This delicious, fruity chicken salad is a change from the standard. It's easy to double the recipe for a larger group.

2 (3 ounce) packages cream cheese, softened
⅓ cup creamy salad dressing, e.g. Miracle Whip ™
1 (8 ounce) can pineapple tidbits, juice reserved
3 (5 ounce) cans chunk chicken, drained
1 cup blanched slivered almonds
1 ½ cups seedless grapes, halved

Steps:

  • In a medium bowl, beat cream cheese until fluffy. Mix in salad dressing and 2 tablespoons reserved pineapple juice. Stir in the pineapple tidbits, chicken, almonds, and grapes until evenly coated. Chill until serving.

2-1/2 cups diced cooked chicken
1 can (20 ounces) pineapple tidbits, drained
1 cup seedless red grapes, halved
3/4 cup sliced celery
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup navel orange segments
3/4 cup sliced firm bananas
1/3 cup salted peanuts

Steps:

  • In a bowl, combine the first seven ingredients. Fold in oranges. Cover and refrigerate until chilled. Just before serving, fold in bananas and sprinkle with peanuts.

5 cups cubed cooked chicken
1 can (16 ounces) pineapple chunks, drained
1 can (8 ounces) sliced water chestnuts, drained
1 cup julienned green pepper
1 cup green grapes
1 cup seedless red grapes
1 cup shredded cheddar cheese
3/4 cup salted cashews
1/2 cup chopped celery
1/2 cup chopped green onion
DRESSING:
1/3 cup mayonnaise
1/3 cup plain yogurt
4 teaspoons apple juice
1/4 to 1/2 teaspoon salt

Steps:

  • In a large bowl, combine the first 10 ingredients. Combine the dressing ingredients; pour over salad and toss to coat. Cover and refrigerate for 4 hours or until ready to serve.

Grilled Hawaiian Chicken and Pineapple Sandwiches image

Marinated, grilled chicken is topped with grilled pineapple and cheese. It may sound a little strange, but it is very tasty!

6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup Hawaiian style marinade
6 pineapple rings
6 slices provolone cheese
6 onion rolls, split
6 tablespoons thousand island salad dressing
6 leaves romaine lettuce
6 slices tomato

Steps:

  • Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
  • Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
  • To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

5 slices thick-sliced bacon, diced
1 1/2 French baguettes (36 inches total)
6 tablespoons extra virgin olive oil, divided
kosher salt, to taste
fresh ground black pepper, to taste
1 -2 pinch crushed red pepper flakes
1 1/4 cups packed fresh cilantro leaves
1/2 cup packed fresh mint leaves
1 tablespoon chopped fresh gingerroot
1/2 a lime, juice of
3/4 cup light mayonnaise
1/4 cup low-fat plain yogurt
3 cups shredded rotisserie chicken
1/2 cup chopped macadamia nuts
1 cup fresh baby spinach leaves
1 tablespoon oil-and-vinegar salad dressing
1 cup chopped fresh pineapple
1 tablespoon minced jalapeno pepper
1/4 cup minced red bell pepper

Steps:

  • Preheat broiler to high with rack 6 inches from the element.
  • Sauté bacon in a skillet over medium heat until crisp, 8-10 minutes; drain bacon on a paper-towel-lined plate.
  • Prepare baguettes by slicing top third off and removing bread inside; set aside for another use.
  • Cut whole baguette into 4 equal portions and half baguette into 2 portions.
  • Brush each piece with 1 tablespoons oil, season with salt and pepper, and broil on a baking sheet until toasted, 2-3 minutes.
  • Process cilantro, mint, gingerroot, and lime juice in food processor until minced; add mayonnaise and yogurt; pulse to combine.
  • Season mixture with salt, pepper & crushed red pepper flakes.

  • Toss spinach with salad dressing; stir pineapple and jalapeno together in a bowl.
