1/4 cup shredded Monterey jack cheese
1 avocado, chopped

1 green bell pepper, chopped (about 1 cup)
1 small onion, finely chopped (about 1 cup)
2 tbsp. GOYA® Minced Garlic, or 6 cloves garlic, finely chopped
1 lb. ground turkey
11/2 tsp. ground cumin
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
2 cans (15 oz. each) GOYA® Low Sodium Red Kidney Beans, drained
2 cans (8 oz. each) GOYA® Tomato Sauce
Coarsely chopped fresh cilantro

Steps:

  • 1. Heat oil in medium pot over medium heat. Stir in peppers, onions and garlic; cook until tender, 5-7 minutes. Add turkey, cumin and Adobo. Cook, breaking up turkey with spoon, until browned, about 5 minutes.
  • 2. Stir in beans, tomato sauce, 1 cup water and chipotle; bring liquid to boil. Reduce heat. Simmer until chili thickens and flavors come together, about 10 minutes. Season with Adobo.
  • 3. Divide chili among serving bowls. Top with cheese, avocado and cilantro.

1 ½ cups dry black beans
2 tablespoons olive oil
1 pound ground turkey
1 large sweet onion, chopped
1 (28 ounce) can diced tomatoes
3 ears corn, kernels cut from cob
1 tablespoon maple syrup
1 tablespoon molasses
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 tablespoon garlic powder
½ teaspoon chipotle chile powder
¼ teaspoon cayenne pepper
sea salt to taste
1 (8 ounce) container plain yogurt
1 bunch green onions, diced

Steps:

  • Put black beans in a large pot with water water to cover; bring to a boil. Reduce heat to medium-low and cook at a simmer until tender, 30 to 40 minutes; drain. Return beans to the pot.
  • Heat olive oil in a large cast-iron skillet over medium heat. Cook and stir turkey in the hot oil until completely browned, about 10 minutes; add sweet onion and continue cooking and stirring until the onion is translucent, about 10 minutes more. Add to the black beans.
  • Stir tomatoes, corn kernels, maple syrup, molasses, Hungarian paprika, chili powder, garlic powder, chipotle chile powder, cayenne pepper, and sea salt into the black bean mixture; bring to a simmer and cook until heated through, 15 to 20 minutes. I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions.

2 (15 ounce) cans dark red kidney beans, rinsed and drained
1 (15 ounce) can sweet corn, rinsed and drained

Steps:

  • Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and saute for 5-7 minutes, stirring frequently. Next add in ground turkey and break up the meat; cooking until no longer pink. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.
  • Next add in tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary. Garnish with anything you'd like.
  • Makes 6 servings, about 1 1/2 cups each.
  • Typically, McCormick's Chili Powder is used in this recipe, which is very mild. If you're using something else, I would start with 2-3 tablespoons instead of 4.
  • To make this recipe in the slow cooker: Reduce the chicken broth to 1/2 cup and brown the turkey and onions before adding to the slow cooker. This is an awesome tailgating or football party recipe!
