Hawaiian BBQ Pulled Pork Sandwich with Grilled Pineapple Relish image

1/4 cup light brown sugar
1 tablespoon ground coriander
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons ground cinnamon
1 teaspoon ground cumin
1 boneless pork butt or shoulder, fat cap scored (about 5 pounds)
Sweet Chile Sauce, warmed, recipe follows
Unsalted butter, softened, to toast rolls
4 soft potato rolls or sweet Hawaiian bread rolls
Grilled Pineapple Relish, recipe follows
Shredded red cabbage, to garnish
2 cups rice vinegar
1 cup brown sugar
1 tablespoon crushed red pepper
1 teaspoon kosher salt
4 cloves garlic, smashed
Oil, for grilling
1 fresh pineapple, skinned, cored and cut into 1-inch slices
2 tablespoons chopped fresh cilantro
1 tablespoon peeled and grated fresh ginger
1 lime, juiced
1 jalapeno, seeded and diced
1/2 red onion, diced
Kosher salt and freshly ground black pepper

Steps:

  • For the roast pork: In a small bowl, combine the brown sugar, coriander, garlic powder, onion powder, salt, black pepper, cinnamon and cumin to make a dry rub. Massage the rub over the pork, making sure to rub it in between the scored fat cap. Wrap the pork in plastic wrap and let it sit for 2 hours or overnight in the fridge.
  • Preheat the oven to 325 degrees F with the oven rack in the middle position.
  • Remove the plastic wrap from the pork and place in a Dutch oven with a lid. Cover and place in the oven to roast for 3 hours. After 3 hours, uncover and cook for another 45 minutes to brown the fat and cook until the pork registers 200 degrees F on an instant-read thermometer. Remove from the oven and let rest for 20 minutes.
  • For the sandwich build: Using two forks or your hands, pull apart the warm pork. Toss with the Chile Sauce. Butter and toast the buns until golden brown. Place ample quantities of pork on the bottom bun and top with Grilled Pineapple Relish and shredded red cabbage. Do your best hula dance and enjoy.
  • Bring the vinegar, sugar, crushed red pepper, salt and garlic to a boil and cook until the sugar and salt dissolve. Simmer for 5 to 10 minutes, and then set aside until the pork is ready. Right before you toss in the pork, remove the smashed garlic cloves.
  • Preheat a grill pan or grill over high heat. Rub the grill with a bit of oil and grill each side of the pineapple slices until dark grill marks appear, 3 to 5 minutes a side. Roughly chop the pineapple and add it to a bowl with the cilantro, ginger, lime juice, jalapeno and onions. Season with salt and pepper.

4 hamburger buns, split
2 tablespoons butter
1 (5 ounce) can tuna chunks in olive oil
1 tablespoon lemon juice
salt and freshly ground black pepper to taste
1 dash chili powder
1 cup shredded lettuce
1 cup shredded mozzarella cheese
4 canned pineapple rings

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Toast hamburger buns, and spread cut sides with butter.
  • Drain half of the oil from the tuna. Combine the tuna and remaining oil, lemon juice, salt, pepper, and chili powder in a small bowl. Mix well. Fill each toasted bun with tuna salad, shredded lettuce, mozzarella cheese, and one pineapple ring.
  • Place sandwiches on a baking sheet, and heat until the cheese melts, approximately 10 to 12 minutes.

1 one-pound circular loaf of Hawaiian sweet bread
1/4 pound thin-sliced smoked turkey
1/4 pound thin-sliced roast beef
1/4 pound thin-sliced baby Swiss
1 tomato, thinly sliced
Mayonnaise
Dijon mustard
Poppy seeds
Butter
Salt
Pepper

Steps:

  • 1. Take the Hawaiian break out of its tin and cut it into 5 equally-thick slices (parallel to the table, to make a big sandwich). 2. Return the bottom slice to the tin, coat it with a 4-to-1 mixture of Dijon mustard and mayonnaise, and spread the slices of roast beef on the top. 3. Place the next slice of bread on top of the roast beef, coat it with melted butter, and spread the slices of baby swiss on the top. 4. Place the third slice of bread on top of the baby Swiss, coat it with melted butter, sprinkle poppy seeds on it, and spread the slices of smoked turkey on the top. 5. Place the next-to last slice of bread on top of the smoked turkey, coat it with a 4-to-1 mixture of mayonnaise and Dijon mustard (the inverse of the bottom layer, spread the slices of tomato on the top, and add a little salt and pepper on top. 6. Place the last slice of bread on top, wrap in foil, and bake for 20 minutes at 350 degrees Fahrenheit. Uncover and bake for another 1-2 minutes to give the bread a nice crispness.

I received this recipe from a friend while we were working at our voting precinct. It is so good, the possibilities are endless, and it feeds quite a few people. This is a great appetizer, light lunch, or even for supper during these hot days. Served with chips and dip it is a complete meal.

1 loaf kings hawaiian bread, sliced in thirds crosswise to make 3 layers
2 pkg (8 oz.) cream cheese, softened (i used fat free cream cheese)
1 pkg ranch dressing mix (dry)
1 lb deli ham
1 Tbsp chives (optional)
1 Tbsp minced onions (optional)
1 can(s) small can sliced black olives or black and green olives mixed

Steps:

  • 1. Place loaf of Hawaiian Bread in the freezer for a few minutes before assembling sandwich. This makes for easier slicing crosswise of the bread. Mix softened cream cheese, ranch dressing mix, minced onions and minced chives together. Slice bread into 3rds crosswise. Spread some of the cream cheese mixture on the bottom layer. Place a few of the sliced olives on the cream cheese and layer as much ham as you want on that layer. Place middle layer of bread on top of ham and repeat with the cream cheese mixture, olives, and ham. If you have any cream cheese mixture left, you can spread on cut side of top layer of the bread and place top on sandwich. Place sandwich in an air tight container and refrigerate for several hours. I put the sandwich back in the foil pan and placed it back in the bag and placed in refrigerator.
  • 2. NOTE: You can use deli turkey, deli roast beef, deli ham or combine the meats if you want. Before serving, you can add sliced tomatoes, shredded lettuce, whatever you want. This is great served with salsa and chips.
