1 cup skin-on hazelnuts
1 cup buckwheat flour
1 large sprig fresh rosemary
4 tablespoons maple syrup, divided
1 pinch kosher salt
¼ cup unsalted butter, 1/2 stick, cubed and chilled
3 tablespoons orange marmalade
4 oz brie cheese, thinly sliced
4 pears, cored and very thinly sliced

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Spread the hazelnuts on a baking sheet and toast for about 8 minutes, until fragrant and browned. Let cool, then remove the skins by gently rubbing with a kitchen towel.
  • Increase the oven temperature to 400˚F (200˚C).
  • In a food processor, combine the buckwheat flour, hazelnuts, rosemary leaves, 3 tablespoons of maple syrup, and the salt. Pulse until the hazelnuts break down and the mixture resembles a coarse meal.
  • Add the butter and pulse to combine, until no large chunks of butter remain.
  • Press the crust into a 10-inch (25-cm) tart pan. Poke holes all over the bottom of the crust with a fork.
  • Bake the crust for 10 minutes.
  • Reduce the oven temperature to 375˚F (190˚C).
  • Spread the orange marmalade over the bottom of the warm crust. Arrange the brie slices evenly over the marmalade.
  • Shingle the pear slices neatly around the outside edge of the tart, packing them close together. Add a second layer around the outside edge, on top of the first layer. There should be a circle left in the center of the tart. Begin tucking pear slices horizontally, skin-side up, around the edge of the inner circle. Work toward the center, using smaller slices as the circle gets smaller (the thinner the better here, they will bend and not break!). Once you get to the very middle, tuck a few small slices into the center to fill in.
  • Using a pastry brush, lightly brush the remaining tablespoon of maple syrup over the pear slices.
  • Bake for 40 minutes, until the pears have softened.
  • Let cool for 10 minutes before slicing.

24 mini phyllo tart shells
¼ pound ripe Brie cheese, cut into 24 small chunks
1 ripe pear, cut into small dice
2 sprigs fresh thyme
2 tablespoons honey, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a jelly roll pan with parchment paper.
  • Arrange tart shells onto prepared pan. Put a piece of Brie cheese into each shell. Sprinkle diced pear and a couple thyme leaves into each shell and drizzle with honey.
  • Bake in preheated oven until cheese is melted and tarts are golden, 12 to 15 minutes.

2 teaspoons brown sugar

  • Place cheese in an ungreased oven-proof serving dish. Top with pear slices.
  • Sprinkle with brown sugar and pecans. Dot with butter.

16 ounce(s) round brie cheese
1 sheet(s) frozen puff pastry, thawed
2 tablespoon(s) flour
6 tablespoon(s) pear preserves
1 large ripe pear, sliced thin
1 large egg
3/4 cup(s) hazelnuts, chopped fine

Steps:

  • Preheat oven to 350 degrees, center oven rack.
  • Peel and core ripe pear, slice thin and set aside.
  • Beat egg well and set aside.
  • Using one tablespoon of flour lightly dust counter or pastry board.
  • Place puff pastry sheet on floured counter, dust with remaining flour.
  • Gently, and I do mean gently roll out puff pastry into a round shape.
  • Brush rim of rolled out puff pastry with egg wash.
  • Lightly spray cookie sheet with flavorless cooking spray.
  • Transfer puff pastry to prepared cookie sheet.
  • Center Brie round.
  • Center pear preserves on brie round. Using the back of a spoon spread out leaving 1/2 inch rim.
  • Arrange pear slices in a circle on top of pear preserves.
  • Begin to draw up the puff pastry. I bring up one edge and pull to center. Brush with egg wash, then bring up another section, brush with egg wash, repeat until the top of your Brie round is encased with puff pastry and all edges/folds are sealed.
  • Brush well with egg wash.
  • Cover top with finely chopped hazelnuts.
  • Bake for 25 minutes, up to 30 if your oven runs cold.
  • Remove and let stand on a cooling rack for 5 minutes.
  • Using a large spatula gently transfer to a large serving platter.
  • Serve with sliced apples, pears, and crusty, chewy warm bread as well as the nutty top of your round. A crisp white wine or champagne goes well with this dish.

FRIED BRIE WITH NUT CRUST

4 2-ounce wedges Brie
1/3 cup walnuts
1/3 cup almonds
1/3 cup pecans
2 tablespoons sesame seeds
2 large eggs
1/4 cup whipping cream
Peanut oil (for frying)
Purchased jalapeño jelly
French-bread baguette, cut into 1/2-inch-thick slices

Steps:

  • Freeze Brie for 30 minutes. Finely chop all nuts and sesame seeds in food processor. Transfer to medium bowl. In another medium bowl, whisk eggs and cream to blend. Remove cheese from freezer. Dip each wedge into egg mixture and then into nut mixture, turning to coat and pressing gently to adhere. Transfer to plate; cover with plastic and refrigerate until very cold, at least 45 minutes. (Can be made 6 hours ahead. Keep refrigerated.)
  • Pour enough peanut oil into heavy large skillet to reach depth of 1 1/2 inches. Heat over medium-high heat to 350°F. Working in 2 batches, fry Brie until deep golden brown, turning occasionally with metal spatula, about 3 minutes. Using slotted spoon, transfer to paper towels to drain. Serve with purchased jalapeño jelly and baguette slices.

1/2 cup (packed) golden brown sugar
2 tablespoons all purpose flour
1 tablespoon butter, melted
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 pounds ripe Anjou pears, peeled, cored, cut into 3/4-inch pieces (about 5 cups)
Topping
3/4 cup all purpose flour
1/2 cup sugar
1 teaspoon ground cinnamon
1/4 cup (1/2 stick) unsalted butter, cut into 1/2-inch pieces, room temperature
3/4 cup hazelnuts, toasted, husked, coarsely chopped

Steps:

  • For filling:
  • Stir first 6 ingredients in large bowl. Add pears and toss to coat.
  • For topping
  • Whisk flour, sugar and cinnamon in medium bowl. Add butter and rub in with fingertips until mixture resembles coarse meal. Mix in nuts.
  • Preheat oven to 375°F. Spoon pear filling into pie crust. Sprinkle topping evenly over filling. Bake pie 15 minutes. Reduce oven temperature to 350°F. Continue baking pie until pears are tender and filling is bubbling thickly, covering edges with foil if crust is browning too quickly, about 1 hour 5 minutes longer. Cool pie on rack at least 2 hours. Serve slightly warm or at room temperature.
