Steps:
- Preheat oven to 400 degrees and spray cookie sheet with non-stick cooking spray.
- Rinse catfish nuggets and sprinkle with garlic pepper seasoning.
- Mix egg white and lemon juice. Set aside.
- Mix bread crumbs, dill, basil and oregano and spread mixture on wax paper or dish.
- Dip nugget in egg mixture to coat, then roll in the bread crumb mixture.
- Place on cookie sheet and lightly spray with non-stick cooking spray.
- Bake at 400 degrees for 12-15 minutes or until lightly browned and thickest part of the nuggets flake easily with a fork.

- Combine the first seven ingredients; sprinkle over fillets on both sides. Place in a greased 13-in. x 9-in. baking dish. Combine the lemon juice, butter and garlic; drizzle over fillets., Bake, uncovered, at 350° for 15-20 minutes or until fish flakes easily with a fork.

Steps:
- In a shallow dish, mix together cornmeal, Cajun seasoning, garlic powder, and salt.
- Place a catfish nugget in the cornmeal dish. Coat completely. Remove to a lined baking sheet. Repeat for remaining fish.
- Bake at 400° for 17-20 minutes, until fish is cooked through, golden, and flaky.

CRISPY CRUNCHY CATFISH NUGGETS
This can be either baked or deep fried. I was experimenting with ingredients I had on hand and this is what I came up with, so its a original recipe of my own.

Steps:
- Preheat oven or deep fryer to 350'.
- If using in the oven, spray baking sheet with Pam and add 1Tbs. Oil. Spread evenly.
- In a bowl combine buttermilk and egg. Mix well and set aside.
- In another bowl add bisquick, set aside.
- In another bowl add crushed cornflakes,all purpose greek seasoning,Old Bay Seasoning,dillweed, salt & pepper. Blend to mix.
- Place catfish nuggets in the buttermilk mixture and let set 5 minutes.
- Dip in bisquick than into the corn flake mixture and place on greased baking sheet or in a deep fryer.
- If baking, bake for 30 minutes or until fish flakes.
- If deep frying, fry 5 to 8 minutes or until crispy brown and fish flakes.
- Serve with tarter sauce.

HERB BAKED CATFISH
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange catfish fillets in a 9x13-inch baking dish. Combine parsley, paprika, thyme, oregano, basil, and black pepper in a small bowl; sprinkle herb mixture over fish. Mix lemon juice, butter, and garlic powder in another bowl; drizzle butter mixture over fish.
- Bake in preheated oven until fish is easily flaked with a fork, about 20 minutes.
