Yams or sweet potatoes are popular Hawaiian island fare, made more festive for luaus and other celebrations with the addition of typical, homegrown Hawaiian flavors.

2 ½ pounds yams, peeled and cubed
1 cup pineapple and orange juice blend
2 tablespoons softened butter
½ cup (packed) dark brown sugar
½ cup chopped macadamia nuts

Steps:

  • Place yams into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Return yams to the cooking pot, and mash with juice until smooth. Pack mashed yams into a 3 quart casserole dish, dot with butter, then sprinkle with brown sugar and nuts. Loosely cover with aluminum foil.
  • Bake in preheated oven until hot and bubbly, 35 to 40 minutes.

Want to upgrade your regular sweet potato casserole? Look no further. Pineapple tidbits and juice add great pineapple flavor to this holiday staple. We love the texture they added too. With the perfect balance of sweetness, we highly recommend adding this side dish to your holiday menu.

2 lb sweet potatoes
1 can(s) pineapple tidbits in unsweetened juice (14 oz)
4 Tbsp butter, cold
4 Tbsp brown sugar, dark firmly packed
1 tsp salt
butter, room temperature
1 pkg marshmallows, see notes

Steps:

  • 1. Heat oven to 400 degrees. Scrub unpeeled sweet potatoes. Place on a cookie sheet, bake for 30 minutes, then puncture several times with a fork. Cook an additional 20 to 30 minutes until tender.
  • 2. Cool, peel, and mash in a bowl.
  • 3. Reduce oven temperature to 350 degrees.
  • 4. Drain pineapple tidbits, reserving the liquid.
  • 5. Melt butter in a bowl in the microwave. Add butter, brown sugar, and salt. Combine with mashed sweet potatoes.
  • 6. Stir pineapple juice into potato mixture until it reaches the desired consistency. Fold in the reserved pineapple tidbits.
  • 7. Butter a 2 quart, shallow casserole dish. Spoon potato/pineapple mixture into the prepared dish.
  • 8. Cover with foil and bake until heated through (about 20 minutes).
  • 9. Remove the pan from the oven. Cover the top with marshmallows. Return to oven, uncovered, and bake until marshmallows are browned as desired. Serve.
  • 10. NOTES: You can use any size marshmallows you desire; if using jumbo, cut in half before placing on top of the heated potato mixture.

I call this the 'recipe with legs' because every time I serve it, the recipe is requested. Even those who dislike yams and sweet potatoes love this tasty dish! This dish can be frozen, but freeze it without the pecan topping. Defrost before baking.

4 pounds yams
2 eggs
¼ cup brown sugar
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
⅛ teaspoon ground allspice
⅛ teaspoon ground nutmeg
6 ounces pecan halves
⅓ cup brown sugar
¼ cup melted butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl.
  • Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy.
  • Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top.
  • Bake for 25 minutes in the preheated oven, or until browned and bubbly.
