This mustard sauce is a must have when you're serving ham! Easy to make, it keeps for a long time, and it's perfect as a dipping sauce or on a sandwich!

2 large egg yolks
1/2 cup granulated sugar
2 teaspoons dry mustard
1/3 cup white vinegar

Steps:

  • In a small saucepan (not an iron pan!), whisk the egg yolks until they are smooth and have lightened a bit in colour.
  • Add the sugar, dry mustard and vinegar and whisk together until smooth and well combined.
  • Bring the mixture to a boil over medium heat, whisking constantly.
  • Lower the heat and simmer, whisking constantly, until the sauce thickens slightly.
  • Remove the pan from the heat.
  • Serve the mustard sauce either hot or cold. Store it in an airtight container in the refrigerator.

1 fully cooked bone-in ham (6 to 8 pounds)
1 cup packed brown sugar
3 tablespoons maple syrup
1 teaspoon ground mustard
3 tablespoons cornstarch
1/2 cup sugar
1 cup cold water
1 can (15 ounces) pitted dark sweet cherries, undrained
2 tablespoons lemon juice
1 teaspoon almond extract

Steps:

  • Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Mix brown sugar, syrup and mustard; rub over ham and press into cuts. 1 (1 -1 1/4 lb) fully cooked ham steaks, cut 1/2-inch thick or 1 lb Canadian bacon, cut into 4 slices
1 tablespoon butter or 1 tablespoon margarine
1 (8 ounce) can pineapple slices
1/4 cup Heinz 57 steak sauce
2 tablespoons honey
1 tablespoon prepared mustard
1 1/2 teaspoons cornstarch
1 dash ground allspice

Steps:

  • Cut ham into 4 serving portions. In large skillet, saute ham in butter about 3-4 minutes on each side or until heated through. Remove ham from skillet, keep warm.
  • While ham is cooking, drain pineapple, reserving juice. In small bowl, combine juice, 57 sauce, honey, mustard, cornstarch and allspice. Pour mixture into skillet and cook until thickened.
  • Return ham to skillet. Top with each ham portion with pineapple slice and spoon sauce over; heat through.
