HEARTY SAUERKRAUT SOUP

This is a recipe passed on to me by a friend. I love it on cold evenings, especially for the smokey flavour the sausages give the soup.

Number Of Ingredients 7

1 lb smoked Polish sausage, cut into chunks
5 medium potatoes, peeled and cubed
2 medium onions, chopped
2 carrots, chopped
5 cups chicken broth or 5 cups vegetable broth
2 cups sauerkraut
1 (6 ounce) can tomato paste

Steps:

  • In a large saucepan, add sausage, potatoes, onions, carrots and chicken broth.
  • Bring to a boil, reduce heat and simmer for around 30 minutes, until potatoes are cooked.
  • Add sauerkraut and tomato paste, mixing well.
  • Return to a boil, reduce heat, cover and simmer another 30 minutes.

4 cups chicken broth
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (16 ounce) can sauerkraut, rinsed and drained
8 ounces fresh mushrooms, sliced
1 medium potato, cut into small cubes
2 medium carrots, chopped
1 medium onion, chopped
2 stalks celery, chopped
3/4 lb smoked Polish sausage, cubed
1/2 cup cooked chicken, cubed
2 tablespoons vinegar
2 teaspoons dill weed, dried
1/2 teaspoon pepper
2 slices bacon, crisp cooked and crumbled
2 eggs, hard cooked and chopped

Steps:

  • In a 3 1/2 to 4 quart slow cooker, stir all ingredients together except for the bacon and hard-cooked eggs. Cover and cook on low-heat setting for 10 to 12 hours or till the vegtables are tender. If necessary, skim off fat before serving. Sprinkle each serving with bacon and chopped egg.

6 small red potatoes, quartered
3 medium carrots, cut into 1/4-inch slices
1 medium onion, cut into thin wedges
1 can (14 ounces) sauerkraut, rinsed and well drained
1 tablespoon brown sugar
1 tablespoon spicy brown mustard
1 teaspoon caraway seeds
1 pound smoked kielbasa or Polish sausage, cut into 1-inch slices
2 cans (14-1/2 ounces each) reduced-sodium chicken broth

Steps:

  • In a 3- or 4-qt. slow cooker, combine the potatoes, carrots and onion. Combine the sauerkraut, brown sugar, mustard and caraway seeds; spoon over vegetables. Top with sausage and broth. Cover and cook on low for 8-9 hours or until vegetables are tender.

10 ounces sauerkraut
9 ounces bacon, chopped
1 onion, chopped
1 large garlic clove, crushed
4 1/4 cups cold water
1/2 teaspoon paprika
2 teaspoons chopped fresh dill
5 ounces smoked sausage, sliced (your choice of sausage)
5 ounces sour cream
sea salt & freshly ground black pepper

Steps:

  • Rinse the sauerkraut in cold water and leave to drain.
  • Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
  • Bring to the boil, then simmer for 15 minutes.
  • Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
  • Stir in the paprika and mix into the sauerkraut mixture.
  • Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
  • Stir in the cream, check the seasoning and reheat until just on the point of boiling.
  • Serve with rye bread.
