2 tablespoons olive oil
10 oz baby bella mushroom, quartered
1 yellow onion, diced
3 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon pepper
3 tablespoons tomato paste
2 tablespoons low sodium soy sauce
¼ cup flour
¾ cup dry red wine
4 cups red potato, diced
4 cups vegetable broth
2 leaves bay leaf

Steps:

  • In large pot or Dutch oven, heat the olive oil over medium heat. Once the oil begins to shimmer, add the mushrooms and cook for about 5 minutes, or until most of their juices have been released.
  • Add the onions, carrots, and celery, and cook for 4-5 minutes, or until onions are semi-translucent.
  • Add the garlic, rosemary, thyme, pepper, tomato paste, and soy sauce, and cook for 2-3 more minutes, until the herbs are fragrant.
  • Add the flour and stir until fully incorporated. Add the wine and stir until mostly absorbed.
  • Add the potatoes, vegetable broth, and bay leaves, and bring to a boil. Reduce the heat to medium-low and simmer for 45 minutes, stirring occasionally, until the potatoes are tender and the stew has thickened.
  • Remove the bay leaves.
  • Enjoy!

1 tablespoon vegetable oil
1 1/2 cups sliced onions
2 garlic cloves, minced
1 cup carrot, cut into 1-inch-thick slices
1 cup celery, cut into 1-inch-thick slices
4 cups mushrooms, cut into quarters
3 medium potatoes, unpeeled, cut into 1-inch chunks
1 (1 lb) can tomatoes, undrained, coarsely chopped
2 cups cooked kidney beans (12 ounces)
1 (8 ounce) can tomato sauce
1 cup water
1 teaspoon dried thyme
1 bay leaf
salt and pepper
3 tablespoons flour
1/4 cup water
1/4 cup red wine

Steps:

  • Heat oil in a large, heavy saucepan over medium heat.
  • Add onions, garlic, carrots, celery, and mushrooms.
  • Cook 10 minutes, stirring frequently.
  • Add small amounts of water, if necessary, to prevent sticking.
  • Add remaining ingredients, except flour, 1/4 cup water, and wine.
  • Cover, reduce heat to low, and simmer 30 minutes, or until vegetables are tender.
  • Stir occasionally while cooking.
  • In a small bowl, gradually stir flour into 1/4 cup water until smooth.

Steps:

I love stew in the winter, especially when I come home from work and it's already cooked and pretty much ready to be eaten. Yummy!

2 cups potatoes
1 cup parsnip
1 cup turnip
1 cup carrot
1 lb stewing beef
steak spice (I use clubhouse brand)
Worcestershire sauce
1 garlic clove (crushed)
1 onion (medium)
1 cup green beans
1 cup celery
1 1/2 cups button mushrooms
2 (10 ounce) cans cream of mushroom soup (I use the low fat Campbell's)
1/2 cup broth (beef or vegetable)
gravy mix (I use Veloutine)
1 cup frozen peas

Steps:

  • Chop up potatoes, parsnips, turnips and carrots into 1 inch cubes. Don't chop them too small - you want big chunky veggies. (if you want, you can also add sweet potatoes or yams too!).
  • Put the chopped potatoes, parsnips, turnips and carrots into the bottom of your crockpot, in that order.
  • Chop up the beef into approximately 1 inch cubes, and then put it on top of the veggies.
  • Squirt some Worcestershire sauce on top of the beef, and then sprinkle the steak spice and crushed garlic over top.
  • Chop the onion into big chunks - do not separate the layers - and put them over top of the beef.
  • Next cut up the green beans and celery into 1 inch long pieces, and put them on top of the onion.
  • Throw the button mushrooms on the top (or you can use large mushrooms cut in half).
  • Now mix the two cans of cream of mushroom soup and the 1/2 cup beef or vegetable broth together and dump it over top of the layers.
  • Lastly, I put aluminum foil over top of my crockpot, and then the lid because my lid doesn't fit tightly. If you want this to cook up nicely, you don't want to let any of the heat out.
  • Cook on low for approximately 6-8 hours.
  • Before you eat, ladle out the liquid and put into a pot with the gravy thickener and make a gravy base for the stew (otherwise it will be more soupy).
  • While you're making the gravy, throw the frozen peas into the crockpot and stir it up.
  • When the gravy is ready, pour it back into the crockpot, stir it all up, and it's ready to be eaten!

