HEAVENLY "CHICKEN" (FRICHIK) CASSEROLE

A great vegetarian comfort food that also makes a great holiday dish. This recipe is a favorite among many that have discovered the deliciously tasting Worthington FriChik. You can also use real chicken, mayonnaise, milk and even add some cheese if you're not vegetarian. Before becoming vegetarian I made a casserole very similar to this one regularly. I got this recipe from a good friend that got it from another friend's cookbook. Worthington FriChik has egg white in the ingredients and there is cream in the mushroom soup, so its not vegan. I've been trying to use as little dairy as possible so I use soy milk and vegenaise (the yummiest soy mayonnaise).

Number Of Ingredients 11

1 cup celery, diced
1/2 cup onion, diced
2 cups cooked brown rice
2 cups vegetarian chicken substitute, diced (Use Worthington FriChik & include the gravy it comes in!!!)
1 (10 1/2 ounce) can mushroom soup
1 (14 ounce) can mushrooms
1/3 cup soymilk
1/2 cup soy mayonnaise (I use Vegenaise. A friend of mine uses sour cream instead and of course it tastes great that way too)
1/2 teaspoon salt
paprika, for topping
sliced almonds, for topping

Steps:

  • Saute celery and onion in a very small amount of oil or water.
  • Put into mixing bowl and add remaining ingredients, mixing well.
  • Sprinkle top with paprika and sliced almonds.
  • Put in oiled casserole dish and bake at 350 degrees F about 45 minutes. (The 1 1/2 passive work time listed includes the time to cook the two cups of brown rice ahead).

1/4 cup chopped onion
1/4 cup butter
8 oz egg noodles, cooked
1 cup sour cream
1 can (10 oz.) cream of chicken soup
1 can (10 oz.) cream of mushroom soup
2 cups cooked chicken or turkey
1 box Stove Top Stuffing

Steps:

  • Saute onion in butter until tender; combine onion and noodles. Add sour cream, soups, and chicken.
  • Mix and put in greased 9 X 13 pan. Mix stuffing together and put on top.
  • Bake at 350°F for 45 minutes.

1/2 cup butter
1/2 cup onion (chopped)
1/2 cup green pepper (chopped)
1/2 cup celery (chopped)
2 (10 1/2 ounce) cans cream of mushroom soup
1 cup almonds (sliced)
2 cups cheddar cheese (grated)
4 cups cooked chicken (cubed)
1 (4 ounce) can mushrooms
1 (6 ounce) box wild rice

Steps:

  • 1. Saute Onions, Pepper & Celery in butter.
  • 2. Add soup, almonds & Cheese (reservicing some Almonds and Cheese for top).
  • 3. Add Chicken and mushrooms to rice.
  • 4. combine everything and bake in a greased casserole dish, top with remaining cheese/almonds and bake at 350 for 30 minutes.

Bake up a Mexican-inspired dish that is sure to satisfy the whole family.

Number Of Ingredients 17

6 chicken breasts
2 C. sliced fresh mushrooms
1 1/4 C. chopped onion (1 medium)
1/2 C. chopped bell pepper
2 Tbs. minced jalapeno pepper
1 (4 oz) can chopped green chilies
1/4 C. milk
3 Tbs. all-purpose flour
1 1/2 C. water
3/4 tsp. chili powder
1/2 tsp. salt
1/2 tsp. ground cumin
1/4 tsp. pepper
8 corn tortillas
1 C. shredded cheddar cheese
1/2 C. tomato, chopped and unpeeled
1/4 C. sour cream

Steps:

  • Cook chicken and dice, set aside. Sauté mushrooms, onion, bell pepper, & minced jalapeno pepper until tender. Remove skillet from heat; stir in chicken and green chilies. Set aside. Combine milk and flour in a small saucepan. Gradually stir in water; place on medium heat-cook & stir until thick & bubbly. Stir in chili powder, salt, cumin, & pepper. Add to chicken mixture and set aside. Wrap tortillas in damp paper towels & then in foil & bake at 350 degrees for 10 min. Arrange half of the tortillas in a 12x8x2 dish. Top with half of chicken mixture. Repeat with rest of tortillas and chicken mixture. Cover and bake at 350 degrees for 25 min. Uncover and sprinkle with cheese; let stand 10 min. Top serving with tomato and sour cream. Garnish with additional jalapeno pepper slices.Yield: 6 Servings
