Number Of Ingredients 8

1 cup mashed bananas or 2 ripe bananas
1/3 cup peanut butter (natural if you have it)
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups old fashioned oats
1/2 cup shredded coconut

Steps:

  • Preheat oven to 350.
  • Mash bananas with a fork and mix in peanut butter, apple sauce, vanilla, salt, and cinnamon.
  • Stir in oats and coconut.
  • Drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray). I use a small cookie scooper.
  • Flatten a bit to shape the cookie (they don't rise or spread at all when baking).
  • Bake for 12-15 minutes, rotating the pan halfway through.
  • Allow to cool, and enjoy!

In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

3 ripe bananas
2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract
1 tablespoon low-fat peanut butter (optional)

Steps:

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
  • Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
  • Bake for around 20mins until golden brown.

3 bananas, ripe
1/3 cup canola oil
2 cups quick-cooking oats
1/2 cup chocolate chips
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
  • Lightly grease a cookie sheet.
  • For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
  • **IF batter seems a little dry, add a little milk to moisten.
  • Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

I will warn you, most adults will not like these cookies because of the finished texture, which is spongy, but if you are looking for something super healthy for younger kids, this is the recipe for you. You can't get much healthier than these, and the young ones will eat them up!

Number Of Ingredients 6

1 cup mashed ripe banana
2 cups oatmeal
1/2 teaspoon vanilla
1/4 cup applesauce
1/3 cup raisins
1/2 teaspoon cinnamon

Steps:

  • Heat oven to 350 degrees.
  • Mix all ingredients until moist.
  • (I use old-fashioned rolled oats, but imagine you could use quick-cook oats instead).
  • Mixture will be gooey and sticky.
  • That is normal.
  • Drop by tablespoonful onto ungreased baking sheet.
  • Flatten to desired thickness and shape, as cookies WILL NOT spread on baking.
  • Bake at 350 degrees for 15 minutes.
  • Remove to wire rack to cool.
