Ham and Cheese Picnic Bread image

This is a great picnic bread, filled with ham, cheese, pimento and olives. Everyone loves it!

1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees F)
3 cups all-purpose flour
1 egg
1 tablespoon butter
1 tablespoon white sugar
1 teaspoon salt
1 cup chopped ham
1 cup shredded mozzarella cheese
1 (4 ounce) jar diced pimento peppers, drained
½ cup black olives, drained and chopped

Steps:

  • In a small mixing bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large mixing bowl, combine the yeast mixture with the flour, egg, butter, sugar and salt; mix well. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth, about 8 minutes.
  • Lightly oil a large mixing, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C). Combine the ham, cheese, pimento, and olive in a medium mixing bowl; set aside.
  • Deflate the dough, and turn it out onto a lightly floured surface. Roll or pat the dough into a 10x14 inch rectangle. Make parallel cuts 3/4 inch wide and 2 inches long on the two long edges of the rectangle. Evenly spread the filling mixture over the center of the rectangle. Fold the short ends of the rectangle over the filling. Starting from one of these ends, alternately stretch strips from the two sides across the filling so that the strips overlap diagonally. Transfer the loaf to a lightly greased baking sheet, cover with a damp cloth, and let rise until doubled in volume, about 40 minutes.
  • Bake at 400 degrees F (200 degrees C) for 20 to 30 minutes, or until golden brown.

This big sandwich, inspired by one I tried at a New York deli, is a favorite with our football-watching crowd. Made ahead, it's easily carted to any gathering. Kids and adults alike say it's super. -Marion Lowery, Medford, Oregon

2 unsliced loaves (1 pound each) Italian bread
1/4 cup olive oil
3 garlic cloves, minced
2 teaspoons Italian seasoning, divided
1/2 pound deli roast beef
12 slices part-skim mozzarella cheese (1 ounce each)
16 fresh basil leaves
3 medium tomatoes, thinly sliced
1/4 pound thinly sliced salami
1 jar (6-1/2 ounces) marinated artichoke hearts, drained and sliced
1 package (10 ounces) ready-to-serve salad greens
8 ounces thinly sliced deli chicken
1 medium onion, thinly sliced
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cut loaves in half horizontally; hollow out tops and bottoms, leaving 1/2-in. shells (discard removed bread or save for another use). , Combine oil and garlic; brush inside bread shells. Sprinkle with 1 teaspoon Italian seasoning. Layer bottom of each loaf with a fourth of each: roast beef, mozzarella, basil, tomatoes, salami, artichokes, salad greens, chicken and onion. Repeat layers. Season with salt, pepper and remaining Italian seasoning. , Drizzle with remaining oil mixture if desired. Replace bread tops; wrap tightly and refrigerate at least 1 hour before slicing.

My aunt has been making this wonderful bread for years. You can make it ahead and serve it cold. It makes a great appetizer, and is wonderful left over. It also travels well, and is a hit at pot-lucks!

1 (1/4 ounce) package active dry yeast
2 1/2-3 cups flour
1 tablespoon sugar
2 cups chopped cooked chicken
1 1/2 cups shredded swiss cheese
1 (10 ounce) box frozen chopped spinach, thawed and drained
1/4 cup grated parmesan cheese
1/4 cup finely chopped onion
1 beaten egg white
2 tablespoons sesame seeds (optional)
1 1/4 teaspoons salt

Steps:

  • Preheat oven to 375°.
  • Mix cheese, spinach, chicken, onion, and 1/4 teaspoon salt for filling.
  • Set aside.
  • Dissolve yeast in 1 cup warm water.
  • Mix yeast mixture, sugar, 1 teaspoon salt, and 1 cup flour in a mixing bowl.
  • Gradually add 1 1/2 cups flour to dough.
  • Knead dough until smooth, using other 1/2 cup flour if dough is sticky.
  • Roll dough into a 16 x 10-inch rectangle.
  • Spread filling down the middle of dough.
  • Bring dough edges together and seal.
  • Place seam-side down on lightly greased cookie sheet.
  • Brush bread with egg white and sprinkle with sesame seeds.
  • Bake at 375° for 40 minutes.
  • Serve warm, or cool and refrigerate.

This savory loaf is delicious served slightly warm, or toasted the next day and lightly buttered or topped with egg salad for a festive lunch or snack.

Nonstick cooking spray
2 cups all-purpose flour
1 1/4 teaspoons baking powder
3/4 teaspoon baking soda
2 1/4 teaspoons dry mustard
1/2 teaspoon kosher salt
Pinch cayenne pepper
3/4 cup plus 1 tablespoon milk
1/3 cup vegetable oil
2 tablespoons honey
3 eggs
One 6-ounce piece deli ham, finely chopped (about 1 1/4 cups)
1 cup shredded gruyere cheese, lightly packed (about 3 ounces)
1/2 cup finely diced (about 1/4-inch) havarti or gruyere cheese (about 2 ounces)
2 scallions, chopped

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray a 9-by-5-by-3-inch metal loaf pan with nonstick cooking spray and set aside.
  • In a medium bowl, whisk the flour, baking powder, baking soda, 3/4 teaspoon dry mustard, kosher salt and cayenne until combined. In a large bowl, whisk together 3/4 cup milk, the oil, 1 tablespoon honey and the eggs until smooth. Stir in the dry ingredients until just combined. Then fold in the ham, 3/4 cup shredded cheese, the diced cheese and scallions.
  • Pour the batter into the prepared loaf pan and sprinkle the top with the remaining 1/4 cup shredded cheese. Bake until well risen, golden brown and a skewer or cake tester inserted in the center comes out clean, 40 to 45 minutes.
  • Cool in the pan for 10 minutes. Meanwhile, in a small microwave-safe bowl, stir together the remaining 1 tablespoon each honey and milk and the remaining 1 1/2 teaspoons dry mustard until smooth. Heat in the microwave until hot and bubbling, 20 to 30 seconds. Turn the loaf onto a wire rack and generously brush with the warm glaze. Cool completely.
