2 cups mayonnaise, or more to taste
½ cup milk
½ cup shredded carrot

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and rinse with cold water.
  • Combine the macaroni, mayonnaise, milk, and carrot in a large bowl; mix until macaroni is well coated. Add more mayonnaise for a wetter consistency. Season with salt and pepper.
  • Chill in the refrigerator for at least 2 hours, or up to overnight.

1/2 gallon water
1 lb elbow macaroni (dried)
1/2 cup onion (diced)
1/2 cup carrot (shredded)
3 cups mayonnaise
1/2 teaspoon white pepper
2 teaspoons salt

Steps:

  • Bring water to a boil in a large pot or dutch oven.
  • Add the dried elbow pasta and boil for 12 minutes or until cooked.
  • Drain water and cool the pasta thoroughly.
  • Combine all remaining ingredients and chill for at least 1 hour.
  • [Notes: I always add salt to the pot of water so that the pasta is well seasoned. The onion in the macaroni salad at L & L Hawaiian BBQ is very small, more like minced. After dicing your onion, be sure and rinse it in cold running water to remove any bitterness. I never measure out the mayonnaise, just add enough until I am satisfied. The cookbook recommends using Best Foods or Hellman's mayonnaise. I often add 2-3 Tablespoons of milk right before serving to make sure that the pasta is moist enough. The original recipe adds one small can of oil based tuna (drained), but I haven't seen it added to the salad when I have ordered it. Some reviewers are commenting that the recipe is too salty and that the salt should be reduced, so please keep that in mind. I think that I just add to taste, but the 2 teaspoons is what is in the original recipe in the cookbook.].
  • UPDATE May 2014: I checked with my local L&L Hawaiian BBQ and they do NOT put tuna in their macaroni salad, it is totally vegetarian.

7 large potatoes, peeled and cubed
1 cup elbow macaroni
3 cups mayonnaise

1 small sweet onion, finely chopped

  • Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink; peel and chop the cooled eggs.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain in a colander set in the sink; rinse with cold water.

Steps:

  • Make the macaroni salad: Bring 3 quarts of water to boil in a Dutch oven over high heat. Add 1 tablespoon of salt and the macaroni. Cook al dente according to the package directions. Drain the pasta and return to the Dutch oven. Cool for 5 minutes.
  • Add the mayonnaise, apple cider vinegar, onion powder, sugar, and remaining 1 teaspoon of kosher salt to the pasta fold to thoroughly combine. Set aside to cool completely, about 30 minutes.
  • Marinate the margarita shrimp: Add the shrimp and kosher salt to a large bowl. Toss to combine. Pour the margarita mix over top. Cover and refrigerate for 15 minutes while you prepare the braised greens.
  • Make the braised coconut greens: Heat the oil in a medium saucepan over medium-low heat. When the oil is shimmering, add the garlic and onion. Season with salt and pepper. Cook for about 3 minutes, stirring often, until fragrant and just starting to soften.
  • Add ¼ cup of coconut milk plus the sugar and lime juice to the saucepan, stirring to dissolve the sugar.
  • Add the kale leaves and snow peas, and season again with salt and pepper. Cover the saucepan and simmer for about 5 minutes, until the leaves are wilted and soft and the snow peas are tender.
  • Cook the shrimp: Pour the marinade liquid into a 10-inch skillet, leaving the shrimp in the bowl. Bring the liquid to a boil over high heat and simmer for about 10 minutes, until the liquid is reduced by two-thirds to about ½ cup.
  • Add the shrimp and 2 tablespoons of tequila to the skillet. Cook, tossing occasionally, for about 3 minutes, until the shrimp are bright pink and opaque.
  • Add the remaining 2 tablespoons of tequila plus the cilantro and lime zest. Simmer for about 1 minute, tossing the shrimp to thoroughly coat. Serve immediately alongside the macaroni salad and braised greens.
  • Just before serving, fold in the carrots, scallions, and buttermilk into the cooled macaroni salad. Add the remaining 2 tablespoons of coconut milk to the greens and garnish with toasted coconut flakes.

1 cup mayonnaise (Best Foods or Hellmans)
1 -1 1/2 large onion (sweet kind is better)
2 carrots (shredded)
3 potatoes (small chunks)
4 -5 hard-boiled eggs
1 teaspoon celery seeds or 1 teaspoon celery salt
pepper
1 tablespoon soy sauce
1 cup frozen peas
1 ounce black olives, sliced (small can, not sure of oz.)

Steps:

  • Boil the noodles, potatoes, and eggs separately.
  • Drain when cooked through and cool.
  • In a large bowl, put noodles and cubed potatoes and add mayo to consistency you like.
  • Thinly slice the onion.
  • Shred the carrots and add both to bowl.
  • Slice hard boiled eggs and add to bowl.
  • You can use celery (thinly sliced) or the celery seed for a milder celery taste - add to mixture.
  • Add the soyu sauce and pepper to taste and mix well.
  • Add the peas and gently mix.
  • Put black olives on top.
  • You may need to add more mayo and/or soyu the next day - its always better the next day.
  • Enjoy and Aloha.

