This is a one dish meal that was my favorite when I was kid. I ate it with cold cottage cheese on the side. I think the casserole was served too hot for me and the cottage cheese cooled it down and added a bit of cheese. This was a recipe my Gramma obviously made - hense the name. I wish I could say that my kids loved it as much as I did but for some reason they just don't like many foods mixed together yet. My sister-in-law is from Scotland and she said it reminds her of foods she ate when she was a kid. My Grampa's family was from Scotland so maybe it was something his Mom made - I guess I will never really know since they aren't around to ask any more. My Dad was the one who alwaysalways said that the key to anything with tomato sauce was to add a little bit of sugar. I don't do this anymore but left it in the recipe because it was my Dad's contribution.

1 lb ground chuck
5 medium potatoes, peeled
1 large yellow onion
2 large carrots
2 stalks celery
2 tablespoons uncooked rice
1/8 teaspoon oregano
1 tablespoon sugar (optional)
1 (15 ounce) can tomato sauce (or 1 8oz can with one can of water)
salt and pepper

Steps:

  • Brown ground chuck, drain grease and set aside.
  • Cut up vegetables - thinly slice the potatoes (make sure they are evenly sliced so that they cook evenly) dice the onion, and cut up carrot and celery.
  • In a large bowl mix together the beef, vegetables and tomato sauce, rice and sugar.
  • Pour all the ingredients into a 9 x 13 inch glass casserole. Cover with tin foil and bake for about an hour in a 350 degree oven - or until the vegetables are done.

One dish meal that is really good. I made this for a meal while visiting my daughter & her family in Germany. Everyone loved it, even my 2 & 4 year old Granddaughters!

1 1/2 lbs hamburger
1/4 cup chopped onion
1/4 teaspoon pepper
6 medium potatoes
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1 (15 ounce) can creamed corn

Steps:

  • Brown hamburger, chopped onion and pepper together in a skillet.
  • Wash and slice the potatoes with the skins left on.
  • Stir together all the soups & corn in a large casserole pan.
  • Add browned hamburger and potatoes to the soup mixture and stir well.
  • Bake at 375 degree oven for approximately 2 to 2 1/2 hours.
  • Stir a couple times during baking.
  • I usually have it covered the 1st hour, then leave it uncovered the remaining time.
  • This is one of those recipes that I never had a recipe to follow, I just knew the ingredients from my mom making it when I was a child. The hamburger amount could vary from 1 to 2 lbs & the potatoes could be anywhere from 4-8 depending how much you want to make. Also could add an extra can of cream corn if making a larger amount of hamburger & potatoes.
  • I have also made it in my crock pot; starting out the 1st hour in the oven, then finishing it off in the crockpot on low for 3-4 hours because I brought it to work for a potluck.

1 pound ground beef
1 large onion, chopped
1 garlic clove, minced
1 cup chopped carrots
1 cup cubed peeled potatoes

  • In a large skillet, cook the beef, onion and garlic over medium heat until the meat is no longer pink; drain. 1 pound ground beef
5 potatoes, peeled and cut into steak fries
4 large carrots, peeled and sliced lengthwise
1 onion, peeled and sliced into rings
salt to taste
ground black pepper to taste
garlic salt to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.
  • Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onions. Season with salt, pepper and garlic salt to taste.
  • Cover with aluminum foil and seal edges. Bake in the preheated oven until beef is no longer pink and vegetables are tender, about 1 hour.
