HEALTHIER BANANA BREAD (LOWER FAT, FLAX, WW FLOUR, LESS SUGAR)
I am trying to gradually shift my family to healthier foods. Rather than going to no fat, all flax and no added sweetener--here is my compromise.

Steps:
- Preheat oven to 350°F.
- Spray 2 loaf pans with non-stick spray.
- Mash bananas.
- Combine sugar, oil and egg--mixing until creamy.
- Blend in mashed bananas.
- In a separate bowl, combine whole wheat flour, ground flax seed, salt, baking soda. (Add the nuts to the dry ingredients at this point). Combine wet and dry ingredients, but do not overmix.
- Pour batter into loaf pans and bake approximately 1 hour-testing with a toothpick at the hour, and then as needed.
- Note: Because the batter is dense you will need to watch the baking time to be sure it is adequate--don't only go by color, flax seed will add darkness.
BANANA/ORANGE BREAD
The beauty of this recipe is its versatility. Experiment as you wish with the ingredients. Some people like raisins or currant in their loaves (I do not, but that should not stop anyone). This recipe is a delicious, healthy version of an old standby, and one which the entire family can enjoy. The following recipe has batter sufficient for one loaf; I have doubled the ingredients to create two loaves and bake them at the same time. Eat one, and freeze the other. Enjoy. IMPORTANT: Please note nut ingredients. Omit nuts if there are allergy implications. This recipe was originally created by Tracy Holly, General Manager of the Cory Holly Institute. Steps:
- Preheat oven to 375°F.
- Mix all the dry ingredients together in a large bowl.
- Add all wet ingredients in a blender and mix for 15 seconds.
- Add the blended ingredients to the dry ingredients and mix well.
- Pour mixture into a well-greased bread pan and place on middle rack in preheated oven.
- Bake for approximately 45 minutes.
- Insert toothpick to test for doneness (it should come out clean).
- Cover the loaf with foil if it is starting to brown too quickly on top.
- Let cool for 30 minutes and then enjoy.

- Preheat oven at 350°F
- Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
- Mix together flour, flaxseed meal, sugar, baking powder, baking soda and salt in a bowl.
- In a separate bowl, beat together eggs and oil.
- Add dry ingredients and mashed bananas alternately to egg and oil mixture, stirring until dry ingredients are moistened. Pour into prepared pan.
- Combine topping ingredients and sprinkle over batter in loaf pan. Pat down firmly into batter or swirl topping into batter with knife.
- Bake 55-60 minutes.
BANANA BREAD - LOW FAT, HIGH FIBER
I started with the Flax Banana Bread recipe on the Red Mill site, then tweaked it a bit to remove fat and add some more whole grains. This is a hearty-tasting, moist and delicious banana bread that even my young kids enjoy!

- Preheat oven to 350 degrees.
- Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
- Mix together dry ingredients (flour through salt) in a bowl.
- In a separate bowl, beat together eggs and yogurt.

PEAR BANANA BREAD LOW-FAT
This is my version of a traditional banana bread with a twist! Its very sweet, moist and down right delicious. While its not a fat free food it is low-fat compared to its traditional counter-part. Recipe makes 2 loafs, 6 serving per loaf. Tastes good cold or hot. With or without topping. Its super easy, and great for kids to help make! Try adding nuts or dry fruits to the mix right before baking for an extra texture and flavor element. == Note: When I made this recipe I used a kitchen aid stand mixer, if you don't have one; take a plastic bag, mush your bananas and pears together then add to a bowl and whisk all the materials together. Its super simple. Easily vegan if you use egg substitute. You will also need two medium sized bread loaf pans.****

- Mush banana and the pears together in your mixer with the whisk attachment on medium until mostly smooth, a few lumps are okay! Add 1 cup of the flour and the rest of the ingredients and mix on medium. When the ingredients are well combined, gradually add in the remaining 3/4 cup flour. Scrap down sides and mix well.
- Grease and flour two bread loaf pans, divide the mixture evenly between the two. Tapping the pan on the counter to remove air, leave set 5 minutes Preheat your oven to 350 degrees.
- Bake loafs for 45-60 minutes or until a toothpick comes out clean.

BANANA - RASPBERRY BREAD LOW FAT
This is an excellent cake/bread recipe with very little fat. Notice there is no butter or oil, just bananas. I cut down to 2 larger bananas but it was a little dry so I did actually add just a little canola oil, but I definitely wouldn't have if I had used all 4 bananas. Also, I subbed in blueberries (frozen unthawed) for the raspberries because it's what I had. I stirred them in towards the end of the gentle mixing with a silicon spatula so they wouldn't get mashed up.

- Heat oven to 350°F Coat an 8" loaf pan with cooking spray.
- In a bowl, combine flour, sugar, baking powder, baking soda, and salt; whisk to blend. Make a well in center; set aside.
- In another bowl, combine bananas, milk, egg, and vanilla; fold in raspberries.
- Pour batter into center of dry ingredients; fold together until combined. Do not overmix.
- Pour batter into pan; bake 1 hour or until a toothpick inserted in the center comes out clean.
- Cool in pan on a wire rack for 10 minutes. Remove from pan; cool completely. Slice before wrapping individually.