4 large red and/or gold potatoes, cooked til tender, peeled and cut into cubes
3 c cooked shell or elbow macaroni, about 1-1/2 cup macaroni cooked til tender
1/4 c red onion, finely chopped
7 large eggs, hard cooked and chopped
1 c frozen green peas, defrosted
2 stalk(s) celery, finely chopped
2 large carrots, grated
3 Tbsp sweet pickle relish
2 c mayonnaise (i prefer helman's)
2 Tbsp cider vinegar
2 tsp garlic powder
3 Tbsp sugar
sea salt and fresh ground pepper to taste
cayenne pepper to taste (optional)

Steps:

  • 1. In large bowl, toss together potatoes and next 8 ingredients; set aside.
  • 2. In small bowl, mix mayo, cider vinegar, sugar, garlic powder, salt & pepper, and cayenne if desired.
  • 3. Lightly toss with the potato and macaroni mixture.
  • 4. Refrigerate over night,or for a minimum of 4 hours. Taste, and adjust seasoning if needed. Some brands of mayonnaise will seem to soak into the potatoes and macaroni overnight, so be prepared to make up another batch of the sauce if it seems too dry after refrigeration, so adjust as needed.

1/2 lb elbow macaroni, cooked until soft
2 Tbsp cider vinegar
2 Tbsp onion, grated
1/4 c carrot, shredded
1/4 c celery, minced
1 c mayonnaise (hellman's or best foods if possible)
1/4 c milk (start with half that and add more later, if too dry)
1 tsp sugar
1/2 - 1 tsp salt (or to taste)
1/8 tsp white pepper
green onion or parsley, chopped, for garnish

Steps:

  • 1. Cook macaroni until soft and fat - rinse and drain and place in large bowl. While still warm, add vinegar and stir to combine. (Use a rubble spatula.) Let cool to room temperature.
  • 2. In small bowl, stir mayonnaise, half of the milk and seasonings together.
  • 3. Stir veggies and mayonnaise mixture gently into macaroni. Garnish with chopped green onion or parsley, if desired. Chill 2 hrs to overnight. (If it seems too dry when serving add a little extra mayo mixed with a bit of milk.)

We like pasta salads. This is a good one. The pineapple and raisins add some exciting taste to the dish. This is always a hit at pot luck dinners. If you make this once, you will be making it again and again.

2 cup(s) whole milk
2 cup(s) mayonnaise dressing
1 tablespoon(s) brown sugar, firmly packed
- salt and pepper, to taste
1 pound(s) elbow macaroni
1/2 cup(s) cider vinegar
4 - scallions, sliced thin
1 large carrot, peeled and grated
1 - rib celery, chopped fine
1 cup(s) chopped fresh pineapple
1/2 to 1 cup(s) raisins

Steps:

  • Make Dressing: Whisk 1-1/2 cups milk, 1 cup mayonnaise, 1 tablespoon brown sugar, 1/2 teaspoon salt, and 2 teaspoons pepper in bowl. **(Low-fat milk or mayonnaise will make the dressing too thin.)
  • Cook Pasta: Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and pasta and cook until very soft, about 15 minutes. Drain pasta and return to pot. Add vinegar and toss until absorbed. Transfer to bowl. Cool pasta 10 minutes, then stir in dressing until pasta is well coated. Cool completely.
  • Make Salad: Add scallions, carrots, celery, pineapple, raisins, 1/2 cup milk, and 1 cup mayonnaise to pot with pasta mixture and stir to combine. Adjust Seasoning salt and pepper to taste. Transfer to serving bowl and refrigerate, covered. for at least 1 hour or up to 2 days. Serve.

1 lb elbow macaroni
1 Tbsp Kosher salt
1/3 c apple cider vinegar
2 c whole milk or 2%
2 c mayonnaise
1 Tbsp brown sugar
3 green onions, thinly sliced
1 large carrot, peeled and grated
1 celery stalk, minced
1/2 tsp Kosher salt
2 tsp seasoned pepper

Steps:

  • 1. Bring 4 quarts of water to a boil.
  • 2. Add macaroni and 1 Tbsp Kosher salt. Boil for 15 minutes until macaroni is VERY SOFT.
  • 3. Drain.
  • 4. Return macaroni to the pot. Add vinegar and toss until absorbed. Let cool for 10 minutes.
  • 5. Whisk together 1 1/2 c milk, 1 c mayonnaise, brown sugar, salt, and seasoned pepper.
  • 6. Pour over macaroni after it has cooled for 10 minutes.
  • 7. Let the macaroni cool completely.
  • 8. Once cooled, add 1/2 c milk, 1 c mayonnaise, green onion, celery, and carrots.
  • 9. Stir to combine. Refrigerate for at least an hour, preferably overnight.

3 cups large macaroni
1/4 cup grated carrot
1 cup Best Foods Mayonnaise (a must)
1/4 cup milk
salt & pepper

Steps:

  • Cook macaroni till tender.
  • Add grated carrots, mayonnaise, and milk till well coated. Salt & Pepper to taste. Use more mayonnaise if needed.
  • Chill in refrigerator.
  • When ready to serve, add more mayonnaise to keep salad from drying out.
