SPINACH, HAM AND POTATO AU GRATIN
A delicious casserole that has a surprise spinach layer in addition to the traditional ham and potatoes. All baked in a delicious cheesy sauce.

Steps:
- Preheat oven to 350 degrees.
- For the cheese sauce; in a saucepan melt butter or margarine; stir in flour.
- Add milk all at once.
- Cook and stir until bubbly; cook 1 minute more.
- Remove from heat.
- Stir in cheddar cheese and mustard; set aside.
- Place half of the ham strips in an ungreased 2-quart casserole dish.
- Top with half of the hash browns and half of the cheese sauce.
- Spoon the spinach on top of the cheese sauce.
- Repeat layers of the remaining ham, potatoes and sauce.
- Bake uncovered 30-40 minutes or until heated through.

HAM, CHEESE, SPINACH AND POTATO BAKE

Steps:
- Using a skillet, melt your butter. Add the flour and the milk.
- Cook until sauce thickens; remove from heat.
- Add eggs, cheese, mustard, salt and pepper.
- In another skillet, sauté the onion in some butter (I use about 1 tsp).
- When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
- In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
- Repeat until all is used.
- Cover and bake at 350°F for about 46 minutes.
- Sprinkle some parmesan cheese on top before serving.

- Heat oven to 400°F. Cut loaf of bread in half horizontally; cut each half crosswise into thirds. Place cut sides up on ungreased large cookie sheet; brush with oil. Bake 5 to 6 minutes or until tops are slightly toasted. Remove from oven.

- Preheat oven to 450 degrees F. Place the pizza shell on a cookie sheet. Scatter spinach all over crust. Drizzle with oil. Evenly distribute prosciutto, Parmesan and garlic on top of spinach. Crack eggs onto pizza, roughly positioning 1 yolk on each pizza quarter. Bake for 12-15 minutes, until spinach is wilted and egg whites are just fully cooked. Cut into 4 large slices.