6 small red potatoes cut in half

3-4 stalks celery, sliced
1 cup of fresh peas (can also use green beans)

Steps:

  • Heat a large, heavy skillet with the oil. Brown the meat over medium high heat turning as needed; sprinkle with sugar and continue to brown. Then dust lightly with flour and continue to brown. Add the tomatoes, red pepper, herbs, bay leaf, cloves, beef stock and boiling water. Cover and simmer over low heat about 1 ½ hours or until meat is tender. Add the vegetables except the peas or beans and combine. Continue to cook 30 minutes longer. Add peas; cook 5 minutes longer. Serve with French bread or homemade buttermilk biscuits.

1 tablespoon all purpose flour
3 tablespoons olive oil
1 large green bell pepper, cut into 1-inch pieces
1 medium onion, finely chopped
3 3x1/2-inch strips lemon peel
2 garlic cloves, chopped
2 small bay leaves
2 cups low-salt chicken broth
1 tablespoon tomato paste
4 medium carrots (about 8 ounces), peeled, cut into 1-inch pieces
1 cup frozen petite peas
Chopped fresh parsley

Steps:

  • Place lamb in large bowl. Sprinkle with salt and pepper. Add flour and toss to coat. Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add half of lamb and sauté until brown, about 5 minutes. Using slotted spoon, transfer lamb to medium bowl. Repeat with remaining lamb. Heat remaining 1 tablespoon oil in same pot. Add bell pepper, onion, lemon peel, garlic, and bay leaves. Sauté until onion begins to soften, about 5 minutes. Return lamb and any accumulated juices to pot. Add broth and tomato paste. Bring to boil, scraping up browned bits. Reduce heat to medium-low. Cover and simmer 50 minutes. Add carrots; cover and simmer until lamb and carrots are tender, about 20 minutes longer. Add peas. Simmer uncovered until peas are tender and gravy thickens, about 5 minutes. Discard bay leaves. Season stew to taste with salt and pepper; ladle into bowls. Sprinkle with parsley.

350g / 12 oz. lean ground beef
1 medium onion, finely chopped
1/2 cup or so dried bread crumbs
1 egg
1/2 tsp. salt
1/4 tsp. or so black pepper
For the soup:

2 medium onions, chopped
2 garlic cloves, chopped
1 tablespoons olive oil
1 bay leaf
1 teaspoon dried thyme
1 small bunch parsley
2 medium carrots, cut into chunks
3 celery stalks, cut into chunks
Additions to soup at the end:
1 tablespoon white or red miso
additional parsley (chopped or a leaf or two) for garnish
salt and pepper to taste

Steps:

  • In a large, heavy bottomed pan, saute the 2 chopped onions and garlic cloves in olive oil over low-medium heat, stirring occasionally, until softened and translucent. Add 2 cups of plain water and bring up to a boil. Lower the heat to a slow simmer and simmer for about 10 minutes. While that simmers, make the meatballs. Mix all the meatball ingredients together in a bowl - your clean hands are the best tool for this. Form into about 30 small meatballs. Add the rest of the soup ingredients to the pot (except for the ones listed under “additions, plus 6 cups of water. Bring up to a boil then lower the heat to a simmer. Put in the meatballs (no need to brown them or anything beforehand). Simmer for at least half an hour. Dissolve the miso paste in some of the hot soup liquid, then add the whole thing to the pot. Taste, and season with salt and pepper. The soup improves after resting for a day or more. You may want to skim off the oil that accumulates at the top. To serve, garnish with more chopped parsley. (Don’t put the bay leaf or the parsley bunch in any of the servings.) Estimated calories per 1 cup serving with 3 meatballs is 200 calories, give or take a few calories.

