2 tablespoons canola or vegetable oil
1 bell pepper, chopped
1 jalapeno, seeded and chopped
1/2 yellow onion, chopped
Kosher salt
One 1-ounce packet taco seasoning
2 pounds ground beef
One 14-ounce can black beans, rinsed and drained
9 ounces corn kernels (frozen, canned or fresh)
3 cups mild salsa
One 9-ounce bag corn chips, such as Fritos
5 ounces queso fresco, crumbled
Chopped fresh cilantro, for serving
Sliced radishes, for serving
Lime wedges, for serving
Salsa verde, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet, heat the oil over medium-high heat. Add the bell pepper, jalapeno, onion and a pinch of salt and cook until softened, 7 to 10 minutes. Add the taco seasoning and cook for another minute. Add the ground beef and cook, breaking it up with a spoon or spatula, until browned, 8 to 10 minutes. Stir in the beans, corn and mild salsa. Transfer to a casserole dish and cover with the corn chips.
  • Bake until the casserole is heated through and the corn chips are lightly toasted, about 20 minutes. Top with the queso fresco, cilantro, radishes and a squeeze of lime. Serve with salsa verde.

This can be a do ahead casserole just pour the ingredients into a casserole dish before you do the final 20 minute simmer and then pop it into a 350F oven 25-30 minutes before serving - put some buttered crumbs on top - I like to serve it over noodles or add cooked macaroni to it for the final simmer - I treat this as a good basic casserole that is tasty as is or even better with your creative touch

2 lbs lean ground beef
spray vegetable oil
1 1/2 cups onions, chopped
5 cloves garlic, chopped (or less)
1 tablespoon chili powder (or more)
1 teaspoon crushed red pepper flakes
2 (14 ounce) cans kernel corn or 4 ears fresh corn, cooked
1 (28 ounce) can diced tomatoes (Ilike to use Italian flavored)
1 cup beef broth
2 tablespoons cornstarch

Steps:

  • Brown the beef on the sprayed pan, add onions, garlic, chile powder& crushed red pepper flakes.
  • Stir until onions are softened and the burger is browned.
  • Mix cornstarch with the beef broth add to the pan.
  • Add tomatoes mix well& simmer until thickened add corn mix and continue simmering for approz 20 minutes Season with salt& pepper.

This is one of my favorite one-dish meals from when I was a kid. My mom used to serve it with homemade rolls and a salad, and we all loved it. Better yet it's sooo easy and quick to make!

1 lb hamburger
1 small onion
1 (20 ounce) package egg noodles, cooked
1 (10 ounce) can corn
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
8 ounces sour cream
1/2 teaspoon seasoning salt

Steps:

  • Brown hamburger with onion; drain.
  • Mix together soups, sour cream, and seasoned salt.
  • Add everything else together with the soup mixture and meat.
  • Pour into a 2 quart casserole dish.
  • Bake at 350 for 40 minutes.
  • Enjoy!

1 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (15 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
TOPPING:
1/2 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1/2 cup fat-free milk
1 tablespoon canola oil

Steps:

  • Preheat oven to 425°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans, tomatoes, chili powder and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes., Transfer to an 11x7-in. baking dish coated with cooking spray. For topping, in a small bowl, combine flour, cornmeal, sugar, baking powder and salt. Combine egg, milk and oil; stir into dry ingredients just until moistened. Spoon over filling; gently spread to cover the top., Bake, uncovered, 14-18 minutes or until filling is bubbly and a toothpick inserted into topping comes out clean. Let stand 5 minutes before cutting.
