SPECIAL MEATLOAF WITH HEINZ 57 SAUCE

Special Meatloaf With Heinz 57 Sauce image

My grandmother shared this recipe with me many years ago. It's been our family favorite ever since. I generally use very lean ground beef and it's still nice and moist. Wonderful left over on sandwiches! Although meatloaf is enjoyed throughout the entire U.S., this version gives credit to the region where Heinz 57 became a household word - the Mid-Atlantic region.

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 8

1 1/2 lbs lean ground beef
1 egg, slightly beaten
1 cup soft breadcrumbs
1/2 cup milk
6 tablespoons Heinz 57 steak sauce, divided
1 teaspoon salt
1/2 cup chopped onion
3 dashes freshly grated pepper

Steps:

  • Combine ingredients thoroughly (reserving 3 tbsp Heinz 57 Sauce for the top), but use a light hand and don't over mix.
  • Shape in a 8 X 4 X 1 1/2" loaf pan.
  • If your ground beef is very lean, the pan should be greased first.
  • Brush top with the reserved 3 tbsp Heinz 57 Sauce.
  • Bake in 350 oven for 1 hour.
  • Allow loaf to stand 5 minutes before slicing.

HEINZ 57 CHICKEN

Heinz 57 Chicken image

This recipe was on the back of a bottle of Heinz 57 Sauce years ago and I lost the recipe. It recently popped back up in an Ore Ida ad for their grillers. The chicken is so easy and tastes so good, so I'm putting it in Food.com for safe keeping.

Time 2h

Yield 1 1/2 Litres

Number Of Ingredients 18

1 1/2 cups sultana raisins
1 1/2 cups water
3 cups white vinegar
3 cups malt vinegar
3 cups tomato paste
3 cups sugar
1 1/2 cups water
2 tablespoons apple juice
1 1/2 tablespoons pickling salt
3 teaspoons vegetable oil
3 teaspoons lemon juice
1 1/2 teaspoons onion powder
3/4 teaspoon garlic powder
1/2 teaspoon turmeric
1/8 teaspoon celery seed
2 pinches cayenne pepper
1 cup malt vinegar
1 1/2 cups prepared yellow mustard

Steps:

  • Combine raisins and first 1 1/2 cups of water in a blender and purée.
  • In a large pot, combine white vinegar, malt vinegar, tomato paste, second 1 1/2 cups of water, sugar, apple juice, salt, vegetable oil, lemon juice, onion powder, garlic powder, turmeric, cayenne, and celery seed, and add puréed raisin mixture. Stir to blend.
  • Bring mixture to a boil, then reduce heat to a low simmer. Simmer (uncovered) for 45 - 60 minutes or until very thick. Stir frequently to avoid burning.
  • Add malt vinegar and prepared mustard to mixture. Return to a simmer and simmer uncovered until thick, or volume has reduced by 1/3. (20 - 30 minutes). Simmering too long will reduce the zing. One large deep pot will take longer to reduce the mixture than a small pot, use a smaller pot and reduce mixture in batches if necessary.
  • Ladle hot mixture into hot sterilized sealable bottles and seal. Allow bottles to cool. Store in cupboard.
  • Keep indefinitely. Refrigerate after opening.
