This recipe has been handed down to me by my mother. While I'm not sure of the background or origins of the recipe, it is a great meal for those rainy, cold, and dreary days. My favorite side dish is a nice glass of milk and some saltines to go along with it.

Number Of Ingredients 10

8 ounces wide egg noodles
1 slice onion
1 tablespoon vegetable oil
6 chicken bouillon cubes or 6 vegetable bouillon cubes
20 ounces frozen chopped broccoli
1/8 teaspoon garlic salt
1 teaspoon salt
6 cups milk
6 cups water
1 lb Velveeta cheese (cubed)

Steps:

  • Brown one slice of onion in 1 tablespoon oil.
  • Bring 6 cups of water and 6 chicken boullion cubes to a boil.
  • Boil until boullion is dissovled.
  • Add 8 ounces wide egg noodles and 1 tsp salt, boil for 3 minutes.
  • Add 20 ounces frozen chopped brocolli (or 1 pound fresh chopped brocolli).
  • Boil for 4 minutes.
  • Reduce heat to simmer and add 1/8 tsp garlic salt, 6 cups of milk, and one pound of Velveeta cheese.
  • Cook until cheese melts.

Number Of Ingredients 12

1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup butter, cubed
3 tablespoons all-purpose flour
1 tablespoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups milk
2 teaspoons lemon juice
1-1/2 cups diced cooked chicken
2 packages (10 ounces each) cut broccoli with cheese sauce, thawed and chopped
Seasoned croutons, optional

Steps:

  • In a large saucepan, saute onion and celery in butter until crisp-tender. Stir in the flour, mustard, salt and pepper. Gradually add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly., Stir in the lemon juice, chicken and broccoli. Heat through. Garnish with croutons if desired.

2 teaspoons light margarine (Becel)
1 small onion
2 -3 garlic cloves, smashed
5 cups broccoli, cut into pieces
2 large potatoes, scrubbed, unpealed, cut into 1 1/2 inch pieces
4 cups chicken broth
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • In a medium saucepan, heat margarine over medium heat.
  • Add onion and garlic and saute until softened.
  • Stir in broccoli and potatoes and saute 1 minute.
  • Add broth and bring to a boil.
  • Reduce heat and simmer for 15 minutes or until veggies are tender.
  • Use a hand blender, food processor or traditional blender to puree the soup, in batches if necessary, until it is smooth.
  • Return to the pan and heat through.
  • Variation: Substitute cauliflower celeriac, squash or a combination of these veggies.