2 Tbsp olive oil
4 clove garlic
1 large onion
1 c chopped carrots
1 c chopped celery
1 tsp thyme, dried (or 1-2 tb fresh)
4 c beef broth
1 pkg frozen meatballs (or fresh if you've got time)
1/2 head of cabbage, chopped
1 can(s) crushed tomatoes (14 oz)
1 can(s) tomato paste
1/2 c red wine, dry (you can add up to a cup if you like)
2 bay leaves
1 tsp onion powder
1 tsp garlic powder
1 tsp sugar
pinch salt & pepper (to taste)

Steps:

  • 1. Heat the olive oil on medium heat in a stock pot, then add garlic and onion. Sautee until onion is translucent.
  • 2. Next add carrots, celery, and thyme and continue sauteing until veggies are almost tender.
  • 3. Add all remaining ingredients and allow to simmer for at least 20 minutes on med-low heat. (If you have time to simmer longer, the flavor will be much stronger.)
  • 4. Serve with a little bit of grated parmesan or pecorino romano cheese on top, and add some crusty garlic bread on the side to complete you meal!

1 can (10.75 oz) reduced-fat and reduced-sodium condensed cream of mushroom soup
1 cup lower-sodium beef broth
1 teaspoon dried marjoram or dried thyme, crushed

Steps:

Trying to stay away from meat products, I always missed the thick and creamy "comfort foods" - this recipe is the first time my family felt the comfort food satisfaction from a vegan recipe, also without the nightshades (important in our house). It's a lot of chopping, but for me that goes along with comfort food. Hope it makes someone's chilly night more cozy!

6 cups water or 6 cups stock
3 tablespoons olive oil
1 large onion, chopped
2 large carrots, chopped
2 large celery ribs, chopped
5 ounces shiitake mushrooms, sliced
5 ounces button mushrooms, sliced
1/4 cup almond flour
1 large sweet potato, cubed
2 large rutabagas, cubed
1 large parsnip, cubed
1 large turnip, cubed
1 tablespoon sea salt
1/4 teaspoon white pepper
1 rosemary sprig
4 -5 oregano sprigs
1 sage sprig
1 bay leaf
1 bunch swiss chard, stems removed, greens roughly chopped

Steps:

  • Peel all vegetables before starting recipe, putting shavings in a stock pot with 6c water and some salt-to-taste to make the stock (or use your stock of choice).
  • Once the peeling is done, chop vegetables in order of need, which should kindof work with the cooking times. Heat oil in a large soup pan. add onions, carrots and celery. Cook at medium high heat for at least 10 minutes, stirring regularly.
  • Add mushrooms. Cook another 10-20 minutes, stirring regularly. At the height of the mushrooms' releasing their moisture, add almond flour and cook 2-3 more minutes.
  • Stir in cubed root vegetables, enough stock to cover them, herbs and salt. Bring to boil, reduce heat, cover and simmer 30 minutes.
  • Remove herb stems and bay leaf. Immersion blender for about 30 seconds (or take out 2 cups and use the blender). Taste test to adjust salt. Add swiss chard and white pepper to taste. simmer 10-20 minutes more.
  • If you're not vegan, my husband loves adding parmesan cheese to the final product. He also adores swiss chard stems washed, cut, tossed in oil, sprinkled with parmesan and baked at 400 for 15-20 minutes.

1/2 cup dried lentils, rinsed
1/2 cup split peas, rinsed
4 cups water
1/2 head broccoli florets, bite-sized
1/2 head cauliflower florets, bite-sized
3 medium red bell peppers, coarsely chopped
1 medium beet, peeled and cubed
1 small eggplant, peeled if desired and cubed
1 cup chopped carrots,
1 cup chopped organic celery
1 large onion or 3 leeks, chopped or sliced
5 cloves garlic, chopped
2 bunches kale, washed, leaves removed from stem and chopped
5 cups chopped tomatoes or 1 (24 ounce) can tomatoes, chopped or crushed, low or no sodium
8 tablespoons Dr. Fuhrman's VegiZest or other no salt seasoning
2 medium zucchini, cubed
2 cups carrot juice
2 teaspoons cinnamon (optional)
1/2 cup raw cashews

Steps:

  • Place lentils, split peas and water in a large soup pot and begin to simmer. Prepare vegetables and add all ingredients, except for zucchini, carrot juice, cinnamon and cashews, to simmering lentils and peas. If necessary, add more water to keep from scorching. Simmer covered for 30 minutes or until vegetables, lentils, and peas are tender. Add zucchini, carrot juice, and cinnamon(if desired) and simmer for another 30 minutes. To make a creamy, chunky stew, blend 1/4 of cooked vegetable mixture with cashews in a high powered blender until smooth. Add blended mixture back into stew.
