1/4 cup plus 2 tablespoons olive oil
1 pound sweet Italian sausage, casing removed
1/2 teaspoon kosher salt
1 red bell pepper, seeded and thinly sliced
1/2 red onion, thinly sliced
4 ciabatta rolls, halved horizontally with some of the insides scooped out
1 cup jarred marinara sauce
1 pound fresh mozzarella, torn into slices
8 large thinly-sliced pepperoni, such as Applegate
1 cup freshly grated Parmesan

Steps:

  • Heat a medium skillet over medium-high heat. Add 2 tablespoons oil and the sausage and cook, breaking apart the sausage with a wooden spoon, about 5 minutes. Add the salt, red pepper and onion and cook, stirring often, until the peppers and onions are soft and the sausage begins to brown, about another 5 minutes. Set aside to cool slightly.
  • Divide 1/4 cup marinara sauce between each half of one of the ciabatta rolls and top with a quarter of the mozzarella slices over the sauce. Place 2 slices of the pepperoni on the top half and fill the bottom half with a quarter of the sausage mixture. Sprinkle the sausage with 1/4 cup of the Parmesan. Sandwich together and continue with the remaining ingredients.
  • Heat a large skillet over medium heat. Add 2 tablespoons oil and 2 of the sandwiches top-side down to the skillet. Place a small pan on top and press down gently to flatten slightly. Cook until golden brown and crispy, 3 to 4 minutes. Flip the sandwiches and return the pan to the top, again pressing gently. Cook until the bread is golden and the cheese is melted, about 3 minutes. Add 2 tablespoons oil to the skillet and continue with the remaining sandwiches. Allow the sandwiches to cool to room temperature and then chill them in the refrigerator until ready to serve.
  • Before serving, slice the sandwiches into wedges like you would a pizza.

8 slices Natures Own 100% Whole Wheat Bread
1 cup pizza sauce
8 slices part-skim mozzarella cheese
1/4 cup chopped green bell pepper
48 slices turkey pepperoni
olive oil

Steps:

  • Spread 1 side of each bread slice evenly with 2 tablespoons pizza sauce. Layer each of 4 bread slices with 1 cheese slice, 1 tablespoon bell pepper and 12 pepperoni slices. Top with remaining cheese and bread slice, sauce side down; press sandwich together slightly. Brush outside of sandwiches lightly with oil. Preheat panini grill according to manufacturers instructions. Cook sandwiches 3 minutes or until browned and cheese melts.

jar roasted pepper , drained
1 tsp tomato purée
small handful parsley , chopped
200g can tuna , drained
125g ball mozzarella , torn into small chunks

Steps:

  • Heat grill to medium. Split the panini rolls in half and lightly toast on each side. Slice the peppers into strips and mix well with the tomato purée, parsley and some seasoning. Spread over the toasted bread.
  • Flake the tuna over the pepper mixture, then scatter with cheese. Grill for 3-5 mins until the cheese is golden and bubbling.

4 tablespoons unsalted butter, softened
1 teaspoon dried oregano
2 teaspoons garlic powder
½ teaspoon red pepper flakes
1 loaf french bread, about 16 inches (40 cm) long and 5 inches (13 cm) wide
1 cup pizza sauce
8 slices mozzarella cheese
30 slices pepperoni
¼ cup shredded mozzarella cheese
¼ cup shredded parmesan cheese

Steps:

  • Heat a grill or campfire to medium heat.
  • Make the garlic butter: Add the butter, oregano, garlic powder, and red pepper flakes to a small bowl and stir to combine.
  • Slice the French loaf almost all the way in half lengthwise, leaving a long side still attached like a hot dog bun.
  • Open the bread and spread the pizza sauce liberally over both sides. Lay the sliced mozzarella on both sides of the bread. Lay half of the pepperoni slices over the mozzarella on the bottom half. Sprinkle with the shredded mozzarella, then top with the remaining pepperoni. Sprinkle the Parmesan and basil over the pepperoni, then gently bring both sides of the bread up together to close.
  • Brush to top and bottom of the loaf with the garlic butter, then double wrap the sandwich in aluminum foil.
  • Set the sandwich on the grill or campfire over medium heat. Place a cast-iron or other heavy skillet on top to press down. Cook the sandwich for 5 minutes, then flip and cook for 5 minutes more, until the outside of the bread is crisp and the cheese is melted.
  • Let sandwich cool for a few minutes before carefully unwrapping. Slice and serve.
