GARLICKY HAM AND SWISS



Garlicky Ham and Swiss image

All of the elements of a great French country picnic rolled into one grilled cheese sandwich.

Number Of Ingredients 6

4 tablespoons unsalted butter
2 cloves garlic, 1 minced or grated, 1 cut in half for rubbing bread, optional
Eight 1/3- to 1/2-inch-thick slices Pullman or white sandwich bread
8 slices emmentaler or Swiss cheese (about 4 ounces)
4 ounces thinly sliced leftover or deli ham
1/2 cup cornichons, sliced lengthwise

Steps:

  • Melt the butter in a medium saucepan over medium-low heat and add the minced garlic. Cook to infuse the garlic flavor into the butter and until the butter turns brown, about 15 minutes. Remove from the heat and strain.
  • Lay out 4 slices of the bread on a work surface. Layer each with 1 slice of the cheese, some ham and then some of the cornichons. Top with 1 more slice of cheese. Close the sandwiches with the remaining bread and brush with butter until fully coated on both sides.
  • Place 2 sandwiches into a medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches. If desired, rub the outside of the toasted bread with the garlic halves to add a little more garlic flavor.

1 lb swiss cheese, sliced
1 head lettuce, shredded fine
1 (16 ounce) container cream cheese, whipped style is softer
1 jar pineapple preserves
8 honey wheat flour tortillas

Steps:

  • Combine cream cheese and pineapple preserves; spread about 1-2 ounces on each tortilla.
  • You can also spread tortilla with cream cheese and gently pour on the preserves.
  • Place 2 oz ham and 2 oz cheese on a wrap.
  • Top with shredded lettuce and roll to tightness.
  • Cut wrap into thirds, if serving as a finger sandwich or as an appetizer.

1/4 cup mayonnaise
1 tablespoon milk
3/4 teaspoon sugar
1/4 teaspoon prepared mustard
1/8 teaspoon celery seed
Dash salt
2 flour tortillas (10 inches), room temperature
1/4 pound thinly sliced deli ham
1/3 cup shredded Swiss cheese
2/3 cup shredded lettuce
1 medium tomato, seeded and chopped
1 green onion, chopped

Steps:

  • In a small bowl, whisk the first six ingredients; spread evenly over each tortilla. Layer with ham and cheese. Top with lettuce, tomato and onion. Roll up tightly; secure with toothpicks if desired.

1/2 red onion
1/3 cup low-fat plain yogurt
2 tbs chopped fresh dill or parsley
2 tbs honey mustard
kosher salt and pepper
1 1/2 tbs olive oil
4 oz sliced lean ham
3 oz sliced Swiss cheese
1 romaine lettuce heart
1 apple
4 whole-wheat wraps or tortillas
3 cups strawberries, halved

Steps:

  • Thinly slice the onion. Soak in a bowl of ice water, 10 minutes. Drain and squeeze dry. Chop the parsley. Tear the ham into bite-size pieces. Cut cheese into strips. Tear lettuce into bite-size pieces. Thinly slice apples. Halve strawberries. Whisk the yogurt, dill, honey mustard and salt and pepper to taste in a large bowl. Slowly drizzle in the olive oil and 1 tbs water, whisking until combined. Add the onion, ham, cheese, lettuce and apple and toss to coat. Pile the ham mixture in the middle of each wrap. Fold in the sides, the roll up the wraps. Cut in half and serve with the strawberries.

1/2 cup horseradish sauce
3/4 pound sliced deli ham

1 tablespoon spicy brown mustard
2 teaspoons poppy seeds
1-1/2 teaspoons Worcestershire sauce

Ham and Cheese Wraps image

This recipe is adapted from a Pampered Chef recipe out of their 2004 Spring / Summer "Season's Best" cookbook. The original recipe calls for iceburg lettuce, tomatoes and green bell peppers, but I have made some changes to adapt for our family's taste. This is a great base start and the combination possabilities are endless.

Number Of Ingredients 9

6 slices whole wheat sandwich wraps, I use Italian flavored or 6 slices flour tortillas
8 ounces fat free cream cheese
2 tablespoons Dijon mustard
1 tablespoon honey
2 cups fresh spinach leaves
12 slices ham
6 slices swiss cheese
12 slices bacon, pre-cooked strips
1/4 cup banana pepper ring (optional, also known as pepperochini's)

Steps:

  • Combine cream cheese, honey and mustard in a small bowl.
  • Spread cream cheese mixture onto one side of each flat bread wrap.
  • Add layer of spinach over cream cheese mixture, then layer of ham (2 slices per wrap). Press down firmly.
  • Add layer of sliced swiss cheese (1 slice per wrap), then layer with bacon (2 slices per wrap).
  • Add pepperochini's as an option.
  • Roll each wrap, then cut diagonally with a serated (bread) knife.
