3/4 teaspoon ground ginger (or minced fresh ginger)
banana, peeled and sliced
blueberries
pineapple, cut into bite-size pieces
blackberry
raspberries
mango, peeled and diced
strawberry, cut in half
kiwi, peeled and sliced
orange, peeled and cut into chunks

Steps:

  • For the dressing, mix the lime juice, honey, and ginger in a small bowl.
  • For the fruit salad: Mix the fruit in a large salad bowl. Pour the dressing over the fruit and stir. Serve immediately if you use bananas.

1 pineapple, cut into 1 inch cubes
1 medium cantaloupe (use a melon baller, or cut into 1 inch cubes)
1 medium honeydew melon (use a melon baller, or cut into 1 inch cubes)
1 papaya, pared and cut into 1/4 inch slices
1 cup green grape, cut in half lengthwise
1 cup strawberry, cut in half lengthwise
2 ripe bananas, peeled, sliced
1 cup sour cream
1/4 cup firmly packed brown sugar
1 1/2 teaspoons lemon juice

Steps:

  • Prepare Banana Dressing:.
  • Combine dressing ingredients in blender, and blend until smooth 15-20 seconds. Refrigerate 2 hours.
  • Combine all cut fruits in a large bowl and toss together gently.
  • Mound fruit on individual, lettuce lined plates. Serve Banana Dressing in a gravy boat, or pour dressing over individual fruit salads.

2 (8 ounce) cans mandarin oranges, drained
2 (15 ounce) cans fruit cocktail in juice, drained
1/2 cup coconut
1 cup sour cream
4 ounces Cool Whip, thawed (half of an 8 oz. tub)
2 cups miniature marshmallows

Steps:

  • After draining the fruits, pat them with paper towels to get more moisture off.
  • Stir together sour cream and Cool Whip. Add remaining ingredients and stir gently to combine.
  • Chill at least 4 hours.

3 cups honeydew melon balls
1-1/2 cups cantaloupe balls

1 kiwifruit, peeled, quartered and sliced
BANANA DRESSING:
2 small bananas, cut into 1-inch pieces
1 cup reduced-fat sour cream
1/4 cup packed brown sugar
1-1/2 teaspoons lemon juice
