Number Of Ingredients 6

6 tbsp plain yogurt
½ tsp Dijon mustard
2 tbsp mayonnaise
1⁄2 white cabbage
2 carrots
1⁄2 onion

Steps:

  • Mix the yogurt, mustard and mayonnaise together in a bowl. Then, use a grater attachment on a food processor, or a box grater, to grate the cabbage and carrots. Either grate the onion or chop as finely as you can. Tip all of the vegetables into the bowl and stir through the dressing.
  • Will keep in the fridge for up to 3 days.

5 cups shredded cabbage
1 each medium green, sweet red and yellow pepper, julienned
2 cups julienned carrots
6 green onions, thinly sliced
DRESSING:
2/3 cup rice vinegar
1/4 cup olive oil
Sugar substitute equivalent to 1/3 cup sugar
1/4 cup reduced-fat creamy peanut butter
1 teaspoon salt
1 teaspoon minced fresh gingerroot
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine the cabbage, peppers, carrots and onions. In a blender, combine the dressing ingredients; cover and process until smooth. Drizzle over vegetables and toss to coat. Cover and refrigerate for at least 1 hour. Toss; serve with a slotted spoon.

I love cole slaw and enjoy trying new ways to prepare it. This is from the Food Network, and is yummy and easy!

Number Of Ingredients 13

1/2 head green cabbage, shredded (about 1 pound)
1/2 head purple cabbage, shredded (about 1 pound)
salt, for cabbage, plus
1 teaspoon salt
1 carrot, shredded (1 cup)
1/2 teaspoon celery seed
1/2 cup low-fat mayonnaise
2 tablespoons whole grain mustard
3 tablespoons dark brown sugar
3 tablespoons pineapple juice
1/2 cup buttermilk
fresh ground black pepper
1/8 teaspoon cayenne

Steps:

  • Mix the green and purple cabbage together in a large colander. Salt cabbage generously and put in the sink to drain for about 1 hour. Rinse the cabbage under cold water and pat dry. Mix the carrot in with the cabbage.
  • Toast the celery seeds in a dry skillet over medium heat; cool. Whisk the mayonnaise, mustard, brown sugar, pineapple juice, buttermilk, celery seeds, 1 teaspoon salt, pepper, to taste, and cayenne in a large bowl. Add the cabbage, tossing to coat. Serve immediately or refrigerate until needed. Enjoy!

This is a great tasting coleslaw with an asian twist. It's also great with chopped up almonds added to it.

4 carrots, cut up into chunks
1/4 cup water
1/4 cup rice vinegar
1 tablespoon apple cider vinegar
1 tablespoon soy sauce or 1 tablespoon Braggs liquid aminos
1 tablespoon toasted sesame oil
3 tablespoons ginger, chopped
1/2 shallot, chopped
1 (8 ounce) bag Coleslaw
1 sweet red pepper, chopped
4 scallions, chopped

Steps:

  • For the dressing combine all the ingredients in a blender and blend until smooth.
  • Mix all the ingredients in a large bowl and serve or make ahead of time and keep it in the fridge.
