HEALTHY OATMEAL RAISIN COOKIES
I gave this recipe a makeover when I was struggling with my blood sugar during pregnancy. These cookies are not very sweet, but are great for when you just need a little something.

Steps:
- Mix applesauce, oil, and sugar. Add egg and vanilla, mix well.
- In a separate bowl, combine the flour, oats, salt, baking powder, and baking soda.
- Combine wet and dry ingredients. Stir in the raisins and nuts.
- Drop spoonfuls onto greased cookie sheets. Flatten each cookie. Bake at 375 degrees for 12 minutes or until lightly browned. Cool on a wire rack.

HEALTHY OATMEAL RAISIN SPICE COOKIES (1 WW POINT)
This is a recipe I've used for a while, and when I started WW, I tweaked it a bit to get it a little healthier!

Steps:
- Mix all dry ingredients.
- Add in applesauce, egg and vanilla.
- Mix until completely blended. You may need to finish mixing with your hands.
- Shape into balls the size of walnuts. Place on a greased cookie sheet 2 inches apart.
- Bake at 350 degrees F (175 degrees C) for 11-13 minutes until edges are lightly browned.
- Cool 5 minutes on baking sheet, then remove cookies to baking rack to finish cooing.
