2 (6 ounce) containers french vanilla yogurt
1 teaspoon rum extract or 1 teaspoon dark rum
1/4 cup coconut, toasted, divided
2 tablespoons pineapple, finely chopped
15 fresh strawberries, halved
30 pineapple chunks (1 inch)
5 medium kiwi fruits, cut into 30 chunks

Steps:

  • In small bowl, mix yogurt, rum extract and 3 tablespoons of the coconut and pineapple.
  • Stir and serve or cover and store in refrigerator until serving time.
  • Sprinkle dip with remaining 1 tablespoon toasted coconut.
  • To serve, arrange fruit on a platter with dip in the middle.

This is really flavorful; I have served with pineapple chunks, sliced apples & grapes. I make this with skim milk & low-fat sour cream. I added the food coloring in response to a previous reviewer saying it looked like just vanilla pudding. This is a RecipeZaar account adoptee, from Feb. 2005.

1 (3 1/2 ounce) package vanilla flavor instant pudding and pie filling mix
1 1/4 cups milk, cold
1/2 cup sour cream
1 (8 ounce) can pineapple in juice, crushed, undrained
1/3 cup coconut, shredded
to taste strawberry (or any fresh fruit)
to taste melon, balls or chunks (or any fresh fruit)
to taste kiwi, slices (or any fresh fruit)
to taste orange, sections (or any fresh fruit)
to taste peach, slices (or any fresh fruit)
to taste papayas (or any fresh fruit) or to taste mango, slices (or any fresh fruit)
1/4 teaspoon red food coloring (optional)

Steps:

  • In medium bowl, whisk pudding mix and milk until it's well blended and has pudding-like texture (about 2 minutes).
  • Whisk in sour cream.
  • Stir in pineapple and coconut. Stir in food coloring, if desired. Cover, refrigerate until chilled at least 1 hour.
  • Serve with fresh fruit dippers.

8 oz can crushed pineapple, undrained
1/3 cup shredded coconut

Steps:

  • 1. Combine sour cream, milk and pudding in bowl with whisk until smooth. 2. Add pineapple and coconut. Mix to ombine. 3. Refrigerate for 30 minutes before serving

1 1/4 cup(s) cold milk, 2%, 1%, or fat-free (skim) milk*
1/2 cup(s) sour cream or light sour cream
1 can(s) (8 ozs.) crushed pineapple in juice, undrained
1/3 cup(s) shredded coconut
- *use slightly less milk (approx. 1/4 cup less), if using fat-free (skim milk)

- assorted fresh fruit, such as strawberries, melon balls or chunks, kiwi slices, orange sections, peach slices, and papaya or mango slices

Steps:

  • In a medium bowl, whisk pudding mix and milk, until well blended. Blend in sour cream. Stir in pineapple and coconut.
  • Cover; refrigerate, until chilled, 30 minutes to 1 hour. Serve with fresh fruit dippers. Makes 2 3/4 cups dip.
