Best homemade Banana Bars recipe is a cross between banana bread and banana cake with a gooey brown butter frosting slathered on moist, easy-to-make bars.

½ cup unsalted butter, (softened)
1 cup sugar
3/4 cup brown sugar
3 eggs
1 ½ cups mashed ripe bananas, (about 3-4 bananas)
1 teaspoon vanilla extract
2 cups all-purpose flour or gluten free all-purpose flour, ((I recommend using Cup 4 Cup gluten free flour))
1 teaspoon baking soda
1/4 teaspoon salt
½ cup (1 stick) unsalted butter
2 ½ cups powdered sugar
¼ teaspoon salt
3 tablespoons milk

Steps:

  • Preheat oven to 350°F. Grease a 15X10 jellyroll baking pan (see recipe notes for 9x13 pan).
  • In a large bowl, cream butter, sugar, and brown sugar until light and fluffy, about 3-5 minutes. Beat in the eggs, mashed bananas and vanilla until well combined. Add flour, baking soda and salt; mix into creamed mixture until just blended.
  • Pour batter into prepared baking pan. Bake 20-25 minutes, rotating pan 1/2 through baking. Bars are done when toothpick inserted in middle comes out clean.

1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 cup mashed ripe banana
1/3 cup drained crushed pineapple
1/2 cup sweetened shredded coconut
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a bowl, cream butter and sugar. Beat in eggs. Stir in banana, pineapple and coconut. Combine dry ingredients; stir into creamed mixture just until combined. Spoon into a greased 8x4-in. loaf pan. Bake at 350° for 65-70 minutes or until bread test done. Cool in pan 10 minutes; remove to a wire rack.

1/4 cup shortening
1 cup brown sugar, firmly packed
1/2 tablespoon vanilla extract
1/2 tablespoon lemon extract
1 cup mashed ripe banana (About 2 medium bananas)
1 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 cup of chopped nuts (whatever you like)
1/3 cup powdered sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°.
  • Cream shortening and brown sugar.
  • Add extracts and banana, beating well.
  • Sift flour, salt and baking powder; add to wet mixture.
  • Stir in nuts.
  • Pour into well-greased 11 X 7-inch baking pan.
  • Bake for 30 to 35 minutes.
  • While still warm, cut into bars and remove from pan.
  • Mix: 1/3 cup powdered sugar and 1 tsp cinnamon.
  • Gently roll bars in mixture while slightly warm.
  • Store in airtight container.
