1/4 cup cornstarch

3 egg yolks, lightly beaten

MERINGUE:
3 egg whites

  • In a large saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat for 2 minutes or until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes more. Remove from the heat; stir in butter and vanilla. Fold in pineapple and coconut. 1 can(s) pineapple, crushed with juice, 8 oz
1 pkg Cool Whip, thawed, 8 oz
1 c coconut, shredded
1 tsp vanilla
1/3 c sour cream
1 pkg vanilla instant pudding (4 serving size; I use sugar-free)

Steps:

  • 1. In a bowl mix pineapple and sour cream with dry pudding mix; mixing well. Add coconut (save a couple of tablespoonfuls for garnish), vanilla, and Cool Whip (save a couple of tablespoonfuls for garnish).
  • 2. Pour mixture into pie crust. Spread remaining Cool Whip in a small design (I make a little circle on top for garnish). Sprinkle remaining coconut on top. Place in the fridge for a couple of hours to set up.
  • 3. In the hot summer months sometimes I freeze this pie and eat frozen... just a delicious. Enjoy!

4 cups sliced bananas
½ cup unsweetened pineapple juice
½ cup white sugar
1 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sliced bananas in a medium bowl and cover with pineapple juice. Toss gently until slices are coated. Let soak for 30 minutes, then drain. Place bananas in pie shell.

6 ounces graham cracker pie crust
2 cups sliced fresh strawberries or 2 cups frozen unsweetened strawberries, if fresh are not available
1 (3 ounce) package strawberry gelatin
1 (3 1/2 ounce) package vanilla pudding mix, NOT INSTANT
1 (8 ounce) can crushed pineapple with juice, drained and reserve juice
water
1 teaspoon coconut extract
1 cup Cool Whip
2 tablespoons flaked coconut

Steps:

  • Place strawberries in the pie crust, either fresh or frozen, that have been drained. In a medium saucepan combine the dry gelatin pudding and mix. Add enough water to the pineapple juice to make 1 1/2 cups liquid. Add to dry pudding mixture. Cook over medium heat stirring constantly until mixture thickens and comes to a boil. Pour hot mixture over the strawberries.
  • Refrigerate 2 hours.
  • In a small bowl combine the drained pineapple, coconut extract and Cool Whip. Mix gently to combine. Both layers can be cooled at the same time. Spread the drained pineapple, coconut extract and Cool Whip mixture over the set strawberry filling. Sprinkle flaked coconut over the top.
  • Refrigerate at least 5 minutes but no more than 24 hours. Cut into 8 pieces.

Whether or not Hawaiian pizza truly originated in Hawaii, the salty-sweet combination of pineapple and ham has its many fans. This camping-friendly version relies on ingredients that travel well (in a cooler) and can be found at just about any market. Plus it's fun: You encase the toppings in between two pieces of dough, seal it in a pie iron and cook over an open fire as you would a marshmallow. 4 canned pineapple slices, patted dry
1/4 cup pizza sauce

Steps:

  • Prepare a campfire or a charcoal grill for medium-high heat.
  • Unroll the pizza dough and cut it into 8 even pieces, roughly the size of the pie iron. Open the pie iron and place one piece of dough in one side. Top with 1 slice pineapple, 1 tablespoon pizza sauce, 1 tablespoon ham and 2 tablespoons mozzarella. Place another piece of dough on top and pinch the sides together to seal.
