb crust may be prepared as directed in step 2 and refrigerated for up to 1 day.

Salt and pepper
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh rosemary leaves
5 tablespoons extra-virgin olive oil
2 tablespoons Italian bread crumbs
1/3 cup white wine
1/3 cup water or chicken broth
Special Equipment: kitchen string, meat thermometer

Steps:

  • Preheat the oven to 450 degrees F.
  • Season the meat with salt and pepper. In a small bowl, mix the herbs with the olive oil and bread crumbs. Rub both sides of the lamb with the herb mixture. Using the kitchen string, tie up the lamb leg at 2-inch intervals. Place in roasting pan and bake for 20 minutes. Lower the oven temperature to 375 degrees F. 1 whole leg of lamb, deboned
6 garlic cloves, peeled and smashed
3 sprigs rosemary
1/2 bunch thyme
2 tablespoons cracked black pepper
Extra-virgin olive oil
1 tablespoon chopped garlic
1 tablespoon chopped rosemary
1 tablespoon chopped thyme
Kosher salt and pepper
Tapenade, recipe follows
2 cups water
1 cup pitted Nicoise olive or pitted Kalamatas
2 small cloves garlic
2 teaspoon lemon juice
1 shallot, peeled and chopped
2 tablespoons capers
1/2 teaspoon minced lemon peel
3 anchovy fillets, optional
Kosher salt and black pepper
1/4 cup extra-virgin olive oil
2 tablespoons chopped Italian parsley

Steps:

  • De-bone and trim the leg well or have your butcher do it. Smash the garlic cloves and mix with the rosemary, thyme sprigs, and cracked pepper. Add 1/2 cup of olive oil and rub all over the meat. Marinate, covered, in the refrigerator, for 1 to 2 days. Remove the herb sprigs and garlic cloves from the meat.
  • Preheat the oven to 400 degrees F. Mix the chopped garlic, rosemary, and thyme with enough olive oil to dampen into an almost paste-like consistency. Add salt and pepper, to taste.
  • Season the lamb well with salt and pepper. Spread the interior liberally with tapenade. Roll up and tie with string. Heat a large saute pan over medium-high heat. Add 2 tablespoons of olive oil and place the lamb in the pan, fat-side down. Sear until golden and turn over so that all sides are seared. Place fat side up in the pan and use a large fork to hold the lamb while you drain off any excess fat.
  • Pat the chopped herbed mixture all over the outside of the lamb. Add 2 cups of water to the pan and roast for 1 1/2 hours until a meat thermometer reads 125 degrees F. Let the meat rest for 15 minutes before slicing. Slice thinly and serve with roasted potatoes. Serve extra tapenade on the side or pan juices.
  • Place all the ingredients except the olive oil and the parsley in a food processor. Chop coarsely by pulsing the machine. Drizzle in the olive oil and pulse a few more times, season with salt and pepper. Fold in the parsley by hand. The tapenade is best when made a day in advance so flavors have time to marry.

12 large unpeeled garlic cloves, divided
1 tablespoon chopped fresh rosemary leaves
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, melted
1 (6-pound) boneless leg of lamb, trimmed and tied
4 to 5 pounds small unpeeled potatoes (16 to 20 potatoes)
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 450 degrees F. Place the oven rack in the lower third of the oven so the lamb will sit in the middle of the oven.
  • Peel 6 of the cloves of garlic and place them in the bowl of a food processor fitted with the steel blade. Add the rosemary, 1 tablespoon salt, 1 teaspoon pepper, and butter. Process until the garlic and rosemary are finely minced. Thoroughly coat the top and sides of the lamb with the rosemary mixture. Allow to sit at room temperature for 30 minutes to 1 hour.
  • Toss the potatoes and remaining unpeeled garlic in a bowl with the olive oil and sprinkle with salt. Place in the bottom of a large roasting pan. Place the lamb on top of the potatoes. Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Slice and serve with the potatoes.

HERB CHEESE BONELESS LEG OF LAMB

I have made this dish a few times and it is just wonderful. It is best prepared on a grill, and this is the way the instructions are given, but it can easily be prepared in the oven as well. The cut that I buy for this has the netting, but you can use butcher's twine if the netting is not available to keep the roast together while it cooks.

4 -5 lbs boneless leg of lamb
1 cup herb cheese spread (pre-packaged, or one that you make from cream cheese and butter)
2 cups cabernet sauvignon wine
thyme
garlic, minced (to taste)

Steps:

  • Fillet the leg of lamb on a cutting board and pound it flat with a meat mallet or rolling pin.
  • Spread the cheese mixture on the inside of the meat (fat goes on the outside) with a rubber spatula or large spoon.
  • Roll roast back into pill shape, place back into netting or tie together with twine.
  • Place in a large serving dish, or gallon size zipper bag and pour in wine. Let marinate for 1-2 hours in refrigerator, turning at least once.
  • Remove roast from fridge and allow to come to room temperature, sprinkle with thyme and rub with minced garlic.
  • Heat grill to 325°F.
  • When grill is hot place the roast directly over the fire and sear for 4-5 minutes per side.
  • After searing, set the roast to the side of the fire (indirect heat) for the remainder of the cooking time.
  • Cook 25 min/lb for medium doneness at 300-325°F.
  • Remove from heat and allow to rest for 10 minutes before carving.
